Paksiw na Bangus Recipe – Simpleng Lutong Bahay na Masarap

Paksiw Na Ulo Ng Isda



Ang paksiw ay isa sa mga putahe na napakadaling lutuin. May mga kaibigan ako ayaw kumain ng paksiw dahil ayaw nila ang amoy ng suka, para sa akin masarap ang paksiw at nakakagana ang amoy ng suka. Ito ang paborito kong bahagi ng isda ang ulo, dahil masarap ang mata ng isda, (nasubukan nyo na bang kumain ng mata ng isda?) kahit anong luto basta ulo ng isda gustong gusto ko, lalo na ang paksiw, kaya ito ang ibabahagi kong putahe ngayon.

Paksiw sa gata-Fish stewed in vinegar and coconut milk





Paksiw is a cooking process in Philippines that uses vinegar as the main agent in cooking, for me simple paksiw is already delicious, but paksiw is more delicious if you put coconut milk in it, so have a try of it if you haven't yet.


Ingredients:
1/2 kilo fish
1/4 teaspoon whole black pepper
1 medium size onion
thumb size ginger (sliced)
3/4 cup vinegar
1 cup coconut milk
1/4 kilo Chinese cabbage
salt




Procedure:
1. In a cooking pot put the vinegar, all the spices and fish cover and bring to a boil.
2. When the fish is already cooked, put the Chinese cabbage and simmer until it is cooked.
3. Add the coconut milk and salt, simmer until done
4. Turn off the heat and serve it hot.

You can put some chili if you want. (^_^)

Tulingan Paksiw


One of the best dishes for fish is to paksiw it, if you avoid high calories food then better cook the fish this way than fry it. Paksiw is a kind of cooking in the Philippines by stewing the base ingredient with a vinegar and some spices.

Ingredients:
1 regular size skip jack tuna or tulingan
some ginger
onion
cayenne pepper or siling haba
1/2 cup vinegar
salt and pepper to taste

Procedure:
1. In a pot put the ginger, onion, vinegar, cayenne pepper, salt and pepper, then cover and let it boil, allow to simmer for few minutes to infused the flavor of all the ingredients.
2. Add the fish then cover and let simmer until done.
3. Serve hot.

Paksiw na Galunggong ( Round Scad Stewed in Vinegar)


Paksiw is a cooking process in the Philippines that uses vinegar in stewing the base ingredients, the most common one is fish paksiw. I love this simple fish dish because it is easy to cook and delicious.

Ingredients:
1/2 kilo round scad or galunggong
1/2 cup vinegar
1/4 cup crushed ginger
1 small bitter melon (ampalaya)
1 small red bell pepper
salt and pepper to taste

Procedure:
1. Clean the fish properly then put in a cooking pot together with all the ingredients.
2.  Simmer until done.
3. Serve it with a smile :-).

Sweet Fish Paksiw

 I love the natural taste of paksiw (not sweet) but my nephews love it sweet that's why there are times that I cook sweet paksiw and they love t so much, here is my recipe for it.

Ingredients:
1/2 kilo fish (any kind  of your choice)
3/4 cup vinegar
4 cloves garlic ( crushed)
1/4 teaspoon peppercorn ( pamintang buo)
1 onion
2 tablespoons sugar
thumb size ginger( strips)
some chili
salt  to taste

Procedure:
1. In a pot put all the ingredients and let it boil then simmer until cooked.
2. If the taste of the vinegar is so strong, you can add a little water.
3. Simmer for few  minutes until done.
4. Serve it with rice.

Paksiw na Pata with Atsuete

 A delicious pork leg paksiw with the aroma of annatto or atsuete, will surely win the hearts of your loved ones. So serve this now :-).

Ingredients:
 1 kilo pork leg (pata)
 5 cloves garlic (crushed)
 1/2 cup atsuete syrup ( saoked 2 tablespoons of atuete seeds in 3/4 cup hot water then drain)
 3/4 cup vinegar
 3 cups water
1/2 teaspoon peppercorn ( pamintang buo)
  salt and pepper to taste


Procedure:
1. In a pot put the garlic, pata, soy sauce,peppercorn,  vinegar,atsuete syrup, salt and pepper then allow to simmer for few minutes.
3. Add the water and bring to a boil, simmer until it is tender stirring occasionally, once tender, increase the heat to high, to make the water evaporate, making the paksiw saucy.
4.Serve it with rice :-)

Binalot na Dilis Paksiw


I love cooking anchovies paksiw this way to avoid it from breaking up. I learned this style from my parents.

Ingredients:
1/2 kilo anchovies ( dilis)
thumb size ginger
1 onion
2 cloves garlic
1/2 cup vinegar
1/4 teaspoon black pepper (crushed)
salt
banana leaves for wrapping



Procedure:
1.  Combine the anchovies, ginger, black pepper, salt, garlic and 1/4 cup vinegar and mix well.
2. Spoon a portion then place it on the banana leaves and wrap well.
3. When wrapping is done, put the rest of the vinegar, cover and cook over low heat. Serve when done.
