Chicken Lumpia


Simple and economical dish that is good for all occasions.

 Ingredients:
1/2 kilo ground chicken
40 spring roll wrappers
1 onion/spring onion ( minced)
4 cloves garlic ( minced)
1 medium size carrot ( minced)
2 medium size potatoes ( minced)
1 beaten egg
1 cup flour
salt and pepper to tatse


Procedure:
1. Mix all the ingredients except for the wrapper.
2. In a wrapper put the meat mixture then wrap it properly
3. After wrapping, heat the oil and deep fry the lumpia until golden brown ( fry in a moderate heat so that the meat inside will be cooked gradually and to avoid burning the wrapper).
4. Serve it with your favorite sauce.

Sinigang na Hipon


This dish is so delicious especially if the weather is cold, although you can prepare this anytime you want it. Unlike meat sinigang, shrimp sinigang is so easy and quick to prepare. You can prepare this with lots of vegetables that you like, but for this recipe I only used spinach. According to what I've read spinach is a good source   of Niacin and Zinc, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese, so include spinach in your diet.

Ingredients for 3 servings:
10 pieces shrimps
1 tomato (sliced)
3 cups water
1/2 onion ( sliced)
2 tablespoons sinigang Mix or according to your taste
2 cups kangkong or spinach

Procedure:
1. In a pot put the water, tomatoes, and onion, bring to a boil then simmer for 3 minutes.
2. Add the shrimps and simmer until almost cook then add the leafy vegetables and simmer.
3. Add the sinigang mix then simmer for a minute and turn off the heat.
4. Serve hot with rice.

Chicken wings a la Stroganoff

The creamy sauce of this chicken dish, is really an appetite booster, so make sure the rice is enough for everybody.

Ingredients
1/2 kilo chicken wings
1/2 cup sliced  mushrooms
1 small onion
1 cup tomato sauce
1 cup Nestle Cream
3 cloves garlic
1 cup water
salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the chicken wings, simmer until it pinkish color is gone.
2. Add the tomato sauce then simmer for 5 minutes over low heat.
4. Add water then adjust to medium heat and simmer until the chicken wings are cooked.
5. Add the mushrooms, salt and pepper to taste then simmer for 3 minutes.
6. Add the Nestle cream and simmer for a minute then turn off the heat.
7. Serve it hot.

Salmon Sisig




A healthy version of sisig made from salmon, I cooked this for a friend who can not eat pork.

Ingredients for 3 servings:
1/4 kilo salmon (fried and flaked)
2 tablespoons soy sauce
1  onion (minced)
4 cloves garlic (minced)
2  tablespoons lemon or calamansi juice
spring onion
1/2 cup diced different colored bell pepper
salt and pepper to taste

Procedure:
1. Saute the garlic and onion, then add the bell pepper and saute to bring out the aroma.
2. Add the flaked fish, soy sauce, calamansi juice, salt and pepper then stir until well combined, continue stirring until done then sprinkle with spring onion.
3. Serve hot and enjoy.

Turon De Pinya

This kind of turon surprised me with an excellent taste that I've never expected.

 Ingredients:
spring roll wrappers
Pineapple slices
sugar
oil for frying

Pineapple slices


Procedure
1. Slice the pineapple according to your desired thickness


2. Wrap properly with spring roll wrappers.


3. Deep fry it until done. Remove from oil then set aside.
 4. Melt 1 cup of sugar with 1 teaspoon of butter or oil, once it is melted pour over the cooked turon de pinya.
5. Serve it hot :-).

Garlic Crayfish

 Have you tried crayfish before? When I tasted it, I said "wow this is yummier than the shrimps". :-).
This is my simple recipe for it. I served this for my friends.

Ingredients:
1/2 kilo crayfish
8 cloves garlic ( minced)
1 tablespoon lemon or calamansi
salt and pepper to taste
Spring onion for garnishing



Procedure:

1. Saute the garlic until brownish then add the crayfish, cover and simmer for 5 minutes over medium heat.
2.Add the lemon juice, salt and pepper to taste, then simmer over low heat stirring every now and then until done.
3. Sprinkle with spring onion then serve it hot.

Chicken A La King (Filipino Style)



 Chicken a la king is a chicken dish consist of cubed chicken in a creamy sauce, this can be cooked with or without sherry or white one. I cooked this for my Filipino friends so I omitted the wine since wine is not common in Philippine cuisine. I added some pineapple for a tangy taste since I omitted the wine. An excellent dish according to my friends who ate this.

Ingredients for 5 servings:
1/2 kilo boneless chicken breast ( cubes)
1 cup sliced mushrooms
1 green bell pepper (diced)
1 red bell pepper ( diced)
1/4 cup flour
1 onion
1 cup water
1 cup fresh or evaporated milk
1 cup Nestle cream
1 cup pineapple (optional)
salt and pepper to taste

Procedure:
1. Saute the onion then add the chicken then pan fry it until brownish then remove the chicken and set aside.
2. Add the mushrooms and bell peppers then stir until soften, add the flour and stir for 2 minutes then add the water and milk then continue to simmer until almost boiling.
3. Add the chicken, salt and pepper to taste then simmer until everything is cooked.
4. Add the Nestle cream then simmer for a minute and turn off the heat.
5. Serve hot with rice or bread.

Seafood Delight Noodles

I cooked this for a special woman because it is her 31rst birthday, she and her daughter loved it so much.

Ingredients for 4 servings:
2 packets instant noodles ( boiled and drained, do not include the flavoring, throw it :-) )
3 cloves garlic
1/2 onion
3 crab sticks ( cut into halves)
1/4 kilo shrimps
1 crab
1/2 cup water
1/2 cup spring onion (minced)
2 tablespoons soy sauce
salt and pepper to taste

Procedure:
1.Saute the garlic and onion then add the crab, simmer until it is cooked then remove it.
2. Add the shrimps and simmer until half cooked, then add the crab sticks and soy sauce then simmer for 2 minutes.
3. Add the water, salt and pepper then bring to a boil over high heat, then add the noodles and stir until well coted then turn off the heat.
4. Sprinkle with spring onion, arrange in a platter and do not forget to put the crab, enjoy!

Crispy Pork Leg ( Crispy Pata)


Crispy pork leg or crispy pata is one of my family's favorite.


Ingredients:
1 pork leg ( pata)
1 cup Sprite Softdrink
1 teaspoon ground pepper
1 lemon or 5 calamansi
garlic
salt
water ( level with the pork leg)


Procedure:
1. In a pot put the pork leg, garlic and salt then boil the pork leg until tender or pressure cook the pork leg for 10 minutes. When it is already cooked, removed it and set aside.
2. Before frying pour in the sprite evenly on the pork leg, sprinkle with lemon or calamnsi juice and ground pepper.
3. Deep fry it until golden brown and crispy.
4. Serve it with your desired sauce
Note: Be careful while frying, cover it, cos the oil really burst! When it is almost done sprinkle with water to make it really crispy.
