Pinaypay/Maruya


If I am not mistaken this one is called "Maruya" in the Luzon region of Philippines, but in the Mindanao region of Philippines this is called "Pinaypay or paypay nga saging" which means banana fan because it's shaped into a hand fan before cooking it. I always want to eat this during snack time when I was in Davao city where this one is one of  the most popular snacks. This is how to cook it.

Ingredients:
banana ( depends how many you want to make)
flour and water combined together to make a batter ( you can add 1 egg for the batter)
sugar
oil for frying

Procedure:
1.Peel the banana and slice thinly and form into fan.( Leave the tip uncut, easier to form a fan this way)
2. Dip in the batter and coat it properly.
3. Deep fry until cooked.
4. Dash with sugar and serve.





Sauteed Sardines



I am so hungry and I want something very quick to prepare so I just grabbed a can of sardines from my cupboard and sauteed it. I grabbed my leftover rice then I squeeze unto the pan after I poured the sardines now I am having a feast,  here is the result, do you want some?

Ingredients:
1 can sardines
1 tomato sliced into cubes
1 onion

Procedure:
1. Saute the tomato and  onion.
 2. Pour in the sardines and simmer until cooked.
 3. Serve it hot.



Arroz Caldo




If I want something heavy for my snack or breakfast I prepared arroz caldo, easy to digest and an energizer to start your day right. I learned to cook this since I was 12 years old, so now I am an expert in cooking this dish. My self proclamation lol.

Ingredients:
2 cups rice
1 onion
1/4 kilo chicken
1/2 cup fish sauce (patis)
1/2 teaspoon pepper
ginger  ( around 3 inches) sliced into strips
salt  to taste

water that is enough to make the arroz caldo soupy until it is cooked.


Procedure:
1. Saute the ginger and onion
2. Add the chicken and braise for a while, then add the fish sauce and ground pepper then simmer for 2 minutes.
3. Add the rice and saute for few minutes allowing the flavor of the fish sauce to penetrate. Cover and simmer.
4. After few minutes of simmering add water that is enough to make the arroz caldo soupy until it is cooked.
5. Garnish it before serving. Mmmmmmm very yummy!


Sauteed Corned Beef




Every now and then we crave for some food, today I am craving for corned beef, and here it is.:)

Ingredients:
1 can corned beef
1 onion ( sliced into rings)
1 tablespoon oil

Procedure:
1.Heat the oil then saute the onion, after sauteeing, remove some for toppings later.
2. Add the corned beef and continue to simmer until done.
3. Top the onion and serve hot.


Pata with Black Beans



When I serve this my friend said "Oh lala, mama mia, I am mouth watering" Delicious and very aromatic, every bite of the meat you can smell the star anise and other spices, wanting you to have more. Try this recipe and enjoy eating with your loved ones, because I am very sure that they will like this.

Ingredients:
1 kilo pork leg sliced(pata)
2 tablespoons black beans or tausi
8 cloves garlic
1 onion
2 tbsp. oyster sauce
3 pcs. star anise
2 tablespoons sugar
ground pepper according to your taste
3 cups pork broth( sabaw sa pinagpakuluan ng pata)


Procedure:

1. Boil the pork hocks until tender then put little salt and set aside.
2. Saute the garlic and anion then add the black beans and simmer.
3. Add the pre-cooked pork hocks, star anise, oyster sauce and sugar then mix well and simmer for 3 minutes.
4. Add the pork broth and bring to boil, once boiling let simmer for 10 minutes over medium heat, allowing all the flavors to infuse the put ground pepper.
5. Increase the heat when the cooking is almost done, to make the sauce thick.
6. Turn off the heat and serve hot with rice.:)

You can adjust the ingredients according to your taste

Pritong Galunggong



One of my favorite fish is round scad (Galunggong)Soft and savory. I like it a lot when it is fried, come on and let's eat, I am sharing this all to you.

Ingredients:
1/2 kilo Round scad (galunggong) 
3 calamansi
iodized salt
Oil for frying

Procedure:
1. Clean the fish then make some slits so that it can be absorbed.
2. Squeeze the calamansi  evenly then sprinkle with salt.
3. Heat the oil and deep fry the fish until golden brown.
4.Serve it hot.

Or you can cut the fish into halves

Chicken Curry (Filipino Style)


My family loves this so much, that's why I learned how to cook this,and this is even one of my favorite chicken dishes. Simple and easy to cook so why don't you try it? Enjoy cooking.

Ingredients:
1 kl. chicken (sliced to your desired size)
2 big potatoes
1 big carrot
2 tablespoon curry powder
1 1/2 cup pure coconut milk
1 bell pepper
4 cloves garlic
1 small size onion
100 grams ginger ( cut into strips)
2 calamansi
2 cups water
2 jalapeno or siling haba
salt to taste


Procedure:
1. Saute the ginger, then the garlic and the onion then add the chilli.


2. Put the curry powder and saute for few seconds then add the chicken, salt and squeeze the calamansi, do not mix it, just cover until the pinkish color of the chicken meat is gone, then stir it and continue to simmer for 5 minutes over medium heat.
3. Add water and bring to a boil. Once it is boiling add the potato and carrot, simmer until half cooked.
4. If  cooking is almost done, add the bell pepper and coconut milk, simmer until it is done.
5. Serve with love and a smile:)

Cubed Avocado with Condensed Milk



I am craving for this, I am eating it right now:) I used to eat this when I was young since we have some avocado trees at our backyard. When I saw avocado at the market today the memories flash back, and here I am doing what I have done during my younger years.

Ingredients:
half of an avocado
1 tablespoon condensed milk ( you can add more according to your taste)

Procedure:
1. Slice the avocado into cubes.







2. Add the condense milk then serve. Yummy!

Banana Fritters


I can say that this one is the easiest and simple way of making this dish, because I browsed the web and some are just complicated with so many unnecessary ingredients( in my own opinion) I made this simple so that the beginners can follow easily.

Ingredients:
2 ripe bananas
1/2 cup all purpose flour
1/2 cup water ( add if necessary)
2 tablespoons sugar
oil for frying

Procedure:
1. Mash the banana with a fork.
2. After mashing the banana pour in the flour, sugar and water then mix well until the texture is like in the picture below.
3. Spoon a portion and deep fry until golden brown.
5. Serve it hot, or you can sprinkle it with sugar or powdered milk before serving.

Chicken Adobo Fried Rice


Welcome the morning with ths delicious fried rice flavored with the most popular viand in Philippines "Adobo"  I cooked this because I have some leftover chicken adobo and rice. This is very simple and easy to make. Here is how I made it.

Ingredients:
2 cups leftover rice (bahaw)
1/2 cup shredded chicken adobo with sauce
3 cloves garlic
1 tablespoon oil

Procedure:
1. Saute the garlic then add the chicken adobo and stir well, then pour in the rice and stir well.
2. Add pepper and salt if necessary then continue to stir until done.
3. Serve hot with fried egg or anything you want. :)
