Lechon Kawali


It is late night now and my friend, Loida wanted to eat something heavy and special. I said why you are craving so much it is already late in the evening, she said because "I am so hungry", so please cook now the lechon kawali, because we both bought the pork belly yesterday, that is why she knew. So I made her wish came true. I cook the lechon Kawali as quick as I can and here is the way I did it.

Ingredients:
1/2 kilo Pork Belly
1 small lemon or 2 calamansi
4 tablespoons soy sauce
1/4 teaspoon ground pepper
salt to taste

Procedure:
1. Mix all the ingredients. Since there is no time to marinate the meat just prick it with fork so that the taste of the marinating sauce will penetrate the meat.
2. Deep fry the pork belly until it is cooked.
3. Cut into bite size and serve with your favorite sauce. :-)

IF you have time it is better also to boil the meat first, then after boiling put the marinating sauce then deep fry until golden brown.

Fish Sarciado



I love cooking fish this way, because the blending of the tastes of   tomatoes and eggs goes well together.

Ingredients:
1/2 kilo fish
3 med. size tomatoes (sliced)
1 med. size onion ( chopped)
3 cloves garlic ( minced)
salt and pepper to taste
1 egg.( beaten)

Procedure:

1. Fried the fish. Set aside.
2. Saute the garlic, onion and tomatoes.
3. Add 2 glasses of water let it boil.
4. Add salt and pepper
5. Add the fried fish simmer for few minutes.
6. Add the beaten egg, stirring constantly so that the soup will thicken like in the photo. Let it simmer for 2 minutes, Serve it hot and with a smile:)

How To Cook Bicol Express



I cooked this for lunch on August 26,2011. Just craving for some chili hot flavor that time, and I've decided Bicol Express since it's been a long time that I have not eaten it. I missed the taste of it from my brother's cooking.

Bicol express is one of the popular dishes in the Philippines. It was named after one region in the Philippines which this dish originated (Bicol).
 They called it Bicol Express because they said when you eat it you will look for
 a drinking water as quick as you can  because it is so hot!!!:D Have a chili hot experience in your kitchen by cooking Bicol Express for one of your meals. Here is the recipe for it.

Ingredients:
1 kilo pork or beef
1 tablespoon shrimp paste ( bagoong)
1 onion
5 cloves of garlic
1 1/2 cup coconut milk
200 grams jalapeno or cayenne pepper(siling haba)chopped
salt and pepper to taste


Chili

Procedure:
1. Saute garlic and onion then add the chili and continue to saute for a minute over medium heat.
2. Add the meat, simmer for few minutes then add the shrimp paste and stir. Simmer until the meat is tender.


3. Add salt and pepper to taste then simmer for 3 minutes.

4.Add the coconut milk, simmer until rich and creamy over high heat.
5. Serve with a smile :-).




Banana Fritter


When I was young I thought banana fritter is so difficult to make, but when I tried it, it is as easy as counting 1-2-3 :) It is a good dessert that your family will love, so treat them now. Just follow this simple steps.

Ingredients:
Ripe bananas ( it depends how many pieces you want to cook)
1/2 glass milk
1 egg
1 glass bread crumbs or flour

Procedure:
1. Mix the egg and milk
2. Put the banana one by one and roll over the bread crumbs or flour.
3. Deep fry it until golden brown.... that's it! Yummy banana fritters


You can top it with all purpose cream for a creamy taste. It is also better to use breadcrumbs for this fritter than flour, because the crispiness of bread crumbs stays longer than flour.

Fish Adobo


Adobo is a very popular dish in the Philippines. There is a joke among Filipinos, that you are not a real Filipino if you do not know how to cook adobo :D.  Pork or chicken is the typical meat use in cooking it. But we can also use fish in cooking adobo and here is how to do it.

Ingredients:

1/2 kilo fish
1/4 cup vinegar
1/2 cup Soy sauce
3 cloves garlic
thumb size ginger
1small onion
black pepper
salt to taste
chili pepper (jalapeno or cayenne) optional

Procedure:
1. Saute the garlic, ginger and onion then put the vinegar and soy sauce then allow to boil, once boiling add the fish, black pepper and chili pepper then simmer until fully cooked.
2.Serve it with rice.

Fettuccine Carbonara


When I cooked this carbonara, it was just random, I did not plan to cook it for that day, that is why I do not have any bacon in the fridge, so I replaced bacon with a ground beef, it taste good, because the main ingredients for the sauce which is the all-purpose cream is complete.Thumbs up for this and here is the recipe for it.

Ingredients:

1/2 kilo Fetuccine (you can replace it w/spaghetti if not available)
2 tetra packs(200g) all purpose cream
1/4 kl ground beef ( i replaced bacon with ground beef)
1/2 cup grated cheese ( Optional: have some extra for toppings)
4 cloves garlic
1 small size onion
salt and pepper to taste
oregano flakes ( optional)

Procedure:
For the pasta:
1. in a pot boil the fettuccine until it is cook.
2. Set aside

For the sauce:
1. Saute the garlic and onion.
2. Add the ground beef, cover and simmer for few minutes
3. add the salt and pepper simmer for another few minutes
4. add the all purpose cream and cheese, mix it well and finalize the taste
5. serve it by mixing the fettuccine and the sauce or just top the sauce on fettuccine garnish it with grated cheese and oregano flakes.

Braised Chicken Wings


Here is my braised chicken wings, I decided to used wings because it is one of my favorite parts of the chicken.Yummy!

Ingredients 4 for servings:
1/2 kilo chicken wings
3 tablespoons soy sauce
1  potato ( cubed)
3 cloves garlic
1 small size onion
1/2 cup water
salt and pepper to taste
Banana blossom ( optional)

Procedure:
1. Saute the garlic and the onion then add the chicken and soy sauce, braise it until the chicken is brownish.
2. Add the water and bring to a boil then add the potato, banana blossom, salt and pepper to taste then simmer until it's cooked.
3.Serve hot with rice.



Stir Fried Vegetables with Beef






Ingredients:
1/2 kilo beef
1 dozen quail’s egg ( hard boiled)
2 med. size carrots
1 cup button mushrooms
2 tablespoons so sauce
4 cloves garlic
1 small onion

Procedure:
1. Saute the onion and garlic.
2. Add the meat and soy sauce, simmer until tender.
3. add the mushrooms and simmer for 2 minutes.
4. add the carrots and simmer for another 2 minutes.
5. add the eggs and cover it for 1 minute and that’s it.

Shrimp Tempura Filipino Style


For a very good batter, you can replace egg with soda or sparkling water, it makes the tempura crispier. I put egg because it is available anywhere.

 Ingredients:
15 pcs med. size shrimps ( deshelled or nabalatan na)
1 tablespoon calamansi
1 egg ( beaten)
salt and pepper to taste
1/2 cup  bread crumbs
Oil for frying

Procedure:

1. Butterfly the shrimps by cutting at the back part, then sprinkle with calamansi or lemon juice, salt and pepper to taste.

2.Dip in the beaten egg then roll over the bread crumbs.
3.Deep fry it in a medium heat oil until golden brown.
4.Serve with your favorite sauce.

 

Pepperoni Pizza


One of the most well known Pizza topping is the Pepperoni.
Pepperoni is a kind of Italian-American sausage usually made of cured pork or beef. In Portuguese they call it Calabresa It is very easy to do with Pinoy style sauce. Have fun.
 
Ingredients:
1 big size pizza crust
pepperoni sausage
muzarella cheese ( grated)
pizza sauce.
Procedure:
1. Put the pizza sauce on top of the crust.
2. sprinkle the grated cheese
3. arrange the pepperoni
4. Sprinkle again with cheese.
5. Preheat oven to 250 degrees celcius and bake the pizza for 10-15 minutes

 Ingredients for pizza sauce Pinoy Style:
200 grams ground beef
1 pack tomato sauce (250 ml.)
2 cloves garlic
1 small size onion
2 teaspoons sugar
3 tablespoons evaporated milk
dash of salt and pepper

Procedure for the Sauce
1. Saute the garlic and onion
2. Add the meat simmer for few minutes.
3. Add the tomato sauce, sugar and milk
4. Put a dash of salt and pepper simmer until it's done.
Re-cook May 1, 2014



You can add some onion, etc, I just like it to be simple and savor the strong pepperoni taste.
