Butter Calamansi Shrimps



There are various ways of cooking shrimps with different condiments to flavor it. For this I simply used the popular citrus fruit in the Philippines, the calamansi.This is very quick and easy to cook, try it.

Ingredients for 4 servings:
1/2 kilo shrimps ( cleaned and shells removed)
2 tablespoons calamansi
2 tablespoons butter
3 cloves garlic
1 medium tomato
bell pepper
salt and pepper to taste

Procedure:

1.Heat the butter then saute the garlic, add the tomato and continue sauteing until soften then add the shrimps and simmer for a minute.
2. Add the calamansi juice, bell pepper, salt and pepper to taste, then simmer until cooked.
3. Serve hot with rice.

Calamares


Calamares is one of the best squid dishes that I liked because it is so tasty, if it is cooked this way.

Ingredients:
1/2 kilo squid
1/2 cup bread crumbs
1 beaten egg
salt and pepper

Procedure:
1.Clean the squid by removing the skin and innards then wash well and slice into rings. Sprinkle with salt and pepper to taste.

2. Dip in beaten egg and roll over the bread crumbs then deep fry until golden brown over medium heat.


3. Serve it hot with your favorite dipping sauce.



Macaroni and Crystallized Fruit salad


I made this for the kids at the church and they loved it so much.

Ingredients for 5 servings:
2 cups macaroni ( cooked according to its packaging procedure)
1 cup raisins
2 cups Nestle cream
1 1/2 cup crystallized fruit
1 cup condensed milk



Procedure:
1. Combine all the ingredients then mix thoroughly.
2. Refrigerate before serving.

Spaghetti with Meatballs Filipino Style


I cooked this for a special event yesterday. They said it was so yummy :-).

Ingredients for 6 Servings:
1/2 kilo spaghetti ( cooked according to its packaging procedure)
1/4 kilo ground beef  mix with 2 tablespoons flour( form into balls)
1/4 kilo ground beef for the sauce
2 packs tomato sauce ( 250g)
2 tablespoons tomato paste
1/4 cup evaporated milk
1 tablespoon white sugar
1/2 cup grated cheese (optional)
3 tablespoons soy sauce
5 cloves garlic
1 small size onion



Procedure:
1. Saute garlic and onion then add the ground beef and stir until the pinkish color is gone.

2. Add the tomato paste, sugar, tomato sauce, salt and pepper to taste then let it simmer for few minutes.
3. Drop the meatballs and let simmer until the meatballs are cooked.
4.  Add the milk and  cheese then simmer until done.
5.Put the spaghetti in a platter then top it with the sauce,  then serve.


Buko Shake


Coconut shake will surely refresh you.

Ingredients for 5 servings:

1 cup coconut meat
3/4 cup sugar
1 cup evaporated milk
1/2 cup coconut water
ice ( Put ice up to 3/4 full of the blender)

Procedure:
1. In a blender put all the ingredients and blend until smooth


2. Put in serving glasses then serve.

Sinuglaw


Sinuglaw is a  popular dish from Visayas and Mindano regions of Philippines. It is a combination of two dishes, the  Sinugba or grilled and the "kinilaw" or raw. The grilled item is the pork and the raw is the fish, learn how to prepare this by simply following the recipe below :)

Ingredients for 5 servings:
1/4 kilo tuna
1/4 kilo pork belly ( grilled and sliced)
1/2 teaspoon minced ginger
1 teaspoon minced onion
1 tablespoon calamansi or lemon juice
spring onion
salt to taste
1/2 cup vinegar ( to wash the fish)
Chilis( chopped)

Procedure:
1. Prepare the fish by washing it properly with a vinegar then slice into cubes, set aside.
2. Combine all the ingredients until fully mixed.
3. Serve with a smile :-).

Pork Gising Gising

Gising gising is a delicious chili hot dish from Pampanga, Philippines. Gising gising means wake- up, wake up, if you will eat this, you will stay awake because of its hot flavor. Yummy!.

Ingredients for 6-8 servings:
1/2 kilo ground pork
1/4 kilo Sliced Green beans/Baguio beans
6 finger chili ( siling haba)
3 cloves garlic
1/2 onion
1/2 cup pure coconut milk ( can be replaced with Nestle cream or all purpose cream)
salt and pepper to taste
garlic, onion, green beans and chili

Procedure:
1. Saute the garlic and onion then add the meat and saute until the pinkish color is gone, then simmer  over medium heat.
2. Add the green beans, chili, salt and pepper then stir until almost done.

 3. Add the coconut milk then simmer until done.
4. Serve it hot with rice.

Buko Juice

A refreshing drink that you will surely enjoy.

Ingredients for 4 servings
2 Coconut fruits
1 cup evaporated milk
sugar to taste
Ice Cubes

Procedure:
1.Remove the water from the coconut fruit and put in a pitcher. Cut the coconuts into halves and scrape the flesh and put also in a pitcher.
2. Add the milk and sugar then mix well until the sugar is dissolved
3. Add lots of ice cubes and allow to melt to increase the liquid content.
4. Serve and enjoy :-).

Asparagus with Pork and Shrimps


A delicious vegetable dish that you will definitely like. Try it.

Ingredients:
1/4 kilo pork
1/4 kilo shrimps
1/2 kilo asparagus ( cleaned and cut)
3 cloves garlic
1 onion
salt to taste


Procedure:

1.Saute the garlic and onion then add the pork and saute until brownish then put the water and simmer until pork is tender then add the shrimps and simmer for a minute.
2. Increase the heat for stir frying, add the asparagus then stir fry until cooked, add some salt to taste.
3.Turn off the heat and serve hot.

Tutti Frutti Salad



A delicious salad that I've created for my friends who visited me last week. They loved it and asked for the recipe.

Ingredients
1 cup corn kernel
1 cup pineapple tidbits
1 big apple (sliced into tidbits)
1/2 cup raisins
2 cups Nestle Cream
1 cup condensed milk
1 can fruit cocktail ( 15 0z.) drained
3 different colored gelatine ( cooked according to its packaging procedure) 12 grams each pack

Procedure:
1. Cut the gelatine into cubes. (if you do not want to use gelatine you could replace it with nata de coco or kaong)

2. Combine all the ingredients then mix well.
3. Refrigerate before serving.
