Turon (My Style)


Turon is one of the famous snacks in Philippines, but saba banana is used for it, here in my place saba is not available so I used a different variety of banana and it still tastes so delicious.

Ingredients:
spring roll wrappers
ripe banana ( it depends how many you want to make) any cooking banana can be used
sugar
oil for frying

Procedure
1. Peel the banana and slice into halves

2. Wrap properly with spring roll wrappers.


3. Deep fry it until done. Remove from oil then set aside.

 4. Melt some sugar with a little oil, once it is melted pour over the cooked banana.
5. Serve it hot :-).

Most of the turon has jackfruit inside. But in my place it's hard to find, so I just cooked a simple one.

Crab with coconut milk



Fresh and on sale at the market yesterday so I grabbed the opportunity and cooked
 ginataang talangka ( Crab with coconut milk). My father always makes this dish when I was young that's why I learned to cook it.

Ingredients:
4 crabs
2 tablespoons ginger strips
1 onion
2 cups pure coconut milk
1 cup water
some spring onion

Procedure:
1.  Clean the crab and wash very well.
2. In a pan combine 1 cup of water and 1 cup coconut milk then put the, ginger, onion and garlic then let it boil.

3. Once it is boiling add the crabs then let simmer for few minutes.


4. When it is cooked put the rest ot the coconut milk let simmer and put the spring onion then serve it hot.

Coffee Cookies

Try this delicious coffee cookies that goes well with your favorite drinks.

Ingredients:
1/2 cups sifted all-purpose flour
 1  teaspoon baking powder
3/4 cup sugar
3/4 cup butter
 1  tablespoon instant coffee
 2  tablespoons hot water
 1  egg beaten
 

Preparation:
1.Sift flour, baking powder, and salt; set aside.
2.In a mixing bowl, cream together the sugar and butter.
3.Dissolve coffee in hot water and let it cool, then mix all the ingredients thoroughly to form a cookie dough.
4.Get a portion of the dough and arrange in a lightly greased baking sheets.
5.Preheat the oven then  bake at 180 degrees celcius for 10 to 12 minutes.
6.Serve with your favorite drinks or keep it in a jar to munch it every now and then :-).

Simple Chicken Pad Thai



Sawasdee ka is "hello" in Thailand, this is always the greeting of the Thai vendor, every time I order Pad Thai at her booth. Pad Thai is at top number 5 spot in World's 50 most delicious foods readers' poll compiled by CNN Go in 2011. Make this Thai dish right at your home by following this recipe.I will make Pad Thai again but I will include the recipe for the sauce. Do not have much time when I cooked this so I just used the bottled sauce.


Ingredients for 3 servings:
1/4 kilo chicken breast
100 grams rice sticks noodles
100 grams bean sprouts (toge)
3 tablespoon fish sauce (patis)
1/4 cup crushed cashew nuts
1 egg ( fried and scrambled)
3 spring onion stalks ( cut into an inch long)
1 cup Pad Thai sauce





Pad Thai Sauce and Noodles




Procedure:
1. Cook the noodles for 13 minutes or until al dente, then drain and set aside.





2. Saute  the garlic and onion then add the chicken breast and simmer for few minutes.
3. Add the fish sauce and simmer until chicken is cooked, then add the sauce and noodles, mix well.

4. Add the bean sprouts and spring onion mix well for less than a minute then turn off the heat.

5. Chopped the scrambled egg and mix with the crushed cashew nuts, then pour  add in the noodles and mix well. Get some to sprinkle on top before serving. Enjoy!


For a homemade sauce you can combine:
1 tablespoon sugar
1 tablespoon lemon or lime  juice
1 tablespoon soy sauce
1 tablespoon water
1 tablespoons fish sauce

Spiral Macaroni Soup

I cooked this for my friends few weeks ago when the weather was cold.

Ingredients:
2 cups spiral macaroni
200 grams ground beef
2 hotdogs ( optional)
3 cloves garlic
1 small size onion
1 cup evaporated milk
1 small carrot
1 cup sliced spring onion
1 knorr beef cube (optional)
salt and pepper to taste



Procedure:
1. Saute garlic and onion then add the ground beef, beef cube, salt and pepper,  simmer for few minutes.
 2. Add the spiral macaroni and saute for a minute, then add water that is enough to soup the macaroni until the cooking is done.
3. Stir occasionally  so that the macaroni will not stick at the bottom of the pot.
4. When it is almost done, add the carrot and simmer until tender.
5. Add the milk and spring onion, let it boil once and turn off the heat.
6. Serve it hot :-).

Chicken Humba


Humba is a popular pork dish, but do you know that chicken can be cooked as humba too? Here is the recipe if you wanna try. :-).

Ingredient:
1/2 kilo chicken
1/4 cup soy sauce
1/2 cup pineapple juice
1/4 teaspoon ground pepper
3 tablespoons vinegar
3 clove garlic(crushed)
1  onion
1 tablespoon brown sugar
1cup banana blossoms (bulaklak ng saging)

Procedure:
1. In a pot put all the ingredients and let it boil over medium heat, once boiling , simmer for 5 minutes before stirring it.
2. Continue to simmer until the chicken is cooked.
 3. If the chicken is already cooked and it is still soupy (masabaw) increase the heat until the soup thickens and turn off the heat.


4. Serve it with rice :-).



Vegetable Spring Rolls


Crispylicious vegetable spring rolls or Lumpiang gulay as Filipinos called it. This is very popular in the Philippines specially during family gatherings. Affordable and delicious but usually  bean sprouts are the base ingredient, but this one I used the couve leaves or collard green and other vegetables which I learned from somebody who is an expert in cooking this :-).

Ingredients:
20 spring roll wrappers
200 grams shrimps ( removed the shell and chopped)
1 kilo pechay ( sliced thinly)
2 carrots (sliced into thin strips)
2 potatoes (sliced into thin strips)
1 big sweet potatoes (sliced into thin strips)
onion
garlic
fish sauce



Procedure:

 1. Saute the garlic and onion, add the chopped shrimp and simmer for few minutes.
2. Add the fish sauce, carrots, potatoes and sweet potato simmer until cooked.
3. Add the rest of the ingredients, simmer until it is cooked.
4. Drain and let it cool.
Ready to be wrapped

5. Wrap in the spring roll wrapper and deep fry until golden brown.

6. Serve hot with your favorite sauce.

Sushi Pinoy Version

This is my Pinoy version of sushi made with mango and some vegetables. Very delicious.

Ingredients:
2 cups cooked sushi rice
1 cucumber ( cut into long strips)
1 ripe mango ( cut into long strips)
1 carrot ( cut into long strips)
toasted black sesame seeds
nori seaweeds


Procedure:
1. Place the seaweed over the sushi mat.
2. Put the rice and flatten evenly then put the strips carrot, cucumber and mango.
3. Roll it until the roll is firm and done.
4. Slice into serving pieces, then sprinkle with black sesame seeds and serve with sushi sauce.




Here is how to cook the sushi rice:
1. Wash 3 cups of sushi rice then put water, sushi vinegar and sugar let it boil and cook like the normal rice that we eat during our meals.
2. When the rice is cooked let it cool, then prepare other sushi ingredients.
if sushi rice is not available just mix 2 cups of glutinous rice with 3/4 cup of normal rice.

Glorious Monggo


100% delicious and nutritious:-). I loved this dish since I was a kid.


Ingrdients:
some fried fish
2 cups mung bean or monggo
6 okra
2 cups sliced squash
2 cups spinach or alugbati
3 cloves garlic
1 onion
salt
water ( enough to cook the monggo)

 Procedure:
1. Boil the monggo until tender. Set aside.
2. Saute the garlic and onion then add the fish and simmer for a minute.
3. Add the monggo, salt and squash simmer until half cooked.
4. Add the okra and simmer for 2 minutes.
5. Add the alugbati or spinach and simmer until cooked.
6. Serve it with a smile :-).
