Mely's Kitchen Arroz Valenciana





Today we will make a simple and easy way of cooking arroz Valenciana, and I hope that you will try this dish from my kitchen. :-). I like a Valenciana that is not too sticky that's why I combined the white rice and glutinous rice I designed this recipe specially to those who are just beginning to cook, I will make a very special one soon, God willing. Enjoy cooking.

Ingredients for 6 servings
2 cups cooked glutinous rice ( malagkit)
2 cups cooked  white rice ( the normal rice that we eat during meals)
4 cloves garlic
1 onion
 2 tomatoes
2 pieces chicken hotdog
1/4 kilo pork lean meat( boiled and sliced)
2 chicken drumsticks ( chopped)
2 tablespoon atsuete seeds ( annatto)
3/4 cup water
 1 bell pepper
salt and pepper to taste
1 hard boiled egg 

Optional ingredients
2 chicken liver (optional)
1/2 cup raisins
1/2 cup green peas


Some of the ingredients
Procedure:
1.In a pan boil the atsuete with 3/4 cup water, let boil for 2 minutes then mix it well ( the darker the color the better) drain and set aside. ( we need 1/2 cup of this)


2. Saute the garlic then the onion and tomato add the chicken meat and liver, salt and pepper then simmer for few minutes. Then add the pork and hot dog then simmer for few minutes, then add the 1/2 cup atsuete water mixture and bell pepper, then simmer until all the ingredients were incorporated with the atsuete color, add salt and pepper if needed.

3. Add the rice and mix well then simmer for few minutes until fully combined. Turn off the heat and add some green peas and raisins if you want.

4. Serve with hard boiled egg slices. Happy eating!

Mely's Kitchen Goto



Goto is a kind of porridge in the Philippines with ox tripe that is cooked tenderly, making this porridge very delicious.

Ingredients:
1 cup rice
1/4 kilo ox tripe ( tuwalya ng baka) (boiled and tender)
1/4 cup ginger strips
3 cloves garlic
1 onion
salt and pepper to taste
7 cups water (add if needed)

Toppings:
toasted garlic
hard boiled egg
chili flakes ( if you want it hot)
spring onion, etc.

Procedure:
1.  Saute the garlic, then ginger and onion until brownish then add the pre-cooked ox tripe then simmer for few minutes.


2. Add the rice, salt and pepper then simmer for few minutes.
3. Add the water, then cover, stirring constantly so that the rice will not stick at the bottom of the pot.
4. Continue simmering until the rice is so tender making the porridge thick in texture. Add more water if necessary.
5. When it is done, serve it hot with your toppings.

Fried Rice with Tuna Flakes and Scrambled Eggs


I have left over rice and 1/2 can of tuna flakes that's why I made this delicious fried rice. Quick and easy to cool,  just heat 2 tablespoons of oil then add 2 cloves minced garlic and saute it, add the tuna and saute until cooked then increase the heat and pour in the 2 beaten eggs and stir well until cooked, add 2 cups of rice and stir until done. Sprinkle with salt to taste then stir for a few seconds and turn off the heat. Sprinkle with spring onion then serve it hot. Yummy ! :-)



Don't waste food!! It's part of God's blessings. Learn to recycle the leftover.

Quinoa with Mixed Vegetables

The Food and Agricultural Organization of the United Nations (FAO) declared that this year (2013) is the International Year of the Quinoa. I posted this to help them promote Quinoa and introduce this wonderful food which is unfamiliar to many people. This recipe is very delicious, I hope that you will try it.

Ingredients:
1 cup cooked Quinoa
2 cloves garlic
1/2 cup broccoli
1/4 cup carrots trips
1/2 cup cauliflower
1/2 cup shrimps  (cleaned)
salt and pepper to taste

Procedure:
1. Saute the garlic then add the shrimps and simmer for 30 seconds.
2. Add the broccoli, cauliflower and carrots then simmer until tender.
3. Add the cooked quinoa, salt and pepper to taste then stir, until done.
4. Serve it hot.

Shanghai Rice


An easy to prepare fried rice loaded with yumminess.

Ingredients for 3 servings:
2 cups cooked rice
1/2 cup ground pork or beef
1 cup of mixed green peas, carrots,potato and bell pepper
3 cloves garlic
1/2 cup chopped spring onion
3 pieces hotdog ( diced)
2 eggs ( fried and chopped)
salt and pepper to taste

Procedure:
1. Saute the garlic then add the ground beef and saute for 2 minutes.
2. Add the hotdog, mixed vegetables and simmer for a minute.

3. Add the rice and mix well and stir until fully mixed, then add salt and pepper to taste, continue to stir until done and turn off the heat, top with chopped egg and spring onion.

4. Serve it hot.

I admire the nutrients from Quinoa, that is why I'm in love with this food. A good replacement for rice, and you can cook it the way you cook the rice. I will be posting more recipes for this soon. Yummy!

It is easy how to cook quinoa, unlike the rice, we do not need to wash quinoa.
I always use this measurement in cooking:
Raw Quinoa
1 cup quinoa
1 1/2 cup water
Put the quinoa and water in a cooking pot  then bring to a boil, once boiling just lower the heat and allow to simmer until the water is gone, then continue to cook over low heat until done. You can serve it as it is, or you can have it with mixed vegetables. Enjoy a healthy meal.

Tomato Fried Rice


A fried rice loaded with tomatoes, making the dish so tempting and appetizing.Try it.

Ingredients for 2 servings:
 2 cups cooked rice
5 tomatoes
3 cloves garlic ( crushed)
salt and pepper to taste
1/4 cup spring onion

Procedure:
1. Saute the garlic and tomatoes for 5 minutes or until the tomatoes are soft, then add the rice and stir very well to mix evenly.
2.Add salt and pepper and continue to stir fry until done, then sprinkle the spring onion.
3. Serve it hot with your favorite dish or just fried egg.

Beef Arroz A La Cubana


I love this combo meal so much, very satisfying and so flavorful.

Ingredients for 4 servings:
1/4 kilo ground beef
4 cloves garlic ( minced)
1 medium potato ( small diced)
2 tablespoons tomato sauce
1/2 onion ( minced)
1 carrot ( small diced)
1/2 bell pepper ( small diced)
1/4 cup green peas
4 cups cooked rice
4 sunny side up eggs
fried bananas for 4 servings

Procedure:
1. Saute the garlic and onion then add the ground beef,  saute until pinkish color is gone.
2. Add the tomato sauce, potato, carrots, and bell pepper then simmer
3. Add the green peas, cover and continue cooking for a minute or until the peas are done, then turn off the heat.
4.In a serving platter arrange the combo meal by putting the rice, fried egg, fried banana and the ground beef,then serve with a smile :-).

You can add raisins according to your taste.

Fried Rice supreme


A quick to prepare fried rice that you will surely like. Try it.

Ingredients for 4Servings:
2 cups cooked rice3 cloves garlic
2 eggs ( scrambled and chopped)
1/2 cup raisins
1/2 cup diced ham
salt and pepper to taste

Procedure:
1. Saute the garlic until brownish then add the ham and continue to saute for a minute.
2. Add the rice then mix well and stir until blended well with the ham.
3. Add the egg, raisins, salt and pepper to taste.
4. Stir until done then serve hot.

Champorado

Serve with tuyo





Noong bata pa ako karaniwang almusal namin ang champorado lalo na kung maulan ang panahon kaya naging paborito ko ito lalo na kapag maraming gatas at katamtaman lang ang tamis. Madali namang lutuin ang champorado at ito ang ibabahagi ko ngayon.

Mga Sangkap:
1/2  cup malagkit na bigas
1/2  cup ordinaryong bigas
8 cups water ( dagdagan kung kailangan)
1/2 cup chocolate powder
asukal ( depende sa iyong panlasa)
evaporated milk (depende sa iyong panlasa)

Paraan ng Pagluluto:
1. Paghaluin ang bigas at hugasang mabuti, ilagay sa kaldero kasama ng tubig at pakuluin ito. Kapag nagsimula ng kumulo, haluin paminsan minsan upang huwag dumikit, lutuin hanggang sa lumambot.
2. Kung luto na ihalo ang chocolate powder at haluing maigi at patuloy na pakuluan hanggang maabsorb ng kanin ang kulay ng chocolate.
3. Ilagay sa mga mangkok  lagyan ng gatas at asukal , haluing maigi saka ihain.

Pwede ring ilagay ang chocolate powder habang pinapalambot ang kanin para maabsorb ng kanin ang kulay.


For English Version:
Ingredients: 
1/2 cup glutinous rice
1/2 cup ordinary rice
8 cups water
1/2 cup chocolate powder
sugar (according to your taste)
evaporated milk (according to your taste)

Procedure:
1. Mix the rice and wash it then put in a pot together wih the water and bring to a boil. When it is boiling, stir occasionally so that it will not stick at the bottom of the pot. Cook until the rice is very popped or tender.
2. Add the chocolate powder and mix thoroughly and continue to boil until the rice absorb the color of chocolate.
3. Put in the bowls put the milk and sugar, mix thoroughly then serve.


If glutinous rice is not available, it's ok to use the ordinary rice.

Rice Soup


Have you heard of rice soup? Well, here it is, I knew it is unusual but believe me it is a delicious.

Ingredients for 5 servings
3 cloves garlic
1 onion
1/4 kilo chicken
1/2 cup rice
10 cups water
salt and pepper to taste
1 carrot ( diced)
spring onion for garnishing

Procedure:
1. Saute the garlic and onion then add the chicken and saute until pinkish color is gone.
2. Add the rice, salt and pepper then simmer for a minute.
3. Add water and bring to boil, stirring occasionally to avoid the rice from sticking at the bottom of the pot.Let simmer until the rice are so tender. Add water if necessary.
4.  Add the carrots and simmer until done.
5. Sprinkle with spring onion then serve.

If you love ground pepper, you can add more it is yummier.

Aloha Fried Rice


A very nice tasting fried rice, all of the ingredients blended well to make you want for more :-).

Ingredients for 3-4 servings:
3 cups rice
2 eggs ( scrambled and fried)
1/2 cup diced different color bell peppers
1 cup pineapple tidbits
1 cup diced ham
3 cloves garlic (minced)
1 onion ( minced)
salt to taste

Procedure:
1.Saute the garlic and onion, then add the ham and carrots then simmer for a minute.
2. Add the rice and salt  then combine well then stir for few minutes.
 3. Add the fried egg and pineapple, stir and combine thoroughly then turn off the heat.
 4. Serve it hot. :-)

Binignit


This is very related to the ginataang bilo-bilo of Luzon, but the Visayan version has "landang". Landang is a lumpy starch from palms, it gives the binignit a sticky texture and adds flavor. Have you used landang before? There are different colors of landang, I used the brown one.

Ingredients:
1 cup glutinous rice powder ( mixed with water and form into small balls)
1 cup landang ( washed thoroughly)
3 cups water
2 bananas (saba)
1 piece small cassava ( kamoteng kahoy)
1 purple sweet potato
sugar to taste
3 cups thin coconut milk ( hindi kakang gata)
1 cup thick coconut milk ( kakang gata)


Landang


Procedure:
1. In a pot put the water and landang, bring to a boil then simmer until cooked do not forget to stir every now and then.
2. Add the thin coconut milk then bring to a boil, when boiling add the cassava and simmer until tender. Add the sweet potato, banana and sugar then simmer until cooked.
3. Add the thick coconut milk and simmer until done.
4. Serve with a smile :-)



You can add sago, young coconut meat, etc for this recipe

Pork Adobo Fried Rice


Simple way to save your leftover rice and one method of economizing is this way. I enjoyed this food while eating with fresh air near my secret garden :)

Ingredients:
2 cups leftover rice (bahaw)
1/2 cup shredded pork adobo with sauce
3 cloves garlic
1 tablespoon oil
salt and pepper to taste

Procedure:
1. Saute the garlic then add the pork adobo, stir well, then add  the rice and stir for few minutes.
2. Add pepper and salt if necessary then continue to stir until done.
3. Serve hot with anything you want.

Arroz Caldo




If I want something heavy for my snack or breakfast I prepared arroz caldo, easy to digest and an energizer to start your day right. I learned to cook this since I was 12 years old, so now I am an expert in cooking this dish. My self proclamation lol.

Ingredients:
2 cups rice
1 onion
1/4 kilo chicken
1/2 cup fish sauce (patis)
1/2 teaspoon pepper
ginger  ( around 3 inches) sliced into strips
salt  to taste

water that is enough to make the arroz caldo soupy until it is cooked.


Procedure:
1. Saute the ginger and onion
2. Add the chicken and braise for a while, then add the fish sauce and ground pepper then simmer for 2 minutes.
3. Add the rice and saute for few minutes allowing the flavor of the fish sauce to penetrate. Cover and simmer.
4. After few minutes of simmering add water that is enough to make the arroz caldo soupy until it is cooked.
5. Garnish it before serving. Mmmmmmm very yummy!

Chicken Adobo Fried Rice


Welcome the morning with ths delicious fried rice flavored with the most popular viand in Philippines "Adobo"  I cooked this because I have some leftover chicken adobo and rice. This is very simple and easy to make. Here is how I made it.

Ingredients:
2 cups leftover rice (bahaw)
1/2 cup shredded chicken adobo with sauce
3 cloves garlic
1 tablespoon oil

Procedure:
1. Saute the garlic then add the chicken adobo and stir well, then pour in the rice and stir well.
2. Add pepper and salt if necessary then continue to stir until done.
3. Serve hot with fried egg or anything you want. :)

Egg Fried Rice



Fried rice is a part of a typical breakfast of Filipinos, specially the combo fried rice ( longsilog, tapsilog, tocilog, etc). I decided to make egg fried rice for breakfast because I saw some leftover rice in the pot. How about you what are you going to prepare for breakfast today?  Good day everyone.

Ingredients for 3 servings:
3 cups leftover rice (bahaw)
2 beaten eggs
3 cloves garlic
2 tablespoons oil
salt or patis to taste

Procedure:
1. Saute the garlic then add the beaten eggs, by using a fork continue stirring it until cooked so that it will be scrambled well.
2. Add the rice and mix well, stir well every now and then, then sprinkle with salt.
3. Continue stirring until done. You can scrambled more eggs then chop it and put as toppings before serving.

Goto


Goto  is a popular kind of porridge (lugaw) in the Philippines. Loved by many as a breakfast or a heavy snack. I like this with a peppery hot taste.

 Ingredients:
1 cup rice
200 grams boiled and tender ox tripe ( tuwalya ng baka)
1/4 cup ginger strips
1 onion
3 stalks spring onions
salt and pepper to taste
fish sauce( patis=optional)
1 litre of water or more
1/4 cup toasted garlic

Procedure:
1.  Saute the ginger and onion until brownish then add the pre-cooked ox tripe then simmer for few minutes.

2. Add the rice, fish sauce, salt and pepper then simmer for few minutes.

3. Add the water, then cover ( stirring constantly so that the rice will not stick at the bottom of the pot).
4. Continue simmering until the rice is so tender making the porridge thick in texture. Add more water if necessary.
5. Serve it hot with minced spring onion and toasted garlic.

You can add some hard boiled eggs and crushed pork crackling( chicharon)

Ground Beef Fried Rice


A complete meal made from my leftover rice, simple and easy to prepare and a good way to save your leftover rice from going into the bin. All we need are the following:

Ingredients:
    3 cups leftover rice ( bahaw)
    1 onion
    1/2 cup ground beef
    2 tablespoons soy sauce
    2 beaten eggs
    2 beef hotdogs (sliced)
     salt and pepper to taste
    chopped spring onion

Procedure:
1. Saute the onion over medium heat until brownish then add the ground beef, simmer until cooked.
2. Add soy sauce, salt and pepper to taste then simmer for a minute then add the rice, continue stirring until done.
3. For best result scrambled the egg in a separate pan then chop and pour in the fried rice, then mix well, and sprinkle with chopped spring onion then serve hot.
