Carioca

For me carioca is one of the best Filipino Glutinous rice recipe. Sticky and sweet and I love the feeling while chewing it. Really yummy!

Ingredients for 4-5 servings

3 cups glutinous rice powder
1 1/2 cup water
1 cup sugar
1/4 cup coconut milk

Procedure:
1.Mix the water and glutinous rice until you formed a dough like mixture.
2. Scoop a portion then form into balls and press it with your palms to flatten slightly.

3. Fry until cooked.

4. In the other pan put together the sugar and coconut milk, then cooked until it caramelizes, then  coat each of the carioca until all are done.

5. Serve and enjoy :-)

Apple and Gelatine Salad


I love doing desserts lately, specially with gelatine, because it is very easy to prepare. It's unexpected that two of my friends will visit me, after knowing it. I promptly decided to make this salad because it's all I have and I do not have time to go to the supermarket. After our dinner, they told me that they loved all the food specially this salad :-).

Ingredients for 4-5 servings:
2 sachets different colors unflavored gelatine ( 10 grams each)
2 big apples
2 cups nestle cream or light cream
1 cup condensed milk
apple

Procedure:
1. Cooked the gelatine according to its packaging procedure. Refrigerate then slice into dice.
2. Peel the apple and slice to your desired size.
3. Mix all the ingredients then combine well and refrigerate before serving.



Shrimp Caldereta


We always love caldereta, but made of meat ( pork, chicken and beef). How about using shrimps instead of meat? Will you try it, like what I've cooked? This is yummy. So try this recipe and let me know about our opinion.

Ingredients for 3-4 servings
200 grams shrimps
2 potatoes ( diced and fried)
1 carrot ( diced and fried)
4 tablespoons tomato sauce
2 tablespoons soy sauce
2 tablespoons nestle cream
3 cloves garlic
1/2 cup pineapple tidbits
1 onion
salt and pepper to taste
bell peppers as you desired
Hard boiled quails egg ( Optional)

 Procedure:
1.  Saute the garlic and onion then add the shrimps and simmer for a minute.
2. Add the tomato sauce and soy sauce then simmer for a minute.
3. Add the carrots, potatoes, salt and pepper to taste then stir to combine well and simmer.
4. Add the remaining ingredients and simmer until done.
5. Serve it hot with rice and do not forget to smile :-) .

Aloha Fried Rice


A very nice tasting fried rice, all of the ingredients blended well to make you want for more :-).

Ingredients for 3-4 servings:
3 cups rice
2 eggs ( scrambled and fried)
1/2 cup diced different color bell peppers
1 cup pineapple tidbits
1 cup diced ham
3 cloves garlic (minced)
1 onion ( minced)
salt to taste

Procedure:
1.Saute the garlic and onion, then add the ham and carrots then simmer for a minute.
2. Add the rice and salt  then combine well then stir for few minutes.
 3. Add the fried egg and pineapple, stir and combine thoroughly then turn off the heat.
 4. Serve it hot. :-)

Young Corn with Ground Beef


This dish is very easy to prepare and budget friendly. I cooked this for friends who arrived at my place unexpectedly, these are the ingredients that I have when I checked my stocks so that I can prepare delicious meal for them, so I just make something from what I have and it turned out delicious and they liked it.  You can try this.

Ingredients:
some young corn ( slice to your desired size)
1 cup ground beef
3 cloves garlic (minced)
1 green bell pepper ( slice  to your desired style)
1 onion
2 tablespoons soy sauce
1 tablespoon tomato sauce
salt and pepper to taste

Procedure:
1. Saute he garlic and onion then add the ground beef and simmer until the pinkish color is gone.
2. Add the soy sauce, tomato sauce salt and pepper  then simmer for a minute.
3. Add the young corn and bell pepper then simmer until cooked.
4. Serve it hot with rice :-) .

Simpleng Nilagang Baka

This is the easiest way of cooking beef "nilaga" or Stew. Stewing in Asia is different from other continents. Stewing specially in Philippines use only plain water or rice washing without putting any soup thickening ingredients, like tomato sauce. Simple and easy to prepare but delicious.

 Ingredients:
1/2 kilo beef
1/4 kilo  cabbage or pak choi
1 small size onion
2 medium size potaoes
a pinch of whole black pepper
thumb size ginger
8 glasses rice washing
dash of salt.

Procedure:
1. In a pot put the rice washing, ginger, onion, black pepper and  let it boil.
2. Put the beef and simmer until the meat is tender.
3. Add the potatoes then cover until it's cook.
4. Add the cabbage, and spring onion  simmer for 1 minute.
5. Dash with salt then turn off the heat and serve. :-)


Homemade Pork Tocino


100% no coloring. Even tastes better than the one that you can buy at the market, I am not being biased, try it and see for yourself :-).

Ingredients:
1/2 kilo pork ( just choose the part that you like to use)
1 cup pineapple juice
1/2 cup sprite
2 tablespoon sugar
1 tablespoons calamansi or lemon Juice
3 cloves garlic (minced)
1/2 teaspoons worcester sauce (optional)
1 teaspoon soy sauce
salt and pepper to taste


Procedure:
1. Slice the pork and marinate with all the ingredients, overnight or at east 4 hours.
2. In a pan or wok put the meat and the marinating sauce then cook over medium heat, continue to simmer until the sauce dries out.
3. When the sauce dries out put an oil that is enough to pan fry the meat.
 4. After frying serve it with rice. :-)



You can adjust all the ingredients according to your taste.
