Sweet and Sour Whole Tilapia


Lately I am practicing how to make a sweet and sour that is just lightly sweet because there is one person who loves sweet and sour but he said mine is too sweet :D I think this one is just right. I hope I can get the taste that he wanted.

Ingredients:
2 Fried whole tilapia ( fry it with salt so that we will not put salt later)
1 onion
2 cloves garlic
2 tomatoes
1/2 cup of diced bell peppers (assorted color if available)
1 cup pineapple juice
1 tablespoon ginger juice ( shred the ginger then extract the juice)
1 tablespoons lime or calamansi juice

Procedure:
1. Saute the garlic, onion and tomatoes then, add all the ingredients except the fried fish, let simmer for few minutes.
2. Add the fish and simmer until the sauce thickens.
3. Serve hot.

Beef Eggplant


A delicious eggplant and beef recipe that I copied from my Chinese friend in Thailand, when I was in there, some few years ago, I always request this dish from my Chinese friend who is an expert of this, she said the original recipe for this is really spicy. In this recipe I omitted the chilli paste. You can put some if you are a hot and spicy food lover.

Ingredients:
200 grams beef ( cut thinly)
500 grams eggplant
4 cloves garlic
2 cups beef broth
2 tablespoons soy sauce
2 tablespoons oyster sauce

Procedure
1. Boil the beef until tender and cut thinly, then save the broth(sabaw) because we will be using it later.
2. Saute the garlic then add the beef and soy sauce simmer for few minutes then add the broth and bring to boil.
3. Once boiling, increase the heat then add the eggplant, stir until cooked.
4. Add the oyster sauce and simmer for 2 minutes then turn off the heat.
5.Sprinkle with spring onion and serve it hot.

If oyster sauce and hoisin sauce are not available just add more soy sauce and a little sugar.

Savory Whole Shrimps


I am glad that I am allergic to shrimps or else I already ate it all :D, this is very easy and simple to prepare, so for shrimps lover out there I am inviting you to try this recipe. I am sure that you will like it.

Ingredients:
500 grams shrimps
1 red bell pepper
3 cloves garlic
1 onion
1/2 cup celery ( optional)
2 tablespoons lime juice or calamansi juice
spring onion
salt and pepper to taste

Procedure:
1. Saute the garlicand the white part of the spring onion.
2. Add the shrimps, lime juice, salt and pepper then let simmer for a minute.
3. Add the rest of the ingredients then simmer until done.
4. Serve it hot with rice.

Sarciadong Tilapia


Sarciado is a common fish dish that has a thick sauce from tomatoes and beaten eggs. Truly simple and easy to cook. Try it.

Ingredients for 4 servings:
1 big fried Tilapia
2 med. size tomatoes (sliced)
1 med. size onion (sliced)
3 cloves garlic ( minced)
salt and pepper to taste
2 eggs( beaten)
 water as you desired
Spring onion


Procedure:
1. Saute the garlic, onion and tomatoes then add water and simmer until the tomatoes are soften.
3. Add the fried fish, salt and pepper to taste, then simmer for few minutes.
4. Add the beaten eggs, stirring constantly so that it will be distributed evenly, then add the spring onion and simmer until done.
5. Serve it hot.

Ginataang Sitaw at Talbos ng Kamote


I loved this dish from my mom, but since it is difficult to find fresh shredded coconut in my place, I based my coconut milk measurement from bottled coconut milk, if you are using fresh coconut and squeeze the milk from it, after the first squeezing, put another water and squeeze to obtain 2 cups of liquid, so instead of using pure water in cooking use that second batch of coconut milk for extra yummy flavor. :D

Ingredients:
Some dried fish
1 onion
1 tablespoons ginger strips
2 cups water
1 cup pure coconut milk
1 bale string beans ( sitaw)
1 bale sweet potato tops ( talbos ng kamote)

Procedure:
1. In a pot put the water, ginger, onion, and dried fish then allow to boil.
2. Once it is boiling, increase the heat then add the string beans, stirring until half cooked.
3. Add the sweet potato tops( talbos), then stir, after a minute add the pure coconut milk, stir until cooked..
4.Serve with a smile :).

Simple Palabok




Palabok is a popular snack item in the Philippines, one of my favorites :D.If I have ample time I will share m recipe for this without using the ready-mix sauce.

Ingredients:
200 grams bihon (boiled and drained)
2 hard boiled eggs
2 cans smoked tuna or 1 cup tinapa
1 onion
3 cloves garlic
1/2 cup mince spring onion
1 big packet Mama Sita's palabok mix (follow the instruction in the package)



Procedure:
1. Saute the garlic and onion then add the smoked fish, let simmer.
2. Add the dissolved Mama Sita's Palabok Mix then simmer until the sauce thickens, turn off the heat and set aside.

3. In a serving platter arrange all the ingredients then serve.

Stir Fried Beef with Vegetables


Stir fried beef with vegetable is a delightful beef dish that you will surely love. Savory sauce that you cant resist. Try it.

Ingredients:
250 grams beef ( cut thinly into bite size)
200 grams broccoli
200 grams cabbage
3 cloves garlic
1 onion
1 carrot
2 tablespoons soy sauce
2 tablespoons oyster sauce ( optional)
salt and pepper to taste
water ( depends how tender the beef is)

Procedure:
1. Saute the garlic and onion then add the beef, stir fry until it turn to brownish in color then add the soy sauce salt and pepper, simmer for few minutes.
2. Add water and continue simmering until tender.
3. Add carrots and broccoli then simmer for few minutes then add the cabbage and oyster sauce, simmer until done.
4. Serve hot.

Pritong Atay at Balumbalunan ( Fried Liver and Gizzard)

This is one of the street foods in Bangkok, Thailand, specially in Onut soi 10 where I lived some few years ago. Every time I passed by at the booth selling this, I walked slowly and observed them cooking it, I saw limes, flour so I already had an idea what they put, then I tried cooking it and that's it, simple and easy, here is how to do it.

Ingredients:
200 grams chicken liver
200 grams chicken gizzard
1 tablespoon lime or calamansi juice
salt and pepper
1/2 cup flour
Gizzard and Liver

Procedure:
1. Marinate the liver and gizzard with lime juice, salt and pepper for 30 minutes.
2. After 30 minutes roll over the flour for breading then deep fry until golden brown.
3. Serve hot.

Tortang Tuna


Torta has different meaning in the cooking world for example, torta in Spain is different from torta of Mexico, and some various countries. I love torta and I am referring to a Tagalog torta which is consist of egg, flour and the base ingredient for it. This one is made of tuna and I love this tortang tuna so much. Try it.

Ingredients:
1 can tuna
1 onion chopped finely
2 eggs
1/2 cup flour
salt and pepper to taste

Procedure:
1. Mix all the ingredients then chill or refrigerate for 30 minutes before frying.
2. Spoon a portion and deep fry until golden brown.
3. Serve hot.

Chocolate Muffins

I am not an expert at baking but I am craving for some muffins last week that's why I tried this one. I baked the simple recipe and just put some frosting to make it attractive :D I am not being biased but it tasted good. Enjoy baking my friends.

Ingredients:
1/2 cup of sugar
1/2 cup of cocoa powder
   1 cup all-purpose flour
   2 eggs
   4 tablespoons butter
  150 ml milk
 1 tablespoon of baking powder


Proceure:
1. Sift the chocolate powder, baking powder and flour then set aside.
2. Mix the eggs, sugar, milk and butter then mix very well for 2-3 minutes.
3. Then slowly add the sifted ingredients. ( flour, baking powder and chocolate powder) after mixing it very well, pour n a muffin cups.
4. Preheat the oven at 180 degrees celcius then bake for 20 minutes or until done.
5. Let it cool then decorate and serve.
