Simple Chicken Menudo



Menudo is not only a name of a dish in Philippines but also in Mexico, although in Mexico they used tripe, in Philippines they used chicken meat, pork or beef. I made simple menudo today, simple in the sense that I did not put, bell pepper, onion, raisins and liver spread. As I have said I want to make cooking easy and simple for everybody. I omitted some ingredients but it doesn’t affect the real taste of the recipe. That is my way of cooking.

Ingredients:

1/2 kilo chicken breast( cut into bite size)
3/4  cup tomato sauce
1 big potato
1 big carrot
1 small onion
2 tablespoons soy sauce
2 pieces chicken hotdog ( sliced)
1/2 cup water ( add if necessary)
3 cloves garlic
spring or green onions for garnishing
salt and pepper to taste

Procedure:
1. Saute the garlic and the onion,then add the meat, simmer for few minutes.
2. Add the soy sauce, tomato sauce and pepper,simmer for 3 minutes then  add the water and let it boil.
3. Add the potato and carrot cover until it is cook.
4. Add the chicken hotdog then simmer for a minute, add salt and pepper to taste simmer then turn off the heat.
5. Garnish with spring onion then serve.


Nilagang Baboy-Pork Stew


Pork Stew or nilagang baboy as Filipinos called it, is one of the popular dishes  in Philippines, aside from it is easy to cook, it is also delicious. The main ingredients are water and pork, although additional ingredients varied from one region to another. In some regions they do not put carrots in pork stew (nilagang baboy). It is also nice with lemon grass. Here is my style of cooking it.

Ingredients:
1/2 kilo pork
1 carrot ( sliced)
1 small onion ( quartered)
1/4 kilo Chinese cabbage or bok choy
1/2 teaspoon whole black pepper
5 cups water
salt to taste

Procedure:
1. In a pot put the meat, water, black pepper and onion.
2. Let it boil and stirring occasionally, just add water if necessary
3. If the meat is already tender add the carrots let it simmer for 3 minutes
4. Add the Chinese cabbage and cayenne or jalapeno chili peppers
5. Dash some salt to taste. Serve it with rice.

Chicken Ramen





Ramen is a Japanese noodle dish.

I love to make this during cold days.

Ingredients:
2 packs of instant ramen noodles ( do not use the flavoring)
spring onion
1 carrot ( diced)
1/4 kilo chicken breast
2 hard boiled eggs
3 cloves of garlic crushed
2 cm ginger
salt and pepper to taste

Procedure:
1. Boil the chicken breast with 6 cups of water, when the meat is cooked separate it from the broth= sliced the chicken breast and set aside
2. In a pan saute the ginger and garlic, add the chicken broth, cover until it boils.
3. Add the carrots, simmer for few minutes.
4. After simmering the carrots remove it from the broth and set aside
5. Cook the noodles in the broth until done. Season according to your taste.
6. Remove the noodles put into a bowl then top it with the sliced chicken breast, diced carrots, sliced hard boiled egg, spring onion and pour some broth then serve.

Braised chicken Gizzard


I cooked this today ( Sept. 28, 2011).  My friend (Vince) and I talked about exotic food a while ago, and I told him that the gizzard of the chicken is delicious, if you know how to cook it. It does not smell odd at all. I told him that I will cook it and post it here lol. So to everyone there who wants to have a little food adventure, here is the one that you can try.

Ingredients:
1/2 kl. gizzard
3 cloves garlic
2 tablespoons soy sauce
2 tablespoons ginger strips
1 small bell pepper
spring onion for garnishing

Procedure:
1. Saute the ginger and garlic
2. Add the gizzard, braise it for few minutes.
3. Add the soy sauce, and lower the heat, cover it.
4. Simmer until the gizzard is tender. ( approximately 15 minutes)
5. When it is almost done add the bell pepper.
6. Serve it hot and garnish with spring onion.

Buttermilk Chicken Fillet


 From the usual fried chicken that I always cook for special occasions, I tried a new flavor for it, by using buttermilk as a marinade. I saw this recipe from an internet and I also want to share to all of you.

Ingredients:
1 kl chicken fillet ( breast then just slice it into fillet)
1 glass butter milk
4 cloves garlic ( crushed)
1 lemon ( or 5 calamansi)
1 small size onion ( chopped)
2tablespoons soy sauce
2 glasses bread crumbs ( for breading)
salt and ground pepper to taste

Procedure:
1. Put the lemon, soy sauce, salt and pepper to the chicken fillet( Mix it well) Let it stand for 10 minutes
2. After 10 minutes pour in the buttermilk and marinate the chicken for 30 minutes.
3.After 30 minutes,  remove it from the marinade and set aside.
4. Roll the chicken fillet on the breadcrumbs.
5. Deep fry it until golden brown and serve it with your favorite side dish.

Tips: If the breadcrumbs wont stick well, just beat one egg and mix it well with the chicken before breading it.

Green beans with pork


This recipe is one of the favorites in our dining table. It is yummy and easy to cook. I like it crunchy. Overcooking it, will lost its taste.


Ingredients:
1/2 kilo green beans ( cut about 2 inches long)
1/4 kilo pork
2 tablespoons soy sauce
1 small size onion
3 cloves garlic


Procedure:
1.Put the pork in the pan until the oil comes out, wait until it's brownish or toasted. (Set aside)
2. In the same pan, saute the garlic and onion.
3. Add the toasted meat and soy sauce, increase the heat so that when we put the beans it will not turn to greyish.
4. Put the green beans and stir it well. Maintain the high heat to maintain the green color, continue stirring until cooked.
5.Serve it hot.


Simple Spaghetti with tomato sauce

Spaghetti with tomato sauce is the most common dish of spaghetti, although it's an Italian dish, but people in different countries like it. Cooking it with a touch of their  cuisine. And this is also my family's style in cooking it.

Ingredients:

1 kilo spaghetti ( cooked according to its packaging procedure)
1/2 kilo ground beef
4 packs tomato sauce ( 250g)
1/2 cup evaporated milk
1/4 cup white sugar
grated cheese for toppings
1/4 cup soy sauce
5 cloves garlic
1 small size onion
1/4 kilo hotdog


Procedure:
1. Saute garlic, then the onion
2. Add the meat, soy sauce and tomato sauce, let it simmer for few minutes
3. Add the sugar and hotdog, mix it well and simmer again for another few minutes.
4.  Lastly add the milk and let it boil for few seconds and it's done.
5. You can mix the pasta and the sauce together or just top the sauce on the pasta and sprinkle it with cheese.
I cooked this on June 24, 2011.

Chicken Lollipops


My favorite part of the chicken is the wingette or drumette, the base section o the wings, this is the best part to make a chicken lollipop

Ingredients:
1 kilo chicken wingettes
2 cups flour ( for breading)
4 cloves garlic ( minced)
salt and pepper to taste
1 piece egg

Procedure:
1. Pull the flesh up with the skin and mold into a lollipop.


2. Marinate the lollipops with garlic, salt and pepper for 30 minutes. After 30 minutes remove from the marinade.Set Aside.
3. In a bowl beat the egg, dip the lollipops and roll it over the flour for breading or the bread crumbs (panco)

4. Fry it until golden brown and serve it hot.

 

The darker ones were coated with Japanese crumbs, the lighter one is with flour.

Chicken Curry


As far as I can remember the first time I ate chicken curry, I do not like it. All I can taste is a strong salty taste and the odor was so strong for me, I was 10 years old then. When my sister cooked vegetable curry, I liked it a lot, I appreciate the taste of the curry, so I thought maybe the chicken curry is yummier because it is meat, but why the one I tasted before was not yummy? Maybe the one who cooked it do not know how? When I was in college I tried chicken curry at the school canteen and it is yummy. Since then, I like chicken curry a lot. I read in the internet how to do it then I tried cooking it and as time goes by I learned, I can say that my chicken curry always tastes good:)


Ingredients:

1 kl. chicken (sliced to your desired size)
2 pcs big potatoes
1 pc. big carrot
1 tablespoon curry powder
2 cups coconut milk
1 bell pepper
4 cloves garlic
1 small size onion
100 grams ginger
salt to taste
chicken cube(optional)

Procedure:
1. Saute the ginger, then the garlic and the onion.
2. Put the curry powder and saute for few seconds to extract the aroma from it.
3. Put the chicken and salt then cover and let it boil before stirring it.
4. Let it boil for few minutes over low heat ( do not add water, because the chicken has its own juice).
5. Add the potatoes and carrots, simmer for few minutes
6. If the chicken meat is already cook, add the belle pepper and chicken cube.
7. Simmer for few minutes then add the coconut milk, cover it until it is done.
8. Serve with love and a smile:)

Mashed Jacket Potato


There are lots of things you can do with potatoes. One of the most popular is the mashed potato. I made this one (mashed Jacket Potato) to be more presentable in serving. Here is how you can do it.

Ingredients:

3 big potatoes
2 tablespoons butter
a dash of salt and pepper

Procedure:
1. Microwave the potatoes for 15 minutes( let it cool)
2. Cut into halves and remove from the skin
3. Mash it well with the rest of the ingredients.
4. Spoon the mixture back into the potato skins.
5. Serve it :)

if microwave is not available, just boil it until its cook, while boiling prick it with fork so that it will not be deformed.
