Pochero A La Pobre

Pochero from the Luzon region of the Philippines is always rich with tomato sauce, this version looked like it has tomato sauce but the reality is, N-O-N-E, yes none. This is a la pobre version so I cooked it in a very affordable way. Here is the recipe.

Ingredients for 5 servings:
1/2 kilo pork
2 ripe cooking bananas ( sliced and fried)
2 potatoes (sliced and fried)
1 Carrot (sliced and Fried)
1/2 cup green peas
1 tomato
3 cloves garlic
1/2 bell pepper
1 teaspoon annatto powder ( atsuete)
2 cups water
salt and pepper to taste


 Procedure:
1. Saute the garlic, onion and tomato then add annatto powder and continue to saute for 30 seconds then add the pork and continue to saute for 2 minutes.
2. Add the water and simmer until the pork is tender, then add the rest of the ingredients and simmer until done.
Serve it hot.

How to make Chili Sauce




Do you love hot sauces? If yes then this one is for you. Try this recipe and let me know.

Ingredients:
1/4 kilo Cayenne pepper /siling haba
2 tablespoons bird's eye pepper or siling labuyo
2 tablespoons white sugar( or according to your taste)
1.5 tablespoon salt ( or according to your taste)
5 cloves garlic
500ml Vinegar
1 tablespoons cornstarch/cornflour



Procedure:
1. Chop all the chilli peppers then combine all the ingredients in a pan then bring to a boil, allow to boil for 10 minutes stirring constantly over low heat.

2.  After boiling allow to cool, and put in a blender, then blend well until smooth.
3. Transfer in bottle containers and refrigerate to last longer. Enjoy a hot chilli sauce every time you want it :-).

Mely's Kitchen Breaded Pork Chop

My way of cooking my breaded pork chop, easy way and very quick to fry ( for me ) :-).

Ingredients:
1 kilo pork chop
1 cup bread crumbs
1 beaten egg
salt and pepper to taste
4 cloves garlic crushed
1 onion
3 tablespoons lemon or calamansi Juice

Procedure:
1. Put the water, pork chop, garlic, onion and salt and pepper in the pot and boil it until the pork chops are tender.
2. Remove from water, then sprinkle with lemon juice, salt and pepper then dip in the beaten egg then roll over the bread crumbs.

3. Deep fry until golden brown.

4. Serve it hot.

Turon


Turon is one of the famous snacks in Philippines. You can see it easily on the streets ( in our town) together with other snack items. 

Ingredients:
12 spring roll wrappers
6 ripe banana cut into halves
1/2 cup sugar
oil for frying

Procedure
1. Slice the banana into halves or to your desired size
2. Put it on a spring roll wrapper.
3. Wrap it properly and deep fry, until it's cooked.Set aside.
4. Melt the sugar with 1 teaspoon oil, when melted, pour evenly on top of the turon.
5. Serve it hot with your favorite drinks.

Most of the turon has jackfruit inside. But in my place it's hard to find.

This one, I just wrapped the banana without sugar, so after I cooked it i melted a sugar and topped it on my turon. :) If you like it this way, just melt the sugar without putting any liquid in it.

Fruity Drink

The scorching heat of the sun really made me crave for a refreshing drink now, but it not a soft drink, that's why I made this nutritious refreshing drink. Perfect cooler, it tasted lighter than a lemonade but the flavor is awesome! Love ko ito!

Ingredients:
1 apple ( Sliced)
1 kiwi (sliced)
1/4 cup lemon or calamnsi juice
1/2 cup honey or sugar
1/2 part of mango ( sliced)
5 cups water or more

Procedure :
1. Put the water, lemon juice and honey in a jar then mix well.
2. Add all the ingredients and mix well then refrigerate for few hours before serving.
Enjoy your drink!

Palitaw with Muscovado


I used muscovado sugar because it is healthier than the refined or white sugar, here is the nutritional value per 100 grams.

Mineral content of muscovado sugar (per 100 g):
Total mineral salts 740 mg max.
Phosphorus (P) 3.9 mg max.
Calcium (Ca) 85 mg max.
Magnesium (Mg) 23 mg max.
Potassium (K) 100 mg max.
Iron (Fe) 1.3 mg max.

 Ingredients:
3 cups glutinous rice powder
1 1/2 cup water
3/4 cup grated coconut
1/2 cup muscovado( or you can add according to your taste)
1/4 cup toasted sesame seeds

Procedure:
1. Mix the water and glutinous rice slowly,  until you form a dough.
2. Spoon a portion from the dough and form it into an oval shape.

3. In a pot boil a water, once boiling, drop some of the raw palitaw.
4. Put by batches the oval formed glutinous rice in the boiling water and wait until it floats, then remove from the water and drain.

5. Mix the muscovado, toasted sesame seeds and grated coconut then roll over the palitaw and serve it.




Meatless Spaghetti


No meat spaghetti yet yummy.

Ingredients for 8 servings:
1/2 kilo spaghetti (cook according to its packaging instruction)
2 cups tomato sauce
1/2 cup Nestle Cream
4 cloves garlic
1 onion
3/4 cup corn
1/2 cup green peas
1 bell pepper ( mince)
1 tablespoon sugar or to taste
salt and pepper to taste


Procedure:
1. Saute the garlic and onion then add the tomato sauce and simmer for a minute.
2. Add the corn, green peas and bell pepper then simmer for another minute.
3. Add the rest of th ingredients then simmer until done.
4. Pour over the spaghetti or mix well then serve it hot.

You can add diced carrots, mushrooms or any vegetables that you want.

Homemade Sweet and Sour Fish

A perfect flavor combination, sweet and sour is always a tempting dish for me. I cooked this for my American friends ( Mary and Danilo), they both loved it:-).

Ingredients:
1 kilo any fish that you like ( I used salmon for this recipe) Fried
1 cup pineapple chunks
2 tomatoes
1/2 cup pineapple juice
1 small size bell pepper
1 small size carrots
1/2 cup vinegar
2 tablespoons sugar or according to your taste
2 tablespoons ginger ( strips)
3 cloves garlic
1 small size onion
3/4 cup water
1 teaspoon cornstarch dissolved in 1/4 cup water




Procedure:

1. Saute ginger and garlic then add the onion and tomatoes continue sauteing until tender..
2. Put vinegar, pineapple juice and sugar,  mix thoroughly, then add the water and let it boil.
3. Put the carrots, tomato chunks and bell pepper then simmer for a minute then add the fish and simmer for 3 minutes.
4. Increase the heat then add the cornstarch mixture and simmer for a minute then turn off the heat.
5. Serve it hot with rice :)

Giniling A La Caldereta

You can make a lot of dishes using ground meat, so deviate from the usual meatballs and try this recipe with a twist. This is really yummy and the cream helped in neutralizing the flavor, making you to crave for more.

Ingredients:
1/2 kilo ground pork or beef
2 potatoes (diced)
1 carrot ( diced)
1/2 cup pineapple (diced)
1 onion
3 cloves garlic
3 hotdog ( diced)
bell pepper ( diced)
1 cup tomato sauce
1/2 cup Nestle cream
Salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the ground meat, allow to simmer until the pinkish color is gone.
2. Add the tomato sauce then allow to simmer for 2 minutes.
3. Add the carrots and potatoes then stir and simmer until half cooked.
4. Add the bell pepper,pineapple, hotdog and Nestle cream then simmer until done, add salt and pepper to taste then turn off the heat.
5. Garnish then serve.
