Garlic Crayfish

 Have you tried crayfish before? When I tasted it, I said "wow this is yummier than the shrimps". :-).
This is my simple recipe for it. I served this for my friends.

Ingredients:
1/2 kilo crayfish
8 cloves garlic ( minced)
1 tablespoon lemon or calamansi
salt and pepper to taste
Spring onion for garnishing



Procedure:

1. Saute the garlic until brownish then add the crayfish, cover and simmer for 5 minutes over medium heat.
2.Add the lemon juice, salt and pepper to taste, then simmer over low heat stirring every now and then until done.
3. Sprinkle with spring onion then serve it hot.

Chicken A La King (Filipino Style)



 Chicken a la king is a chicken dish consist of cubed chicken in a creamy sauce, this can be cooked with or without sherry or white one. I cooked this for my Filipino friends so I omitted the wine since wine is not common in Philippine cuisine. I added some pineapple for a tangy taste since I omitted the wine. An excellent dish according to my friends who ate this.

Ingredients for 5 servings:
1/2 kilo boneless chicken breast ( cubes)
1 cup sliced mushrooms
1 green bell pepper (diced)
1 red bell pepper ( diced)
1/4 cup flour
1 onion
1 cup water
1 cup fresh or evaporated milk
1 cup Nestle cream
1 cup pineapple (optional)
salt and pepper to taste

Procedure:
1. Saute the onion then add the chicken then pan fry it until brownish then remove the chicken and set aside.
2. Add the mushrooms and bell peppers then stir until soften, add the flour and stir for 2 minutes then add the water and milk then continue to simmer until almost boiling.
3. Add the chicken, salt and pepper to taste then simmer until everything is cooked.
4. Add the Nestle cream then simmer for a minute and turn off the heat.
5. Serve hot with rice or bread.

Seafood Delight Noodles

I cooked this for a special woman because it is her 31rst birthday, she and her daughter loved it so much.

Ingredients for 4 servings:
2 packets instant noodles ( boiled and drained, do not include the flavoring, throw it :-) )
3 cloves garlic
1/2 onion
3 crab sticks ( cut into halves)
1/4 kilo shrimps
1 crab
1/2 cup water
1/2 cup spring onion (minced)
2 tablespoons soy sauce
salt and pepper to taste

Procedure:
1.Saute the garlic and onion then add the crab, simmer until it is cooked then remove it.
2. Add the shrimps and simmer until half cooked, then add the crab sticks and soy sauce then simmer for 2 minutes.
3. Add the water, salt and pepper then bring to a boil over high heat, then add the noodles and stir until well coted then turn off the heat.
4. Sprinkle with spring onion, arrange in a platter and do not forget to put the crab, enjoy!

Crispy Pork Leg ( Crispy Pata)


Crispy pork leg or crispy pata is one of my family's favorite.


Ingredients:
1 pork leg ( pata)
1 cup Sprite Softdrink
1 teaspoon ground pepper
1 lemon or 5 calamansi
garlic
salt
water ( level with the pork leg)


Procedure:
1. In a pot put the pork leg, garlic and salt then boil the pork leg until tender or pressure cook the pork leg for 10 minutes. When it is already cooked, removed it and set aside.
2. Before frying pour in the sprite evenly on the pork leg, sprinkle with lemon or calamnsi juice and ground pepper.
3. Deep fry it until golden brown and crispy.
4. Serve it with your desired sauce
Note: Be careful while frying, cover it, cos the oil really burst! When it is almost done sprinkle with water to make it really crispy.

Garlic Crab

Very quick and easy to cook, yet the taste is superb! Try it.

Ingredients:
1/2 kilo crab
1 head garlic ( minced)
1 tablespoon lemon or calamansi
salt and pepper to taste
1/4 cup mince spring onion


Procedure:
1. Saute the garlic until brownish then add the crab and simmer until the color turned deep orange.
2.Add the lemon juice, salt and pepper to taste, then simmer for 10 minutes over low heat stirring every now and then, turn off the heat and sprinkle the spring onion.
3. Serve it hot.

Ginataang Talbos ng Sayote

Maybe this dish is unusual to you, but I can say that this is very yummy and full of fiber, therefore it is good for our digestion, have some and see the result :-). I used one whole grated coconut for this recipe.

Ingredients:
1/2 kilo talbos ng sayote
1/4 kilo shrimps (de-shelled and cleaned)
1/2 cup thick coconut milk ( kakang gata)
1 1/2 thin coconut milk ( ikalawang piga)
1/2 onion
1 cloves garlic
thumb size Ginger
Cleaned talbos ng sayote

Procedure:
1. In a pot put the thin coconut milk, shrimps, ginger, onion and salt the bring to a boil stirring constantly.

2. Once boiling add the sayote tops and stir until fully coated with the coconut milk then simmer until cooked.
3. Add the thick coconut milk and simmer until done. Serve it hot.

Baked Pinatisang Manok


Fish sauce (patis) is a common condiment in the National Capital region of the Philippines. At first I do not like fish sauce because of its strong smell, but when I tasted it, I loved it. I love to use it in my cooking because it adds flavor to my food. Yummy!

Ingredients:
1/2 kilo chicken thigh ( cut into serving pieces)
3 tablespoons fish sauce ( patis)
2 tablespoons lemon or calamansi juice
1/4 teaspoon ground pepper

Procedure:
1. In a mixing bowl combine all the ingredients and mix well, marinate for 2 hours.
2. Preheat the oven at 250 degrees celsius then bake the chicken for 20 minutes.
3. Remove from the oven then serve with your favorite dipping sauce.
