Tilapia with Thick Sauce

A delicious fried tilapia in a thick tangy sauce. Excellent!

Ingredients:
1 big fried Tilapia
1 tablespoon oyster sauce
1/2 cup tomato sauce
2 tablespoons honey ( can be replaced with sugar according to your taste)
3 cloves garlic
1/2 cup water
salt and pepper to taste
spring onion for garnishing

Procedure:
1.To make a sauce, in a  bowl combine the oyster sauce, water, tomato sauce, honey, salt and pepper then set aside.
2. Saute the garlic, then put the sauce mixture, let simmer for a minute, then add the fried tilapia.
3. Let simmer for few minutes, then increase the heat to allow some liquid to evaporate to thicken the sauce, after attaining the texture of the sauce turn off the heat.
4. Sprinkle with spring onion then serve with rice.

I admire the nutrients from Quinoa, that is why I'm in love with this food. A good replacement for rice, and you can cook it the way you cook the rice. I will be posting more recipes for this soon. Yummy!

It is easy how to cook quinoa, unlike the rice, we do not need to wash quinoa.
I always use this measurement in cooking:
Raw Quinoa
1 cup quinoa
1 1/2 cup water
Put the quinoa and water in a cooking pot  then bring to a boil, once boiling just lower the heat and allow to simmer until the water is gone, then continue to cook over low heat until done. You can serve it as it is, or you can have it with mixed vegetables. Enjoy a healthy meal.

Pork Binagoongan A La Hamonado

A combination of my two favorite dishes( binagoongan and hamonado), I tried experimenting it and it came out fine, that is why I want to share it with you :-).

Ingredients for 4 servings:
1/2 kilo pork belly
2 tablespoons shrimp paste ( be careful with the saltiness of the bagoong that you are going to use)
3 cloves garlic
1 cup pineapple chunks
1 onion
3/4 cup water
1/2 cup pineapple juice


Procedure:
1.Saute the garlic and onion then add the shrimp paste and continue to saute for a minute.
2. Add the pork and pineapple juice then simmer for 2 minutes then add the water and let simmer until tender.
3. Add the pineapple and simmer for 3 minutes and if it is still has a lot of water increase the heat to high and let the water evaporate to attain a saucy texture, turn off the heat then serve hot with rice.

Pata Na Sinigang sa Calamansi


Sinigang is one of my favorite dishes, and I love all the variants of it even this one, with calamansi, it is still yummy.

Ingredients:
1 kilo pata ( pork leg)
2 tomatoes
1 onion
1 bunch of spinach or kangkong
1/2 cup calamansi Juice ( add if necessary)
6 cups water ( add if needed)
salt and pepper to taste

Procedure:
1. In a pot over medium heat put the pata, tomatoes, and onion then cover until the natural juice from the meat will come out. Once the pinkish color of the meat is gone, put salt and pepper then allow to simmer for 5 minutes.
2. Add water then bring to a boil, once boiling let simmer until the meat is tender.
3. Add the spinach or kangkong, add salt and pepper if needed let simmer until the vegetable is cooked..
4. Add the calamansi juice and simmer for a minute then turn off the heat.
5. Serve it hot.

Sauted Tomatoes

A rich tomato sauce that goes well with any fried meat, fish and even just partner it with rice. Yummy!

Ingredients:
1 kilo tomatoes (sliced)
3 cloves garlic
1/2 cup oil ( best if olive oil)
salt and pepper to taste


Procedure:
1. Heat the oil then saute the garlic, then add the tomatoes.
2. Let simmer for few minutes until the texture is like a chunky tomato sauce.
3. Add salt and pepper before turning off the heat then simmer for a minute and turn off the heat. You can keep it for few weeks inside a refrigerator and use it anytime as a dipping sauce or an appetizer.


Tomato Fried Rice


A fried rice loaded with tomatoes, making the dish so tempting and appetizing.Try it.

Ingredients for 2 servings:
 2 cups cooked rice
5 tomatoes
3 cloves garlic ( crushed)
salt and pepper to taste
1/4 cup spring onion

Procedure:
1. Saute the garlic and tomatoes for 5 minutes or until the tomatoes are soft, then add the rice and stir very well to mix evenly.
2.Add salt and pepper and continue to stir fry until done, then sprinkle the spring onion.
3. Serve it hot with your favorite dish or just fried egg.

Minatamis na Saba

An all time favorite in our clan, since we have a banana farm. Ripe saba is always abundant that is why we always have this and everybody in the family loves it. Here is the simple way of cooking it.

Ingredients for 3 servings:
6 pieces banana ( saba)
3/4 cup white sugar
1 1/2  cup water

Procedure:
1.Put the sugar in a pan then melt it until brownish in color , then put the water and let boil for a minute.
2. Add the banana and let simmer over low heat and flip each side every now and then for an even brownish color of the sugar until cooked.

3. When the cooking is almost done, increase the heat and let some brine evaporate, making the banana looked liked caramelized and not soupy.
 Serve it anytime.



Pastillas Pops





An affordable treat for your kids to enjoy or even a good item for your party's dessert. Try it.

Ingredients for 18-20 pieces:
1 1/4 cup  full cream milk powder
1/2 cup condensed milk

Procedure:
1. Combine the ingredients and mix well until you form a dough like mixture.

 2. Spoon a portion and form it into small balls by using the palms of your hands.
3.  After this process, put a toothpick in each ball then serve it or you can dip it in a chocolate syrup or melted chocolate and then dip it in different colors of sprinkles.


4. Serve it with love :-).


You can also wrap it with water cellophane.

Beef Shank with Mushrooms


A rich tomato sauce based sauce loaded with mushrooms and a tender beef shank is a really feast on the table.

Ingredients for 3-4 servings
2 slices of beef shanks
1 cup mushrooms
2 cups tomato sauce
1 carrot
3 cloves garlic
2 cups water
1 onion
1/4 teaspoon crushed black pepper
salt 

Procedure:
1. Saute the garlic and onion then add the beef shank and simmer until the pinkish color is gone.
2. Add the black pepper and tomato sauce, then simmer for 10 minutes over medium heat stirring occasionally.
3.  Add the water and salt then bring to a boil, once boiling simmer the meat until tender.
4. Add the carrot and mushrooms then simmer until done.
5. Serve it hot with rice.

Sliced Crispy Pata





I have some friends who will be visiting me today, that's why I prepared this dish for then, it should be whole pork leg but I do not have a big pot to cook it so I let the butcher cut it for me. We all enjoyed it during our dinner.

Ingredients:
1 Pork leg ( cut to your desired size)
1/2 teaspoon crushed black pepper
4 cloves garlic (crushed)
salt to to taste
water that is enough to cook the pork leg

Procedure:
1. In a pot put all the ingredients and cook until tender, if you have pressure cooker you can cook it for 8-10 minutes. When it is already tender, remove from water and refrigerate or chill for 30 minutes.


 2. After chilling, deep fry until golden brown or until the skin is crispy.


3. Serve it hot.
