Sinigang sa Bayabas


There are many variations of sinigang, and today I will be sharing my version of guava sinigang or sinigang sa bayabas, mmmmmm the aroma of this dish while you are stewing make your mouth water. Once you will eat this, it will make you want for more. Just like other sinigang ( sinigang sa sampalok, sinigang sa miso, sinigang sa kamatis, etc) this guava sinigang is truly delicious and 100 % original Filipino food. It's sad because milk fish ( bangus ) is not available here, that's the best fish that we can use for this. :) Try it!

Ingredients:
1 regular size tilapia or any fish that you'd like to use
8 okra pods
6 pieces guava ( cut into wedges)
1 onion
1 bundle kangkong or any green leafy vegetables
3 yams or gabi ( cut into wedges)
3 pieces siling haba
salt to taste

Procedure:
1. Boil the guavas with 6 cups of water, continue to boil until very tender, then mash it with fork( leave some slices for serving later,) drain and set aside.
2. Meanwhile , boil the yam with 2 cups of water and salt, when it is tender add the fish and simmer until cooked, then add the okra and simmer for 2 minutes, then add the green leaves and siling haba then simmer until done.
3. Pour in the drained guava soup and let simmer for few minutes allowing all the flavors of the ingredients to infuse. Add salt if necessary.
4. Serve when it is done.

You can add more vegetables for this recipe, like string beans and eggplants, and you can squeeze some calamansi to enhance the sour taste.

Ginger Stewed Fish


I planned to fry this fish but somebody suggested not to cook it in oil for health reasons, so I decided to cook it this way, purely from my imagination, but I was nervous because I do not know if the person whom I will be serving this fish will like it or not, because he is a very good cook, but after eating, he appreciated the taste and said it was yummy! :D.

Ingredients:
1 whole fish
1 1/2 tablespoon ginger juice (shred the ginger then extract the juice)
1 tablespoon lime juice
salt and pepper to taste
onion
4 stalks spring onion
1/2 cup water

Procedure:
1. Clean the fish properly and put slits in the middle so that it can absorb the flavor.
2. Put in a cooking pan, sprinkle with the ginger and lime juices on both sides, then put the onion and the white parts of the spring onion, salt and pepper then cook over medium heat allow to simmer until the fish produces its own juice. Then cook in a low heat for 15 minutes or more, allowing all the flavors of the spices to infuse with the fish. Add the water and simmer for 5 minutes.
3. When it is done add the spring onion and some green leafy vegetables for garnishing.
4. Serve it hot.

Ground Beef Fried Rice


A complete meal made from my leftover rice, simple and easy to prepare and a good way to save your leftover rice from going into the bin. All we need are the following:

Ingredients:
    3 cups leftover rice ( bahaw)
    1 onion
    1/2 cup ground beef
    2 tablespoons soy sauce
    2 beaten eggs
    2 beef hotdogs (sliced)
     salt and pepper to taste
    chopped spring onion

Procedure:
1. Saute the onion over medium heat until brownish then add the ground beef, simmer until cooked.
2. Add soy sauce, salt and pepper to taste then simmer for a minute then add the rice, continue stirring until done.
3. For best result scrambled the egg in a separate pan then chop and pour in the fried rice, then mix well, and sprinkle with chopped spring onion then serve hot.

Chilli Hot Shrimps


A peppery hot shrimps dish that will boost your appetite. I copied this recipe from an oriental cook book that I borrowed from my friend. I made some changes for this recipe, like I replaced the chili paste with powdered cayenne pepper, to all shrimps lovers out there I am very happy to recommend this recipe for you to try, it is really yummy!

Ingredients:
500 grams de-shelled and cleaned shrimps
2 tablespoon oyster sauce
4 cloves garlic
1/4 cup water
1 teaspoon ginger juice ( shred the ginger and remove the juice)
1/4 teaspoon cayenne powder
chopped green bell pepper for garnishing or spring onion
salt and pepper to taste

Procedure:
1. Saute the garlic then add the shrimps, ginger juice, cayenne powder then simmer
2. Add the water and let simmer, then add the oyster sauce, salt and pepper then stir  until done.
3. Garnish with bell pepper or spring onion then serve.



Sinampalukang Isda


This dish is closely similar to "sinigang" , but simpler and uses only few ingredients, but the taste is almost the same, this one is lighter than the sinigang but one thing is for sure, both are delicious! :D

Ingredients:
2 slices fried fish ( any fish can be used)
1 tablespoons tamarind powder ( you can add more if you like it more sour)
1 big tomato
1/2 bulb onion
3 cups rice washing or water
1/4 kilo Pechay
siling haba
salt to taste or patis

Procedure:
1.Put the rice washing  in a pot, tomato  and onion then allow to boil.
2. Add the fried fish then simmer for few minutes, add pechay, salt or fish sauce to taste.
3. Add the pechay and siling haba, simmer until done.
4. Serve it hot.

Avocado and Mango Smoothie


We are living very near to the ice cream parlor, so everyday is a struggle for me :D, whenever I pass their shop, oh my mouth is watering while looking at the very tempting pictures of ice cream outside.  It's not good to have it since I want to lose weight, so to fight my cravings today, I made some smoothies and it satisfied my sweet tooth. This recipe may yield 3 servings.

Ingredients:
100 grams avocado
1/2 mango
12 ice cubes
2 drops of sweetener or you can replace this with sugar according to your taste
1/4 cup water

Procedure:
1. Slice the fruits and put in the blender together with the water and sweetener then liquify it until became smooth.
2. Add the ice then blend well until done.
3. Serve as a good refreshing treat :) .

Beef Curry

I cooked this during a special event in the church, I am not being biased but everybody loved it :D. Instead of using a coconut milk I replaced it with all purpose cream, making the sauce thick, creamy and so delicious.Try this.

Ingredients:
1 kl beef
1/2 kilo carrots
1/2 kilo potatoes
3 tablespoons ginger strips
3 tablespoons curry powder
1 bell pepper
1 onion
500 ml nestle cream or light cream
3 cloves garlic
salt and pepper to taste
water ( enough to make the beef tender)

Procedure:
1. Saute the ginger and garlic until brownish, then add the onion and curry powder, once done, add the beef then simmer for 10  minutes to infuse the curry flavor.
2. Add water and let boil until tender.
3. If it is already tender add the carrots, potatoes and bell pepper then simmer until done.
4. Add the all purpose cream, salt and pepper to taste, simmer for 2 minutes and tun off the heat.
5. Serve it hot.

Ginisang Gulay


This is one of my favorite dishes  since I was young ginisang gulay or sauted mixed vegetables, because fresh vegetables are abundant in our farm, but for green leaves we have swamp cabbage ( kangkong) and not watercress, but here in my place watercress is all I can have because they do no have kangkong at the market. I still enjoy this dish even if I can not get the original ingredients.

Ingredients:
1/2 kilo pork
1/2 kilo squash
6 pieces scarlet eggplants
10 pieces okra
1 bunch of watercress
3 tablespoons soy sauce
salt and pepper to taste
1 onion
3 cloves garlic
2 cups water

Procedure:
1. Saute the garlic and onion then add the pork and braise it, then simmer for few minutes.
2. Add the soy sauce and simmer for a minute then add the water and bring to boil.
3. Add the squash and simmer for 2 minutes, then add the eggplant and okra, mix well and simmer until tender.
4. Add the watercress, salt and pepper to taste, simmer until cooked.
5. Serve hot.



Ginataang Alimango


Crab stewed in coconut milk ( Ginataang Alimango) is a delicious dish that will boost your appetite, so make sure that you have plenty of rice if your viand is this :-). Thanks Nay Angelina M.

Ingredients:
2 fat crabs
2 cups pure coconut milk
ginger
salt to taste

Procedure:

1. In a pot put the ginger, crab, and 1 cup of coconut milk then allow it to simmer over medium heat, until it is cooked, then cut it into halves and continue simmering until the crab meat fully absorbed the coconut flavor.
2. Add the coconut milk then simmer for a minute, add salt if necessary then turn off the heat.
3. Serve hot with rice.

Hot & Spicy Fried Chicken


Mmmmmmmm a delicious hot and spicy fried chicken, for this recipe you can adjust the hot chili taste according to your desired taste, if you want a numbing flavor then add more and enjoy your food adventure :D .


Ingredients:
1 whole chicken cut into serving sizes
2 cups flour
1/4 cup fish sauce
4 tablespoons lime or calamansi juice
chili powder according to your taste
 ground  pepper 
1/4 teaspoon garlic powder


Procedure:
1. Marinate the chicken with lime juice, fish sauce,garlic powder,  chili powder and pepper as needed. 

2. After few hours,  mix well and roll over the flour and deep fry in a hot oil until golden brown.
3. Serve it hot.
