Chicken Humba


Humba is a popular pork dish, but do you know that chicken can be cooked as humba too? Here is the recipe if you wanna try. :-).

Ingredient:
1/2 kilo chicken
1/4 cup soy sauce
1/2 cup pineapple juice
1/4 teaspoon ground pepper
3 tablespoons vinegar
3 clove garlic(crushed)
1  onion
1 tablespoon brown sugar
1cup banana blossoms (bulaklak ng saging)

Procedure:
1. In a pot put all the ingredients and let it boil over medium heat, once boiling , simmer for 5 minutes before stirring it.
2. Continue to simmer until the chicken is cooked.
 3. If the chicken is already cooked and it is still soupy (masabaw) increase the heat until the soup thickens and turn off the heat.


4. Serve it with rice :-).



Vegetable Spring Rolls


Crispylicious vegetable spring rolls or Lumpiang gulay as Filipinos called it. This is very popular in the Philippines specially during family gatherings. Affordable and delicious but usually  bean sprouts are the base ingredient, but this one I used the couve leaves or collard green and other vegetables which I learned from somebody who is an expert in cooking this :-).

Ingredients:
20 spring roll wrappers
200 grams shrimps ( removed the shell and chopped)
1 kilo pechay ( sliced thinly)
2 carrots (sliced into thin strips)
2 potatoes (sliced into thin strips)
1 big sweet potatoes (sliced into thin strips)
onion
garlic
fish sauce



Procedure:

 1. Saute the garlic and onion, add the chopped shrimp and simmer for few minutes.
2. Add the fish sauce, carrots, potatoes and sweet potato simmer until cooked.
3. Add the rest of the ingredients, simmer until it is cooked.
4. Drain and let it cool.
Ready to be wrapped

5. Wrap in the spring roll wrapper and deep fry until golden brown.

6. Serve hot with your favorite sauce.

Sushi Pinoy Version

This is my Pinoy version of sushi made with mango and some vegetables. Very delicious.

Ingredients:
2 cups cooked sushi rice
1 cucumber ( cut into long strips)
1 ripe mango ( cut into long strips)
1 carrot ( cut into long strips)
toasted black sesame seeds
nori seaweeds


Procedure:
1. Place the seaweed over the sushi mat.
2. Put the rice and flatten evenly then put the strips carrot, cucumber and mango.
3. Roll it until the roll is firm and done.
4. Slice into serving pieces, then sprinkle with black sesame seeds and serve with sushi sauce.




Here is how to cook the sushi rice:
1. Wash 3 cups of sushi rice then put water, sushi vinegar and sugar let it boil and cook like the normal rice that we eat during our meals.
2. When the rice is cooked let it cool, then prepare other sushi ingredients.
if sushi rice is not available just mix 2 cups of glutinous rice with 3/4 cup of normal rice.

Glorious Monggo


100% delicious and nutritious:-). I loved this dish since I was a kid.


Ingrdients:
some fried fish
2 cups mung bean or monggo
6 okra
2 cups sliced squash
2 cups spinach or alugbati
3 cloves garlic
1 onion
salt
water ( enough to cook the monggo)

 Procedure:
1. Boil the monggo until tender. Set aside.
2. Saute the garlic and onion then add the fish and simmer for a minute.
3. Add the monggo, salt and squash simmer until half cooked.
4. Add the okra and simmer for 2 minutes.
5. Add the alugbati or spinach and simmer until cooked.
6. Serve it with a smile :-).

Semi Swiss Steak


I've got the idea of this recipe from swiss steak,  I really wanna try cooking swiss steak but sadly all the necessary ingredients were not available specially fresh tomatoes, so I just did this the swiss steak way. It came out okay and delicious too.

Ingredients:
1/2 kilo beef round steak
1 onion chopped
3 cloves garlic
1 cup tomato sauce
3 tablespoons soy sauce
salt and pepper to taste

Procedure:
1.First we need to tenderize the beef by using a tenderizing hammer or if not available, just prick it with fork.
2. Saute the garlic and onion, add the beef then simmer for few minutes.
3. Add all the ingredients and let it simmer over medium heat until tender, stirring occasionally, add water if necessary.
4. Serve it hot with rice. :-).

Chicken Cordon Bleu with Sesame Seeds

The most loved food in my sister's catering menu, I got the idea of making it from my sisters who helped in the catering business, but this time I made my imagination by putting some sesame seeds.

Ingredients:
2 chicken breast
2 slices ham
some cheese
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 egg (beaten)
1 cup bread crumbs
2 tablespoons  black sesame
2 tablespoons  white sesame seeds

 Procedure:
1. Flatten the chicken breast, then mix the salt and pepper and rub it on the meat, do not rub too much so that it will not be salty, if you have chicken powder you can put some.

2. Put the ham and cheese.

3. Then roll into a roulade and secure it with a toothpick.
4. Dip it in beaten egg.

5. Mix the bread crumbs and sesame seed, then roll the roulade chicken over the bread crumbs and sesame seeds mixture.



6. Deep fry it until done ( make sure that the fire is not too high so that it can be cook thoroughly).

7.  Remove the toothpicks then slice and serve it.

Sauted Squash and Chayote


My Portuguese friends loved this! Simples mas saboroso according to them, it means simple but  tasty. I cooked this because it is the most common vegetable in the market so I just tried because I wanna know if they will like it. Success! I di dnot put soy sauce to maintain the natural color.

Ingredients:
1 kilo squash ( slice into bite size)
2 chayote (slice into bite size)
1/4 kilo ground beef
3 cloves garlic
1 onion
salt and pepper to taste
chayote and squash

Procedure:
1. Saute the garlic and onion then add the ground beef and simmer for 2 minutes.
2. Add the water, salt and pepper then bring to boil.
3. Add the vegetables and simmer, stirring occasionally until done.
4. Serve it hot. :-)
