Lime Chicken


A simple chicken dish, cooked in lime juice and ginger making the chicken meat tender and tasty. My friends like the taste of this dish, so I am sharing the recipe to all of you because maybe you will like it too. Try it and have fun cooking.

Ingredients:
2 limes ( extract the juice) or 4 calamansi
1/2 kilo chicken breast
1/4 cup soy sauce
salt and pepper to taste
2 tablespoons ginger strips
dried chilli pepper ( optional)
some spring onion

Procedure:
1. Saute the ginger then add the chicken and simmer for 5 minutes stirring occasionally.
2. Add the lime juice and soy sauce simmer for few minutes .
3. Add the salt and pepper, dried chilis and simmer until done.
4. Add the spring onion turn off the heat then serve it.

Special Eggplant Omelette

Mmmmmmm I can not resist this dish, in fact it is one of my favorite eggplant dishes. Affordable and easy to cook, so what are you waiting for? Treat your family with this delicious treat! Have fun cooking :-)

 Ingredients:
1 big eggplant
1 egg
2 tablespoons flour
1 big tomato ( diced)
some spring onion
salt and pepper to taste

Procedure:
1. Grilled the eggplant.
2. Remove the skin and flatten it. Set aside.
3. In a bowl beat the egg, add the flour, pepper and salt, mix will ( you can add seasoning for a yummier taste)
4.Put the eggplant in the mixture, coating it well, and fry it. Set Aside.
5. Saute the tomato then put some spring onion. Spread it over the eggplant omellette.
5. Serve it hot.

Choco Bread


This is one of the best bread that I've ever baked :-) Superb! Very delicious and chocolatey!

Ingredients:
5 cups flour
3/4 cup sugar
3/4 cup fresh milk or whole milk (warm)
3 teaspoons yeast
3 eggs
3/4 cup melted butter
Nutella Chocolate





Procedure: 

1. Dissolve the yeast in the warm milk for 10 minutes ( put the yeast and leave it for 10 minutes then mix)
2. Mix all the dry ingredients, make a well in the middle, then crack the eggs and beat it there.
3. Add the butter and the milk with dissolved yeast.
4. Mix well, then knead until  the dough is formed.
5. Put the dough in a big bowl and cover it with damp cloth to allow it to rise for 2 hours.
6. After 2 hours knead the dough again then divide into 4 portions.
7. By using a rolling pin flatten each portion, spread with Nutella chocolate, roll and sealed  then let it rise for 40 minutes then bake at 175 degrees celcius for 15 minutes or until done. Then cut it into serving slices.
8. Serve it with a smile:-)

Simple Pork Menudo


A rich tomato sauce based pork recipe that is popular in Philippines, one of the best seller in my sister's restaurant and almost always present on the table in every  family's special occasions. I omitted the pork liver in this recipe because my friend do not like the liver, but it is still yummy.

Ingredients:
   1 kilo pork
   1/4 kilo hotdog ( sliced)
    1 cup carrots, diced
    2 cups tomato sauce
    1 cup potatoes, diced
    1/2 cup green peas
    1/2 cup soy sauce
    1 red bell pepper ( diced)
    1 cup water
    1 onion (chopped)
    3 cloves garlic (chopped)
      salt and pepper to taste  
   

    Procedure
  1.  Saute garlic and onion then add the pork and simmer for 5 minutes stirring occasionally.
  2.  Add the tomato sauce and soy sauce then simmer for another 5 minutes.
  3. Add the water and simmer for 10 minutes stirring occasionally.
  4. Add the carrots and potato then simmer until it is soft, then add the bell pepper, green peas and hotdog, simmer until done.
5. Add salt and pepper to taste and serve it hot and do not forget to smile :-)

Sinigang sa Kamatis


One of the best among Filipino dishes is sinigang. As what I've told in my previous posts that you can make sinigang from different sour soup base, and today I will share how to cook sinigang using tomatoes( stewed in tomatoes) I hope that you will like it.

Ingredients:
1/2 kilo fish
1/2 kilo tomatoes ( sliced)
1 onion ( sliced)
200 grams okra
200 grams eggplant
100 grams swamp cabbage (kangkong) or any green leafy vegetables that will suit for sinigang.
1 litre water
some jalapeno or cayenne pepper ( siling haba)
salt and pepper to taste

Procedure:
1.  In a cooking pot put the water, tomatoes and onion then bring to boil.
2. When it's boiling add the fish, salt and pepper then simmer for few minutes.
3. Add the okra and eggplant, simmer until half cooked.
4.Add the green leafy vegetable and chilis simmer until done



5. Serve it hot :-)

Ham and Cheese Bread





It is my first time to baked this bread and it was a success! I am happy with the result and the taste according to my friends is yummy. It is really easy to bake this bread and here is the recipe for it. Have fun baking.


Ingredients:
5 cups flour
3/4 cup sugar
3/4 cup fresh milk or whole milk (warm)
3 teapoons yeast
3 eggs 
3/4 cup melted butter
some ham
some cheese


Procedure:
1. Dissolve the yeast in the warm milk for 10 minutes ( put the yeast and leave it for 10 minutes then mix)
2. Mix all the dry ingredients, make a well in the middle, then crack the eggs and beat it there.
3. Add the butter and the milk with dissolved yeast.
4. Mix well, then knead until  the dough is formed.
5. Put the dough in a big bowl and cover it with damp cloth to allow it to rise for 2 hours.


6. After 2 hours knead the dough again then cut into portions ( around 75 grams each) to make an individual bread.

7. Flatten each piece then put the ham and cheese, then roll it  and let rise again for 40 minutes then bake at 180C for 15 minutes or until done.
8. Serve it with a smile:-)

Tips: If you want the bread to have a shiny look after baking brush it with beaten egg before baking.
        If you want it to look crispy brush with melted butter before baking.

Toge with Chorizo


Try this one. :-)

Ingredients:
1/2 kilo Sprouted Beans (toge)
1/4 kilo green beans
1 cup sliced chorizo
3 cloves garlic
salt and pepper to taste
3 tablespoons soy sauce

Procedure:
1. Saute the garlic, add the chorizo and soy sauce simmer for a minute.
2. Add sprouted beans and green beans then salt and pepper to taste.
3. Serve it hot  and do not forget to smile :-)

Bamboo Shoots with Coconut Milk


Mmmmmmm I am lucky that I found bamboo shoots from a Japanese store, because it's been a long time that I am longing for this dish, although there is no jute (saluyot) here, but i replace it with another green leaves.
I always let my mom cook this for me when I was young with lots of "saluyot" . Here is my own version for this recipe, one grated coconut is enough for this dish, here is how to do it.


Ingredients:
1/4 kilo bamboo shoots
1/4 kilo shrimps
1 cup pure coconut milk ( kakang gata)
2 cups thin coconut milk ( hindi kakang gata)
1 small onion
1/4 kilo pechay( can be replaced with "saluyot")
salt to taste


Procedure:
1. Boil the bamboo shoots until tender, if its already tender remove the water, then replace it with light coconut milk, bring to boil then put the shrimps, salt and onion simmer until its almost done.
2. Put the pechay and simmer for 2 minutes then put the pure coconut milk, simmer for a minute then turn off the heat.
3. Serve it hot.

Beef with Mushrooms


A tender beef recipe with a delicious sauce that thickens with oyster sauce. Thumbs up for this dish and I recommend this, specially for special occasions, I am sure that your guests and love ones will love it.

Ingredients:
1 cup sliced mushrooms
1/2 kilo beef ( boiled and tendered)
1 onion
3 cloves garlic
2 tablespoons oyster sauce
salt and pepper to taste

Procedure:
1. Saute garlic and onion.
2. Add the tendered beef then simmer for few minutes with salt and pepper.
3. Add the oyster sauce and mushrooms, simmer until done.
4. Serve it hot.

Banana Float




When I saw the banana and it is already very ripe I am thinking of preserving it, so I came up with this idea, although the idea was triggered by the mango float that I made in my previous posts.Just try this easy to follow recipe for banana float. Have fun:-)

Ingredients:
butter and chocolate biscuits( powdered) ( Can be replaced with graham biscuits)
4 ripe bananas ( mashed)
1 big can condensed milk
1 big can Nestle cream

There is no Graham biscuits in my place so I used this one.



Procedure:
1. Combine the condensed milk and Nestle  cream thoroughly.

2. In a dish that you are going to use, alternately arrange  the cream and milk mixture, mashed banana and powdered biscuits until all the ingredients are evenly distributed. Refrigerate before serving.
For a smoother result you can sift the powdered biscuits to remove the lumps.
