Eggplant Omellette (Tortang Talong)


I have lots of friends who do not like eggplant because they said it is not yummy and there is no flavor at all.
 Well, I do not agree because if you know how to cook it, it is yummy, it goes well with other ingredients.
The recipe that I liked for eggplant is tortang talong or eggplant omellette like the one in the picture that's shared to us by Miss Gloria Resurreccion.


Ingredients:

6 eggplants
3 eggs
1/4 cup flour
salt and pepper to taste


Procedure:
1. Grilled the eggplant or boil until it is cooked. 
2. Remove the skin and flatten it. Set aside.
3. In a bowl beat the eggs, add the flour, salt and pepper, mix will.
4.Put the eggplant in the mixture,  coat it well, and fry it.
5. Serve it hot.

Utan Bisaya (Visayan Vegetable Soup)

Pagkalami sa utan Bisaya nga gipada sa akoang pag-umangkon nga si Karen M. Milan, nag-asuaso pa sa kainit, kini ang lami nga higipon, pangpabaskog pa sa lawas.


Mga Sagol:
1/4 kilo Kalbasa
1 karlang
2 talong 
1 bugkos alugbati
1 tasa kamunggay
1 kamatis
1/2 sibuyas
2 lusok ahos
4 tasa tubig
isda nga pangsubak
asin



Mga sagol-ingredients
Pamaagi sa pagluto:
1. Ibutang sa kaldero ang tubig, isda ug mga lamas unya pabukalon, kung mobukal na ilunod ang kalbasa ug karlang, pabukalan sulod sa duha ka minuto.
2. Ilunod ang talong ug pabukalan hangtod mohumok, ilunod ang alugbati unya timplahan ug asin.
3. Ilunod ang kamunggay unya patyon dayon ang kalayo. ayaw taklubi para dili malata ang mga gulay.
4. Pwede na haunon ug ipakaon.



English translation:

Ingredients:
1/4 kilo squash
1 yam
2 eggplant
1 bundle Malabar spinach
1 cup horseradish
1 tomato
1/2 onion
2 cloves garlic
4 cups water
grilled or fried fish
salt


Procedure:
1.In a pot put the water, fish and spices and bring to a boil, once boiling add the squash and yam,then boil for two minutes.
2. Add the eggplant and boil until tender, add the malabar spinach and season with salt.
3.Add the horseradish then turn off the fire. Do not cover.
4.Ready to be served.


I cooked on September 17, 2014 added with string beans, mushrooms and okra

Eggless Chocolate Cupcake

 Simple  and economical to prepare for a big family, great tasting too. Baked by Miss Arianne for all of us.

Ingredients:
2 cups all purpose flour
1 1/2 cups sugar
1 cup unsweetened cocoa powder
3/4 cup vegetable oil
1/2 teaspoon salt
2 cups water
1 1/2 tablespoons baking powder
pinch of salt

Procedure:
1.Preheat the oven at 180C.
2. In a blender put the cocoa powder, flour,sugar, baking powder and salt then blend well until fully mixed.
3. Add the water and vegetable oil then blend well until smooth.





4. Pour in a cupcake cups until 3/4 full.
5. Bake for 20 minutes or until done. Let cool before serving. Enjoy baking :-).

Pan De Leche

A soft and sweet bun that goes well with any sandwich spread  and any drinks that you want to pair it with. Aside from Pan De sal, this is also my favorite bread.
Thanks to my friend who shared this for my blog.

Ingredients:
6 cups all-purpose flour
1 sachet of dry yeast or 3 teaspoons
1 cup sugar
1 egg
3 tablespoons margarine
1/2 teaspoon salt
 400 ml of warm fresh milk

Procedure:
1. Divide the flour then set aside the other 3 cups.
2. Combine all the ingredients, then mix very well, after mixing everything knead the mixture, get the 3 cups flour that we reserved, then add gradually to the mixture, knead until the texture of the dough is firmer and dryer but still soft  and won't stick on the hand. Knead very well. Cover with cloth and allow to raise for 60 minutes or until double in size.


3. After procedure #2  knead for few minutes then get a portion and form into balls and arrange in a greased baking pan, then let rise until double in size. ( a good dough rise in 45 minutes)


 4.  Bake  for 20 minutes or until done in a pre-heated oven at 180C.
5. Allow to cool then serve.

Sinukmani


Well known as biko throughout the country, but if you go to Batangas they called it Sinukmani, a delicious sticky rice cooked with coconut milk and sugar. I want to share this recipe from my friend, Miss Flora Tejada, after tasting this,  I was impressed, so delicious and the texture is just perfect!

Ingredients:
1 kilo sticky rice
8 cups thick coconut milk
3/4 kilo sugar ( either brown or white)

Procedure:
1. In  a cooking pot combine all the ingredients then then bring to a boil over medium heat stirring constantly, once boiling lower the heat and continue to stir until sticky in texture, when it is already dry reduce the heat to low and cover then simmer until fully cooked stirring occasionally.
2. When it's cooked, put in a baking pan then set aside, because we will put toppings on it. ( for the topping mixture, see the instruction at the botoom of this post)
3. Pour in the topping mixture and bake in a pre heated oven at 180C for and hour or until the topping is brownish.
4. Let cool before serving.




For the topping we need the following:
1 cup coconut milk
1 big can condensed milk
1 tablespoon corn starch

Procedure:
Combine everything and mix well until corn starch is fully dissolved, then  cooked over medium heat until it boils then turn off the heat after a minute.

Chocolate Crinkles



A young and enthusiastic lady who loves baking and graphic designing shared her delicious crinkles for all of us, by the way she is my niece :-).

Ingredients
2 cups all-purpose flour (sifted)
1/2 cup unsalted butter (softened)
1 1/4 cup granulated sugar
4 pieces raw eggs
1 tbsp vanilla essence
4 ounces semi-sweet chocolate chips (melted)
2/3 cups unsweetened cocoa powder
1/2 teaspoon salt
1 teaspoon baking powder
1 cup confectioners sugar

 Procedure:
1.Cream the butter in a mixing bowl, then whisk the sugar and continue mixing for 2 minute, then add the cocoa powder and melted chocolate and continue mixing for a minute.

2.Add the eggs and vanilla essence then continue to mix until the texture becomes fluffy then add the flour, salt, and baking powder and continue to mix until all the ingredients are evenly distributed. After this process cover the mixing bowl with cling wrap and refrigerate for at least 3 hours.
 3. After 3 hours remove the cover and spoon a portion of the mixture then roll it with your hands until spherical in shape and roll over confectioners sugar until fully covered.
4. Arrange on a baking tray make sure it's 2-3 inches apart.

5.Preheat oven to 350 degrees Fahrenheit and bake for 10 to 12 minutes
6.Remove from the oven and allow to cool down then serve.

Orange Glazed Duck


My bestfriend from London shared this recipe. Mouth watering!

Ingredients:
1 whole duck
1/4 cup orange juice
1/4 cup honey
1 teaspoon chopped ginger
chili flakes according to your taste


Procedure:
1.Preheat oven to 200C then put the duck in, without basting it for 20 minutes.
2. In a saucepan mix the orange juice, honey, ginger and chili flakes then simmer for few minutes. Remove form heat and this is now ready to be used for basting.
3. After 20 minutes decrease the oven temperature to 180C then remove the duck and brush it with the basting sauce,  continue this process of basting the duck every 15 minutes for an hour and 10 minutes.
4. When cooking is done, serve it with rice.

Milkfish in Olive oil (slow cook)

A mouth watering dish sent to me by my friend Wildvine, looked so tempting, making my tummy grumbles and my mouth salivate :-). I will try this recipe soon God willing. Thanks Wildvine for sharing this.


Ingredients:
2 milkfish -Dressed and cut according to your desired size (salted and peppered)
10 pieces Cherry tomatoes
Olive oil enough to cover the fish and tomato or any oil available in your pantry
2 pcs. Of bay leaves (laurel)
 1.5tbsp. salt
1/2 tbsp. pepper
Half an onion (julienne)
half of Bell pepper.


Procedure:
Put all the ingredients in a glass baking dish. Cover with aluminum foil and bake in a preheated oven for 3 hrs. in 350F. Make sure your milkfish is a little bit salty since oil make the salt wash away from the fish. I will suggest salt and pepper the fish inside and out, half hour before you bake it. Enjoy it with steamed rice or fried rice.

Green Mango Juice






A refreshing green mango juice shared to me by Miss Sheru. It's m first time to drink it and I said "wowwww, this is awesome!" You will definitely like this, so don't hesitate to try the recipe.


Ingredients:
1 litre cold water
3 green mangoes ( manibalang)
3/4 cup sugar

Procedure:
1. Slice the mango then put in a blender together with the sugar and water then blend it well.
2. After blending, sift it by using a strainer to remove the residue.
3. Pour in a serving glasses then serve with a smile :-).

Tofu and Fish Congee


Another delicious dish cooked by my friend, Wildvine. A delicious porridge that will surely satisfy your hunger.

Ingredients for 3-4 servings:
1 cup cooked rice (separated)
1 pack extra firm tofu ( cubed and fried)
200 grams Salmon or any fish ( cubed and fried)
Garlic
Ginger
Onion
4 cups water
spring onion
Salt and pepper to taste
coriander ( optional)

Procedure:
1. Saute the garlic until brownish then add the ginger and continue to saute until the aroma comes out then add the onion and continue to saute for a minute.
2. Add the rice and stir very well to allow the flavor of the spices to be absorbed.
3. Add the water, salt and pepper then simmer until sticky, once the texture is sticky adjust the heat to low and simmer until done then turn off the heat.
4.  Serve the congee with fish, tofu, green onion and coriander on top and enjoy!

It is yummier if you will add chicken broth.

Stir Fried Sweet and Sour Chicken



A recipe from a very good friend "Wildvine" . She is a very good cook and I want to share this chicken dish from her kitchen :-).

Ingredients:
2 chicken breasts boneless and skinless
1 medium size carrot
1 bell pepper
1 tbsp water
1 can pineapple tidbits
2 tbsp vinegar
2 tbsp soy sauce
1 Onion
2 tbsp corn starch (diluted)
1 tbsp cornstarch (dry)
2 tbsp catsup or 2tbsp sweet chili sauce
2 tbsp oil
Dash of salt
Dash of pepper

Procedure:
1. Cut chicken breasts according to your desired size.Make sure you pat dry and then coat with 1 tbsp dry cornstarch, evenly with dash of salt and dash of black pepper.
2. Cut the onion, carrot and bell pepper- like the size of chicken.
3. Drain the pineapple and keep 1/4 C of juice.
4. Heat the pan, pour in 1 tbsp of oil and stir fry the veggies (carrots, bell pepper and onion accdng to tenderness), set aside after half way done.
5. Use the remaining 1 tbsp oil to saute the chicken , if the chicken is no longer pink , put in the pineapple tidbits. Lower the heat when the chicken is almost half way done.
 6. In a bowl mix together all the remaining ingredients and give it a pretty good stir.
7. Put in the veggies together with the chicken and pour in the sauce mixture, keep on stirring to avoid burning.
 8. Let it simmer covered for 6 minutes or depending on the thickness of the sauce.
 9. Serve hot, top it with green onions with steamed rice.
10. Enjoy!

Peanut Choco Cake




My friend Anselmo, who loves to bake gave me this recipe so that I can share it to all of you "This is simple and easy to make specially to those who are just beginning to bake" he said.  I wanna try this one soon. Thank you very much ansel for sharing. Que maravilha :-).

 Ingredients:
4 eggs
1cup sugar
2 cups flour
1cup  cacao powder or dark chocolate powder
3/4  cup oil
1 cup of water
1 cup toasted peanuts
1/4 teaspoon salt
1 tablespoon baking powder

Procedure:
1. Put  everything in a blender then blend until well combined.
2. Preheat the oven at 200 degrees celcius
3. After blending all the ingredients grease the baking pan and pour the mixture then bake for 25 minutes or until done.
4. Let cool before slicing, if you still have toasted peanuts, you can pound it and sprinkle on top of the cake before serving.

Sinigang na Bangus sa Bayabas


Another delicious recipe from Nanay Angelina Mangiliman of Pampanga.

Ingredients:
1 big bangus ( sliced and cleaned)
3 guavas sliced into halves
1 onion
1 tali ng kangkong
6 cups water
2 tablespoons sinigang sa bayabas mix
Procedure:
1. In a pot put the water, sliced guava and onion then bring to boil, when it is boiling add the fish and simmer until the natural flavor comes out.
2.Continue to simmer until the fish is cooked then add the kangkong and simmer until done.
3. Add the sinigang mix then simmer and turn off the heat.
4. Serve it hot.

Chicken Sinigang With Bean Sprouts



Today my bestfriend Malley surprised me with his delicious Sinigang inventions lol. I admire his cooking not because that I am biased but because of his creativity in combining his ingredients. A recipe twister :D. I salute you malley and thanks for sharing your ideas in cooking.
Malley

Ingredients
3 cups of water
2 teaspoons of Sinigang mix
¼ teaspoon white pepper
½ teaspoon hot chilli powder
2 boneless Chicken breasts
2 medium tomatoes
2 handfuls of bean-sprouts
4 mushrooms
3 small hot chillies
1 medium chilli
2 frankfurters
added green peas and sweet corn

Prep

1. Dice the chicken into small chunks
2. Cut each tomato into 6 pieces
3. Do the same with the mushrooms
4. Slices all the chillies into small pieces
5. Dice up the frankfurters

Method:

Over medium heat bring water to boil, then add the Sinigang mix, chicken and tomatoes and bring back to boil for a couple of minutes to soften the tomatoes, once nice and soft crush the pieces into the water. Now add the sausage, mushrooms, chillies and pepper, give it all a stir, then add the bean-sprouts and the chilli pepper, again give it a good stir, and simmer for 10mins, last but not least add the green peas and sweet corn and simmer for 2mins, then serve it hot.

Chicken Clam Meal

Another recipe from my friend's imagination and he called it chicken clam because it looked like a clam :D Sounds good right? It even tasted good he said. So here is the recipe of it from Mr. Malley.
Mr. Malley

Ingredients:
chicken breast
cheddar cheese
ham
5 spices

Procedure:
1. Wash the chicken breast properly then slice it open

2. Put  the ham and cheese, fold over then secure with a toothpick.


3. Dash with 5 spices and bake at 200 degrees celcius in a foil for 20 minutes or until done.
4. Serve it hot with rice for a complete meal.

Baked Apples



This recipe from my bestfriend ( Mr. Malley) is easy to do and it is delicious, a good dessert for the whole family and the ingredients are easy to find. I had my first taste of it and I want to eat the whole fruit hahahaha, you should try this it is really really good.

Ingredients:
2 big Apples
1/2 cup raisins
1/4 cup Cinnamon powder
2 tablespoons sugar
2 teaspoons butter
1 cup water

Procedure:
1. Preheat the oven at 180 degrees celcius.
2. Meanwhile prepare the apple by cutting the upper and bottom parts of  it and remove the core, then divide the raisins, sugar, cinnamon powder and butter into 2 parts so that we can put it on the apples equally.
 2. After process # 1 put the apple in a baking tray then put the water. and bake it for 40 minutes or until done.
3. Cool it before serving.
Mr. Malley is ready to taste the baked Apple:-)
