Chicken A La Barbecue




Just experimenting this but it turned out delicious so I am sharing this to all of you, happy cooking.

Ingredients:
1 whole chicken ( chop into serving pieces)
1 head garlic ( toasted and set aside)
1 onion (minced)
1/4 cup calamansi or lime juice
1 cup ketchup
1/2 cup tomato sauce
 2 tablespoons soy sauce
1 cup Sprite
Salt and pepper to taste

Procedure:
1. Marinate the chicken with lime juice, salt and pepper for an hour then fry until half cooked, set aside.
2. Saute the onion then add the soy sauce, tomato sauce, ketchup and Sprite then allow to simmer, once it is simmering add the chicken, cover the pan and simmer it for 5 minutes over low fire. After 5 minutes stir well, add salt and pepper according to your taste, then simmer until the chicken is fully cooked.
3.When done topped it with toasted garlic and serve, make sure to have an extra rice and reserve your big smile after the last bite :-).

Chicken Aloha


Will you try this recipe? It is very easy to cook but really yummy. 

Ingredients for 6 servings:
 Chicken ( I used 3 drumsticks  and 3 thighs)
1/2 cup soy sauce
6 cloves garlic ( minced)
1 1/2 cup pineapple juice from Pineapple slices can
1 can Pineapple slices
salt and pepper to taste


Procedure:
1. Saute the garlic then add the chicken simmer  until chicken is light toasted, then add the soy sauce and cover over low heat allowing the meat to absorb the soy sauce then add the pineapple juice
  then bring to a boil, when boiling decrease the heat to low then continue to simmer for 5 minutes. 
2. Add the pineapple slice, salt and pepper  then continue to simmer until done
3. Serve it hot.

Chicken Spaghetti


I cooked this to add to my spaghetti recipe collection, it tastes so good, try it.

Ingredients for 6 Servings:
1/2 kilo Spaghetti ( cooked according to its packaging procedure)
400 grams chicken breast ( boiled and shredded)
370 grams tomato sauce
3 cloves garlic ( minced)
1 onion (minced)
1 1/2 cup ketchup
1 cup evaporated milk
2 tablespoons soy sauce
2 tablespoons sugar
1/2 cup grated cheese
salt and pepper to taste
extra cheese for toppings


Procedure:
1. Saute the garlic and onion then put the shredded chicken and saute for a minute then add the tomato sauce, ketchup, sugar and soy sauce then simmer for 5 minutes.
2. Add the milk, grated cheese, salt and pepper then simmer until done.



3. Arrange the spaghetti in a platter then top it with the sauce and some cheese then serve with a very BIG smile :-).

Fried chicken wings



Wings are my favorite parts of the chicken, enough skin and bone for me to enjoy while eating :-).

Ingredients:

1 kilo Chicken wings
1/4 kilo all purpose flour
salt and pepper to taste
3 pieces calamansi ( squeezed)
1 egg beaten
oil for frying


Procedure:

1. Combine the chicken, calamansi juice, salt and pepper to taste then add the beaten egg and combine well, set aside.
2. Combine the flour, salt and pepper to taste then roll the chicken on the mixture to be fully coated.
3. Heat the oil then deep fry the chicken wings until golden brown.
Remove from oil and put in a paper towel to remove excess oil.
4. Serve and enjoy.

Braised Chicken

A simple chicken dish but the taste is priceless.

Ingredients for 4 servings:
1/2 kilo chicken
1 onion
3 cloves garlic
2 medium size carrots ( sliced)
4 medium size potatoes (sliced)
2 tablespoons soy sauce
1 cup water
1 teaspoon corn starch dissolved in 1/4 cup water
salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the chicken and braise until half cooked.
2. Add the soy sauce then simmer for a minute, add the water and simmer until the meat is tender.
3. Add the carrots and potatoes then simmer until cooked, then add salt and pepper to taste. Add the dissolved corn starch to thicken. Simmer for a minute then turn off the heat.
4. Serve and enjoy.

Native Chicken Tinola

Tinolang Manok( Filipino stewed chicken) is one of the popular dishes in Philippines. Green papaya, lemon grass and horse radish are added to the dish to make the flavor perfect.

Ingredients:
1 whole Native chicken ( slice to your desired size)
thumb size ginger( strips)
3 cloves garlic
1 small onion
1 small unripe papaya
2 cups horse radish ( malunggay)
1 stalk lemon grass (tanglad)
6 cups rice washing ( add if needed)
1/4 cup fish sauce (patis) optional
Salt and pepper to taste
Native Chicken

Procedure:
1. Saute the garlic, ginger and onion then add the chicken and braised for few minutes.
2. Add the fish sauce(patis), if there is no fish sauce just put salt and pepper, simmer for 5 minutes to allow the flavors to blend well.
3. Add the rice washing and bring to a boil until the chicken meat is tender. Add the lemon grass and papaya then simmer until almost done.
4. Add the horse radish then simmer for 30 seconds and turn off the heat, then serve hot

Chili leaves can be added too

Binakol


Another Ilonggo's pride is this delicious chicken dish that's rich in taste, cooked in coconut water. If you know how to cook chicken tinola, this is very similar to it, the only difference is this is cooked with coconut water. You can add tinola vegetables for this recipe, mine I only want it this way.

Ingredients:
1 whole native chicken ( chopped to your desired size)
3 young coconut (buko)  coconut and water seperated
2 cloves garlic
1 onion (minced)
2 stalks spring onion
1 stalk lemon grass (tanglad)
salt and pepper to taste

Procedure:
1. Saute the garlic, ginger and onion then add the chicken and braise for few minutes.
2. Add the coconut water and bring to a boil, when boiling add the lemon grass then simmer until the meat is tender, add the coconut meat, salt and pepper to taste then simmer for 5 minutes and turn off the heat.
3. Put the spring onion and serve it hot.



You can add coconut water if needed.

Pinaupong Manok

Pinaupong Manok is a whole chicken cooked in a sitting position, there are various ways of cooking it.  I tried one today and it's good and delicious. Try it.

Ingredients:
1 whole chicken ( around 2 kilos) you can choose the size of the chicken that you will use
1 teaspoon chili flakes (optional)
3 tablespoon calamansi or lemon juice
salt and pepper to taste
2 tablespoon butter
1 can softdrink ( your choice)
2 cloves garlic ( crushed)

Procedure:
1. Sprinkle the juice on the chicken,then rub it with chili flakes, salt and pepper.
2. Remove half of the Coke content then put the garlic and butter inside the can, insert the can at the lower opening of the chicken and set it in a sitting position.
3. Put in the pre-heated oven at 180C and cook for 1 hour or until done.
4. Serve and enjoy :-).

Note: Smaller chicken is faster to cook. So reduce the time when you use a smaller chicken.

Lechon Manok with Tanglad


Lemon grass is one of the most aromatic herb that can be used in cooking, commonly known in the Philippines as tanglad. Oven roasted chicken with lemon grass is very yummy,  and the fragrant of the lemon grass helped to make the inside part of the chicken aromatic. Try it.

Ingredients:
1 whole chicken
1/4 cup soy sauce
2 tablespoons lemon or calamansi Juice
1/4 teaspoon ground pepper
salt to taste
Lemon grass ( tanglad) enough to stuff the chicken
tanglad-lemongrass
Procedure:
1.Marinate the chicken with lemon juice, soy sauce, salt and ground pepper for an hour then stuff it with lemon grass.

2. Preheat the oven at 180C. Then put the chicken and  roast for 45 minutes, after 45 minutes, flip the chicken  so that we can roast the other side for another 45 minutes or until done.
3. Serve and enjoy.



Note: If you use a roasting rack no need to flip the chicken because it will be roasted evenly.

Chicken Kare-kare



Kare kare is a popular Filipino dish made with ox tail and tripe but today I tried it with chicken and it's also very yummy. Try this and let me know what is your opinion.

Ingredients for 8-10 servings:
1 kilo chicken (cut to your desired size)
2 cups water ( add if needed)
2 eggplant
1/4 kilo string beans or Baguio Beans
1 bunch pechay or Chinese cabbage
1/2 cup ground peanut or peanut butter (add if needed)
1 onion
3 cloves garlic
1 tablespoon atsuete powder ( add if needed)
salt and pepper to taste
Some shrimp paste for dipping sauce ( sawsawan)

Procedure:
1. Saute the garlic and onion until brownish then add the atsuete powder, continue to saute for 30 seconds then add the chicken and simmer until pinkish color of the meat is gone.
2. Add water and bring to a boil, when boiling reduce the heat and continue to simmer until the chicken is cooked.
3. Add the peanut butter,eggplant and beans then simmer until half cooked,then add the Chinese cabbage, salt and pepper to taste and simmer until done.

4. Serve it hot with shrimp paste for dipping.

Honey Glazed Roasted Chicken


A very simple recipe of roasted chicken that you will surely enjoy with your loved ones, specially if you love a little sweet taste in your viand.

Ingredients:
1 whole chicken ( around 1.5 kilos) cleaned
3 cloves minced garlic
2 tablespoons lemon or lime juice
1/2 teaspoon ground pepper
salt to taste
1/2 cup honey

Procedure:
1. Evenly massage the  lemon juice, minced garlic, salt and ground pepper to the chicken
2. Preheat the oven for 15 minutes at 180C. Then put the chicken and  roast for 45 minutes while basting it with honey every 15 minutes. After 45 minutes flip the chicken so that we can roast the other side for another 45 minutes and baste it with honey every 15 minutes, after this, it is now ready to be served.
3. Serve and enjoy.

Chicken Tanglad


A simple chicken dish that's budget friendly and smells just like tinola because of the lemon grass. Have you tried this before?

Ingredients for 4 servings:

1/2 kilo chicken
1 big stalk lemon grass ( tanglad) Tied
1 small onion
2 cloves garlic
3 cups water ( add if needed)
salt and pepper to taste
spring onion for garnishing

Procedure:
1. Saute the garlic and onion then add the chicken and braised it until it's a little brownish, then add the water, salt, pepper and tanglad, bring to a boil then simmer until the meat is fully cooked then turn off the heat.
2. Garnish with spring onion and serve it hot and enjoy the aromatic sauce.

Mely's Kitchen Pork and Chicken Adobo

I need to feed 20 persons that's why I put an egg as an extender to my pork and chicken adobo since I do not have carrots and potatoes. Nothing's left after the dinner and my friend's were satisfied. :-).

Ingredients:
1 kilo chicken
1 kilo pork
2 dozens cooked quail's egg
1 cup soy sauce
1 cup vinegar
4 cloves garlic
1 small onion
1 small bell pepper

Procedure:
1. Saute the garlic and onion then add the chicken, pork, ground pepper, vinegar and soy sauce, . Cover and let simmer for 5 minutes over medium heat. After 5 minutes, stir and mix well, continue to simmer until the meat is tender.


3. Continue to simmer until fully cooked, then increase the heat to make the sauce thicker then turn off the heat, put the eggs and serve.

Pork and Chicken Adobo


I always love this adobo combo specially when my older brother was the one who cooked it, but now, the more I love my version :D :D. The chicken meat is tenderer than pork, therefore it is important to choose a tender pork so that it  will be cook evenly with the chicken, here is my simple way of cooking this.

Ingredients for 5 servings:
1/4 kilo chicken
1/4 kilo pork
1/4 cup soy sauce
1/2 cup vinegar
salt and pepper to taste
3 cloves garlic

Procedure:
1. Marinate the pork and chicken with the soy sauce, salt and pepper.

2. Saute the garlic then add the marinated chicken and pork together with the marinade and simmer or 2 minutes.

3. Add the vinegar then cover, just allow to simmer over low heat to incorporate the flavor.
4. Stir constantly until fully cooked then serve it hot with rice and enjoy.

5 Spiced Chicken

Mr.Vince told me that he was so hungry when he cooked this dish, that's why it's a thigh drumstick part. He used 5 spice powder and the taste was amazing, he said. I might try this soon, how about you?

Ingredients:
1 joined thigh drumstick (cleaned)
1 tablespoon 5 spice powder
1/2 lemon
salt to taste

Procedure:
1.  Squeeze the lemon all-over the chicken then, sprinkle the 5 spice powder and salt.
2.  Preheat the oven at 200C, then baked the chicken for 40 minutes.
3 Serve and enjoy.

Sarciadong Manok

My grandma is a good cook for this using the fresh tomatoes from our garden, so good and delicious.
Today I tried remembering her recipe but I added tomato sauce. It is delicious and creamier.

Ingredients:
1/2 kilo Chicken legs or any chicken part yo want to use
1 onion
2 tomatoes
1 beaten egg
1/2 cup tomato sauce
4 cloves garlic
1 cup water
salt and pepper to taste

 Procedure:
1. Sprinkle the chicken with salt and pepper then deep fry it until brownish. Set aside
2. Saute the garlic, onion and tomatoes until soften, then add the chicken and simmer for a minute over medium heat then add the tomato sauce and stir.

3. Add the water, salt and pepper then simmer for l5 minutes or until cooked stirring ocassionally, then add the beaten egg and give a good stir and simmer until done.
4. Serve it hot with rice.

Mely's Kitchen Chicken Roll

For those who have not tried the chicken cordon bleu because you percieved it is difficult try this recipe, it is an easier and simpler version of chicken cordon bleu. I hope you will like this. Thanks Mr. Malley for helping me with this post.

Ingredients for 10-12 servings:
1 1/2 piece of chicken breast ( 3 halves of chicken breast for 3 rolls of chicken)
6 slices of cheddar cheese
9 pieces sweet ham
ground pepper
salt to taste
Oil for frying

Procedure:
1. slice each half piece of the chicken breast but leave it uncut, flatten it then sprinkle each with ground pepper and salt.

2. Put 2 slices of cheese and 1 slice of ham then roll it.
3. Wrap each rolled chicken with 2 slices of ham, then secure it with  toothpicks.

4. Deep fry until golden brown or cooked over medium heat.

5.Remove the toothpicks then slice and serve.

Pininyahang Manok with Avocado



Something that I've experimented and it turned out ok, delicious pininyahangmanok with avocado, a very good twisted recipe. Try it.

Ingredients:
1 kilo chicken
2 cups  pineapple juice
1 cup nestle cream or light cream
1 onion
4 cloves garlic
1 cup sliced avocado
salt and pepper to taste

Procedure:
1.Saute the garlic and onion then put the chicken and simmer until pinkish color is gone.
2. Add the pineapple juice and cover and allow to simmer for few minutes stirring occasionally until the chicken is fully cooked.

3. Add the avocado,  Nestle Cream, salt and pepper to taste then simmer for 1 to 2 minutes and turn off the heat.

4.Serve it hot with rice.
