Eggless Cashew Brownies


This is very easy to make, I am just experimenting with the ingredients and I am happy with the result, you can try it.

Ingredients for 12 servings:
2 1/4 cups flour
3 teaspoon baking powder
2 cups water
3/4 cup vegetable oil
1/2 cup sugar
1/2 teaspoon salt
1 cup Ovaltine or Milo
1/4 cup cashew nuts

Procedure:
1. Sift the flour, sugar, salt, baking powder then put in a blender together with the Milo then blend to mix well.

2. Add the water and oil then blend well until smooth.
3. Preheat the oven at 180 C and grease a baking pan and pour in the batter then top the cashew nuts and bake for 40 minutes or until done.

4. Allow to cool before slicing and serve with a smile :-).

Homemade Beef Tocino


Tocino is a typical breakfast viand of Filipinos and it is popular with fried rice and fried egg combo called tocilog. But I do not like the tocino at the market because it is packed with preservatives specially the red ones, that is why I decided to try to make it and here is the result. I like it but you can improve it according to your taste.

Ingredients for 4-5 servings:
1/2 kilo beef tenderloin ( sliced thinly)
1 cup Sprite
1/2 cup pineapple juice
1 tablespoon sugar
4 cloves minced garlic
salt and pepper to taste

Procedure:
1. Combine all the ingredients and mix thoroughly then refrigerate for few hours or better over night before cooking.
2. Cook the beef together with the marinating sauce until dry then put a little oil to fry it . Remove and serve.

Fresh Mango Drink




Mango is one of my favorite fruits because aside from its yummy taste, you can use it in many recipe from simple drinks to special cakes. This refreshing drink from mango is a good thirst quencher anytime.

Ingredients for 3 servings:
1 mango
2 cups cold water
1 cup fresh or evaporated milk
3 tablespoons sugar or honey


Procedure:
1. Slice the mango and scrape the flesh.
2. Combine all the ingredients and mix well.
3. Refrigerate or add some ice then serve.

How to make Mango Float


 Mango float is a kind of refrigerator cake that is very easy to make, a no-bake cake. Wanna try? Here is how.

Ingredients:
4 pieces ripe mangoes (sliced)
1 big can Condensed milk
1 big can Nestle Cream
1 pack butter  cracker like Graham, Marie, etc( crushed or powdered)
Mangoes

Procedure:
1.  Mix the condensed milk and all purpose cream. Whisk together.
2.  In a dish that you are going to use, arrange in layer alternately the cream and milk mixture, mangoes and powdered biscuits until all the ingredients are done.

3. Refrigerate for few hours before serving.

Asparagus with Oyster Sauce


The succulent taste of asparagus and shrimps blended well in this recipe, a dish that you will definitely adore. Try it.

Ingredients for 4 servings:
1/2 kilo aasparagus
1/4 kilo shrimps
1 onion
4 cloves garlic
2 tablespoons oyster sauce
dash of pepper

Procedure:
1. Saute the garlic and onion then add the shrimps and simmer for a minute.
2. Add the asparagus and stir until half cooked then add the oyster sauce and pepper then simmer until done.
3. Serve it hot with rice.


How To Make Iced Coffee


This is a simple way and economical way of preparing iced tea, why buy expensive ones at the popular coffee stores while you can make it? So here is how to do it.

Just put the ready to drink coffee in the ice cube mold and freeze it until hardened. ( Mine is a leftover coffee from the coffee maker :-). Make sure the sweetness is perfect.

Remove the frozen coffee ( 5 cubes for a regular glass)and pour some milk then serve.

You can add a little whip cream and serve with a smile :-).

Starting today do not throw your leftover coffee :-).

Kare-kare na Pata

It's been a long that I dreamed of cooking this dish but it's only today that my ingredients were completed. I'm glad that at last I can cook my favorite dish, I used pork leg instead of ox tail and tripe, but I will cook the beef version soon, God willing.

Ingredients:
1 kilo pork leg (pata)
6 cups water ( add if necessary)
2 eggplant
1 bunch string beans
1 bunch pechay or bok choy
1/2 cup ground peanut or peanut butter
1 onion
3 cloves garlic
1 tablespoon atsuete powder
salt and pepper to taste
Some shrimp paste for dipping sauce ( sawsawan)

Procedure:
1. Saute the onion until brownish then add the atsuete powder and saute for few seconds then add the pork leg and simmer until pinkish color is gone then add the water and boil until the pork leg is tender. ( If using a pressure cooker boil it for 10 minutes).
2. When the pork leg is tender, saute the garlic and add the peanut then saute for few seconds and mix it with the tender pork leg and continue to simmer for a minute.
3. Add the eggplant and string beans then simmer until half cooked

 then add the pechay, salt and pepper to taste and simmer until done.
4. Serve it hot with shrimp paste for dipping.

You can add banana blossom for this recipe.
