Tortang Talong With Giniling


I love the eggplant omelette without meat, but my companions  requested an eggplant omelette that's meaty, so I made this for them.

Ingredients:
1/2 kilo eggplant
1/2 cup ground beef or pork
3 eggs
3/4 cup flour
1/4 cup water
salt and pepper tot taste

Procedure:
1. Boil the eggplants until cooked then peel it and flatten. Set aside.
2. Combine the eggs, flour, ground meat, water, salt and pepper, mix well until fully combined and smooth.
3. Put the eggplant and coat well with the batter and fry both sides until fully cooked.



4. Serve hot and enjoy.


Shrimp with Sprite

Simple and easy to prepare shrimp dish. The blending of the flavors from all the ingredients are perfect, so try this recipe and enjoy a good meal with your family.

Ingredients:
1/2 kilo shrimps ( wash thoroughly)
1/2 cup Sprite softdrink
1 onion
3 cloves garlic
Salt and pepper to taste


Procedure:
1. Saute the garlic and onion then add the shrimps then simmer for 2 minutes.
2. Add the Sprite and simmer, stirring occasionally for 3 minutes then increase the heat to make the liquid almost evaporate.
3. Add salt and pepper to taste then simmer for few seconds and turn off the heat.
4.Serve it hot.

Fresh Vegetables Salad

A nutritious salad for the whole family.

Ingredients:
1 bunch lettuce ( Washed and sliced)
1 cup cherry tomatoes
1 cup sliced cabbage
2 tomatoes ( sliced)
1 tablespoon lemon juice
2 tablespoons olive oil
salt to taste

Procedure:
1. Combine all the ingredients and mix well.
2. Serve with a smile :-).



How to make Sampaloc Candy

My favorite candy when I was a kid, my friends and I loved this during our school recess, together with some snack items. Today, when I saw the tamarind at the market, I remembered those old days and made some for myself. Yummy!
Ingredients:
1 cup ripe tamarind/sampaloc
1 cup water
1 cup sugar
pinch of salt
Sampaloc
Procedure:
1. Prepare the tamarind by removing the pulp from its pods then put in a cooking pan together with all the ingredients.





2.Bring to a boil, once it is boiling lower the heat and simmer it until the texture is sticky and smooth.


3. When it is already chewy in texture remove from heat and allow to cool before forming it into balls.

4. Form into balls and roll over the sugar. Keep in an air tight container, and serve it anytime you want it.






Pork Steak


Simple pork dish that will surely capture your taste buds. Yummy!

Ingredients for 5 servings:
1/2 kilo pork ( tender loin is the best)
1/2 cup soy sauce
3 tablespoons lemon or calamansi juice
salt and pepper to taste
2 big onion ( cut into rings)

Procedure:
1. Marinate the pork with the soy sauce, lemon juice, salt and pepper for few hours.
2. Saute the onion then add the marinated pork and simmer , stirring occasionally until cooked.
3. Serve it hot.


Salad Overload

I combined all my favorite base salad ingredients, tapioca pearls, buko (young coconut) and macaroni added with  fruit cocktail and other salad ingredients. Overloaded with yumminess!

Ingredients for 20 servings:
1/2 kilo Tapioca pearls ( cooked and drained)
1/2 kilo macaroni ( cooked according to its packaging procedure)
3 pieces young coconut (only scraped meat)
1 can Fruit cocktail (380 grams)
500 ml Nestle All purpose cream (2 tetra packs)
1 1/2 cans big condensed milk (585 grams)
1 can evaporated milk (370 ml)
2 cups  any color nata de coco

Procedure:
1. Combine all the ingredients then refrigerate for few hours.
2. Serve with a smile :-).

Pochero A La Pobre

Pochero from the Luzon region of the Philippines is always rich with tomato sauce, this version looked like it has tomato sauce but the reality is, N-O-N-E, yes none. This is a la pobre version so I cooked it in a very affordable way. Here is the recipe.

Ingredients for 5 servings:
1/2 kilo pork
2 ripe cooking bananas ( sliced and fried)
2 potatoes (sliced and fried)
1 Carrot (sliced and Fried)
1/2 cup green peas
1 tomato
3 cloves garlic
1/2 bell pepper
1 teaspoon annatto powder ( atsuete)
2 cups water
salt and pepper to taste


 Procedure:
1. Saute the garlic, onion and tomato then add annatto powder and continue to saute for 30 seconds then add the pork and continue to saute for 2 minutes.
2. Add the water and simmer until the pork is tender, then add the rest of the ingredients and simmer until done.
Serve it hot.

How to make Chili Sauce




Do you love hot sauces? If yes then this one is for you. Try this recipe and let me know.

Ingredients:
1/4 kilo Cayenne pepper /siling haba
2 tablespoons bird's eye pepper or siling labuyo
2 tablespoons white sugar( or according to your taste)
1.5 tablespoon salt ( or according to your taste)
5 cloves garlic
500ml Vinegar
1 tablespoons cornstarch/cornflour



Procedure:
1. Chop all the chilli peppers then combine all the ingredients in a pan then bring to a boil, allow to boil for 10 minutes stirring constantly over low heat.

2.  After boiling allow to cool, and put in a blender, then blend well until smooth.
3. Transfer in bottle containers and refrigerate to last longer. Enjoy a hot chilli sauce every time you want it :-).

Mely's Kitchen Breaded Pork Chop

My way of cooking my breaded pork chop, easy way and very quick to fry ( for me ) :-).

Ingredients:
1 kilo pork chop
1 cup bread crumbs
1 beaten egg
salt and pepper to taste
4 cloves garlic crushed
1 onion
3 tablespoons lemon or calamansi Juice

Procedure:
1. Put the water, pork chop, garlic, onion and salt and pepper in the pot and boil it until the pork chops are tender.
2. Remove from water, then sprinkle with lemon juice, salt and pepper then dip in the beaten egg then roll over the bread crumbs.

3. Deep fry until golden brown.

4. Serve it hot.

Turon


Turon is one of the famous snacks in Philippines. You can see it easily on the streets ( in our town) together with other snack items. 

Ingredients:
12 spring roll wrappers
6 ripe banana cut into halves
1/2 cup sugar
oil for frying

Procedure
1. Slice the banana into halves or to your desired size
2. Put it on a spring roll wrapper.
3. Wrap it properly and deep fry, until it's cooked.Set aside.
4. Melt the sugar with 1 teaspoon oil, when melted, pour evenly on top of the turon.
5. Serve it hot with your favorite drinks.

Most of the turon has jackfruit inside. But in my place it's hard to find.

This one, I just wrapped the banana without sugar, so after I cooked it i melted a sugar and topped it on my turon. :) If you like it this way, just melt the sugar without putting any liquid in it.
