How to make Siomai Wrapper


This is very simple and easy to make so do not be afraid to try. This recipe will yield more than 20 regular size of wrapper.

Ingredients:
2 cups flour
1 egg
3/4 tsp. salt
1/2 cup water

Procedure:
1. Sift the flour and salt into a mixing bowl and make a well at the center.
2. Put the egg and water in the well and  mix together until the mixture will be a firm dough by kneading it well. Smooth and firm not sticky.




3. Let rest for 45 minutes to allow the gluten to relax making the dough easier to roll out.
4. Sprinkle corn starch or flour on the space where you will knead the dough, after 45 minutes divide the dough into halves, then use a rolling pin and knead the dough then flatten it as thin as you can to make the siomai wrapper. While still working on the first half cover the other half to avoid it from drying.





5. Trim the sides to make a big square or rectangle then cut it into siomai wrappers.



6. Then file the wrappers with cellophane in between to avoid it from sticking. This is now ready to be used for, molo soup, wanton soup, siomai, etc.

How to make Homemade Gravy


If fast food chains are making gravy from the fried chicken residue and oil ( this is the reason why I do not like gravy at restaurants). We can also make gravy every time we roast a chicken in the oven by using all the juice that dripped from the chicken, and here is how to do it.

Ingredients:
Chicken drippings( from roasted chicken) all of the residue/juices in the pan
2 cups water
1 tablespoon flour dissolved in a little water ( just enough to make it thick)
1/2 peice onion
salt and pepper to taste

Procedure:
1. Get the pan where you gathered the chicken juice during the roasting then scrape it and put in a pot.
2. Add onion and  water and boil it over medium heat, when it is boiling let simmer for 5 minutes.
3. Add the flour, salt and pepper, stir well to avoid developing lumps. Stir until thickens.
4.  Once thick turn off the heat, then drain the gravy to make sure that it's really smooth and you can use it as the dipping sauce of the roasted chicken.

How to Roast Tenderloin in the Oven


One of the best cuts in beef is the tenderloin. I just wanna try how to roast this whole tenderloin in an oven and I liked the result, it is juicy and tender. This is best to prepare if you have big family event.

Ingredients:
1 kilo beef tenderloin
2 limes
1/4 cup soy sauce
salt and pepper to taste
1 tablespoons oregano powder

Procedure:
1. Prick the tenderloin with fork, then squeeze the lime allover the meat and sprinkle the oregano powder.
2. Add the soy sauce,  salt and pepper then marinate the meat overnight.

3. Preheat the oven  then set it to 180C , and roast the beef for 60 minutes
4. When it is done, slice it and serve hot with your favorite sauce. Enjoy your food :-)



Note: cooking time depends upon the thickness of the meat.I cooked this well done, it's up to you if you want it rare, medium rare, etc.

How to Cook Pilau Rice



Simple and easy to prepare.
The taste is very nice and spicy, perfect for curries.
Cooked by my best friend, Vince.


Ingredients:
300 grams rice
8 cloves
8 green cardamom pods
1 cinnamon stick
4 star of anise
1 tablespoon butter
a little saffron
4 bay leaf ( laurel)
water

Procedure:
1. Heat the butter and saute the cinnamon stick, saffron, star of anise, cardamom, cloves and bay leaf for few minutes.

2. Add the rice then mix until covered with butter and spices.
3.  Add water that is enough to cook the rice ( like the normal way of cooking white rice)
4.  Cover and mix occasionally until it is cooked.
5. Serve hot with your favorite meat, seafood or vegetable dish.

How To Fry Fish Perfectly

Simple to cook but, some do not know how to fry fish perfectly, that is why  I wanna share this simple dish specially how to cook it perfectly. There's one time that I let my friend fry a fish for our lunch, when she called us to eat,  it can’t be pictured if it is the tail, belly or head :-)  So broken! I said what happened? She said nothing lol this is my style, so let us eat! :D

Ingredients:
1 kilo fish (cleaned and cut)
2 lemon or 8 calamansi
salt

Procedure:
1.  Squeeze the lemon or calamansi juice into the fish then sprinkle with salt.
2. Heat the oil in a pan ( wait for the oil until its very hot so that the fish will not stick in the bottom of the frying pan) then deep fry the fish adjust the heat to medium so that the inner part will be cooked evenly then when it is almost done, increase the heat to high to make the fish crispy and golden brown.
3. Serve it with your favorite side dish or sauce.

How to Cook Tapioca Pearls

I have received emails asking me how to cook tapioca pearls because when they cooked it, the result was not good.
So here is the simple and perfect way of cooking tapioca pearls.

We need:
1/2 kilo Tapioca pearls
3 litres water
uncooked tapioca


Procedure:
1 Put the water in a pot then bring to a boil.
2 When it is boiling, pour the tapioca  and stir very well to avoid it from sticking to each other.


3. Stir occasionally  while simmering until the tapioca pearls are all transparent, this means it's already cooked. Approximately 1 hour.


4. Turn off the heat, then drain and wash in running water.

This is now ready to be used for your recipes

How to Cook Sunny Side up Egg

I needed to cook 30 pieces of sunny side up eggs for breakfast, hmmmmm  I hope I will cook it right, after cooking I've said to myself " this i not perfect" but then I said to myself again " It's okay, sometimes the sun is not always bright, it's covered with clouds" then I smiled and confident, I needed that smile to face my guests who will be arriving by a bus very soon.

To cook the egg, it is better to use a non-stick frying pan, if it's not available then ordinary frying pan is just fine.
Make sure that the oil or butter is hot before putting the egg.
Once the oil is hot sprinkle some salt in the oil ( just enough to give flavor to the egg) crack the egg into the pan.
Cook the egg over low heat, then remove the egg when it is already cooked the way you like it.




Serve it with a sunny smile :)

How To Make a Garlic Cream


A tangy tasted cream/sauce that goes well with meat, bread, and fries, it's very easy to make so I hope that you will try this.

ingredients
2 cloves garlic
1/2 cup milk
 Pinch of salt
 1/2 cup oil

Procedure:
1.Put the milk, salt and garlic in a blender, then blend until garlic is pureed.
 2. Turn on the blender and slowly add the the oil, then continue to blend until the texture is creamy like a yoghurt . ( If it is not forming into a cream add more oil until you attain that texture.
3. Keep in a jar and refrigerate, you can use this as a condiment for your meats, pasta, breads, etc.

How to Make Whipped Cream

There are a lot of ways to use whipped cream in culinary world. "Whipped cream is cream that has been beaten by a mixer, whisk, or fork until it is light and fluffy. Whipped cream is often sweetened and sometimes flavored with vanilla, and is often called Chantilly cream" You can read more aout the whipping cream from this link .

Meanwhile here is how to make it.

Ingredients for 2 cups of whipped cream:
1 cup whipping cream ( double cream or chantilly cream)
2 tablespoons sugar
 pinch of salt

Procedure:
1. Put the whipping cream in a mixer then whip it until the cream starts to thicken, then add the sugar and salt then keep whipping until the cream reaches the texture you desire. (If you do not have an electric mixer just use a whisk.)

2. When the whipping is done you can now use it for your coffee, cake, etc.


Iced Coffee with whipped cream

Do not overwhipped or else it will turn into butter.
Refrigerate the cream before whipping it.

How to make Mango Float


 Mango float is a kind of refrigerator cake that is very easy to make, a no-bake cake. Wanna try? Here is how.

Ingredients:
4 pieces ripe mangoes (sliced)
1 big can Condensed milk
1 big can Nestle Cream
1 pack butter  cracker like Graham, Marie, etc( crushed or powdered)
Mangoes

Procedure:
1.  Mix the condensed milk and all purpose cream. Whisk together.
2.  In a dish that you are going to use, arrange in layer alternately the cream and milk mixture, mangoes and powdered biscuits until all the ingredients are done.

3. Refrigerate for few hours before serving.

How To Make Iced Coffee


This is a simple way and economical way of preparing iced tea, why buy expensive ones at the popular coffee stores while you can make it? So here is how to do it.

Just put the ready to drink coffee in the ice cube mold and freeze it until hardened. ( Mine is a leftover coffee from the coffee maker :-). Make sure the sweetness is perfect.

Remove the frozen coffee ( 5 cubes for a regular glass)and pour some milk then serve.

You can add a little whip cream and serve with a smile :-).

Starting today do not throw your leftover coffee :-).

How to make Mushroom Gravy


Mushroom gravy is one of the tasty gravy that you can use in so many dishes specially fried and grilled dishes. it enhances the flavor that's why most people like mushroom gravy. Here is a simple way to make it.

Ingredients:
2 tablespoons all purpose flour
4 cups water.
1 small onion
1/2 cup sliced mushrooms
salt and pepper to taste

Procedure:
1. Saute the onion until brownish then add the mushrooms.


2. Combine the flour and water then add to the sauted mushrooms then stir and simmer until the sauce thickens.
3. Add salt and pepper to taste and simmer until done. It is now ready to use.

How To Make Garlic Chili Paste

One of the yummiest condiments is the garlic chilli paste, if you love to spice up your food, it's a good thing to have a stock of this in your pantry. I've learned this recipe from my friend, Sheru. This is simple and easy to prepare. Perfect for siomai :-).

Ingredients:
24 pieces bird's eye chili or wild chili ( siling labuyo) remove the stems
1 cup oil
3  heads  garlic (skin removed and cleaned)
3 leaves  laurel/bay leaves
1 teaspoon of salt
1 teaspoon of sugar

Procedure:
1. In a blender, put all the ingredients and blend slowly until the garlic and chili are blended into bits ( just bits not really powder!). Then pour in a pan.
2. Stir over medium heat until the garlic and chili are toasted and the oil has a nice color. Mmmmm so aromatic. ( Note: when it starts to boil, adjust the heat to low)
3. Turn off the heat when the garlic and chili are golden brown or until the desired texture is reached. Let cool but be careful because the heat of the oil will continue cooking the chili and garlic, so remove it from the stove and once the oil  cooled,  blend well.
4. Put in a jar and use it any time you want.


While waiting for the oil to cool I dropped some garlic cloves :-).

How to Make Munchkins

Enjoy the weekend with your loved ones, spend time making this delicious snack. Why go to the donut shops while you can make these munchkins at the comfort of your home? One way of spending a good time with your kids is doing an activity together. This is one of an enjoyable activity for the weekend. Have fun.

Ingredients:
2 cups powdered crackers ( graham, marie or any cracker with the same texture as graham)
1 cup condensed milk


For coating:
Choco powder
crushed or powdered peanuts
desiccated coconut
confectioners sugar

Procedure:
1.Mix the powdered crackers and milk until you form a dough-like mixture, by using your palms get a portion from the mixture and  roll into small balls until all the dough is done. Then coat in different coatings and serve.
