Pancit with Pork


This is one of my favorite dishes, I can cook this as quick as I can and I can create different ingredients with this from very simple to the most special but I do not have much time to do it, so here is a very simple one :-)

 Ingredients:
1/2 kilo pancit  ( egg noodles)
1/2 kilo pork sliced into bite size
200 grams cabbage sliced into strips
1 carrot sliced into strips
1 onion
3 cloves garlic
1/2 cup soy sauce
salt and pepper to taste
3 cups water ( add if necessary)

Procedure:
1. Saute the garlic and onion then add the pork and simmer for few minutes.
2. Add the soy sauce, salt and pepper cover for a minute, then mix well.
3. Add the water and bring to a boil then add the carrots, cabbage and pancit, stir well and simmer for few minutes until cooked.
4. Turn off the heat then serve it hot.

Pancit with Oyster Sauce



Try this simple and quick way of cooking pancit with less ingredients, but you can add carrots and bell pepper to this recipe, it's just happen that when I am cooking this only these things are available.  Try this

Ingredients:
1/2 kilo Pancit ( egg noodles)
1/4 kilo shrimps ( cleaned and shells removed)
1 onion
3 cloves garlic
1/2 cup oyster sauce
1/4 kilo cabbage
1 cup water
salt and pepper to taste

Procedure:
1. Boil the pancit until cooked then drain and set aside.
2. Saute the garlic and onion, add the shrimps and simmer for a minute.
3. Add water and bring to a boil, once boiling increase the heat then add the cabbage, stir very well until soften.
4. Add the oyster sauce, simmer and stir then add the pre-cooked pancit, mix evenly.
5. Add salt and pepper to taste then serve hot.
 
While you are boiling the pancit (egg noodle), you can start sauteing the ingredients, to make the cooking process quicker.

Macaroni Pastel

I made this macaroni dish for some hungry friends :-) Only elbow macaroni and ground beef in the refrigerator  and some cooking stuffs in the kitchen rack, I start to imagine dishes which I can get an idea from and make something yummy with my ingredients. I came up with this kind of macaroni soup which I called macaroni pastel. It taste delicious in a light tomato sauce. Try it.

Ingredients:
1 cup elbow macaroni
1/2 cup ground beef
1/2 cup tomato sauce
1 onion
3 cloves garlic
4 cups water
salt to taste

Procedure:
1. Saute the garlic and onion then add the ground beef and simmer until pinkish color is gone.
2. Add salt, pepper and tomato sauce then simmer for 3 minutes over medium heat stirring every now and then.
3. Add the water then bring to a boil then add the macaroni and simmer until cooked stirring occasionally.
4. Serve hot.

Special Misua


It's cold and windy in my place that is why I have decided to cook misua. Misua is a very thin Filipino noodles and has  a smooth texture making it easy to swallow. I love this dish since I was a kid.

Ingredients:
100 grams misua
1 can sardines in tomato sauce
5 cups water
spring onion
 Fried fish balls
2 cloves garlic
1 onion
salt to taste
ground pepper

Procedure:
1. Saute the garlic and onion then add the sardines and simmer for few minutes.
2. add the water and bring to a boil, then add the misua and simmer until soft.
3. Add the spring onion and salt to taste then  turn off the heat.
4. Serve hot and drop some fried fish balls and pepper,  happy eating :-)

Beef Macaroni Soup


Creamy and yummy macaroni soup that will surely suit your taste. The blending of the flavors are just right. Perfect for the whole family, try it.

Ingredients:
1/4 kilo macaroni
200 grams ground beef
3 cloves garlic
1 small size onion
1 cup evaporated milk
1 small carrot
1/4 kilo cabbage
salt and pepper to taste
spring onion for garnishing

Procedure:
1. Saute garlic and onion then add the ground beef, salt and pepper, simmer for few minutes, allowing the flavors of the spices to infuse with the beef for a good taste and nice aroma.
2. Add the macaroni and saute for a minute, then add water that is enough to soup the macaroni until the cooking is done.
3. Stir occasionally so that the macaroni will not stick at the bottom of the pot.
4. When it is almost done, add the carrot and cabbage
5. Add the milk let it boil once and turn off the heat.
6. Serve it hot and sprinkle with minced spring onion

Chicken Sotanghon Soup


Winter is almost here, so here is the soup to keep you all warm.   very quick and easy to cook. You can add more ingredients to this recipe like cabbage and parsley. It's just happen that when I am cooking this only these ingredients were available.

Ingredients:
200 grams sotanghon noodles
200 grams schicken
1/2 cup corn
8 cups water
1 bell pepper
1 onion
4 cloves garlic
spring onion
salt and pepper to taste

Procedure:
1. Saute the garlic and onion, then add the chicken and simmer.
2. Add the water, let it boil and simmer until the chicken is cooked.
3. Add the sotanghon noodles, salt and pepper then simmer for 3 minutes, add water if necessary.
4. Add the rest of the ingredients then simmer until cooked.
5. Serve it hot.

Bihon with Pork




I have a friend who wanted me to cook bihon with less vegetables :( Here is the one for her birthday :) It's still delicious! You can add your favorite vegetables for this recipe.

Ingredients:
1/2 kilo rice noodles
1/2 kilo pork (cut into bite size)
1  carrot
1 medium size onion
3 cloves garlic
1/2 cup soy sauce
6 cups water
a dash of pepper.

Procedure:
1. Saute garlic and onion, then add the pork, simmer for few minutes
2. Add the soy sauce and pepper then simmer for 2 minutes.
3. Add the water, cover until it boils then put the bihon, simmer for 4 minutes.
4. Add the rest of the ingredients simmer until it is cooked.
5. Serve it hot

Some rice noodles needs more water.

Pansit with Ground Pork


Pansit is how Filipinos called the noodles of different types ( bihon, miki, mami, etc.) This is an all time favorite dish of my family specially during special occasions, no matter how frequent we gather pansit is always present :) and always an attention getter in the party table of my clan. That is why as early as 14 years old I am trying to cook this dish and I learned different ways of cooking it.

Ingredients:
1/2 kilo pansit
1/4 kilo Ground pork
1  onion
3 cloves garlic
1/4 kilo cabbage
1 carrot
1/4 cup soy sauce
salt and pepper to taste
1 small bell pepper
3 cups water

 Procedure:
1. Saute garlic and onion then add the ground pork and soy sauce, simmer for a minute.
2. Add the water and bring to boil once boiling, increase the heat then add all the vegetables and stir until cooked then remove and set aside. Just leave the soup in the wok then add the pansit and continue stirring until done.
3. Add in the cooked vegetable and mix well, then serve it hot.

Simple Palabok




Palabok is a popular snack item in the Philippines, one of my favorites :D.If I have ample time I will share m recipe for this without using the ready-mix sauce.

Ingredients:
200 grams bihon (boiled and drained)
2 hard boiled eggs
2 cans smoked tuna or 1 cup tinapa
1 onion
3 cloves garlic
1/2 cup mince spring onion
1 big packet Mama Sita's palabok mix (follow the instruction in the package)



Procedure:
1. Saute the garlic and onion then add the smoked fish, let simmer.
2. Add the dissolved Mama Sita's Palabok Mix then simmer until the sauce thickens, turn off the heat and set aside.

3. In a serving platter arrange all the ingredients then serve.

Chicken Chow Mein


Chow mein is a Chinese term for stir fried noodles. Although it is of Chinese origin, chow mein is well known to different countries all over the world. It is the second most popular fast food in Nepal. There are different versions of Chow Mein, American Chinese cuisine has two versions, Canadian Chinese cuisine has three different versions and in different countries there are different versions. I will share the simplest and easiest version :). Enjoy cooking.

Ingredients:
1/2 kilo egg noodles (pre-cooked with plain water and drained)
1 cup sliced chicken breast
1 small size onion
3 cloves garlic
1/4 kilo cabbage
1 carrot
1/2 cup celery
1/4 cup soy sauce
1 cup water
salt and pepper to taste

 Procedure:
1. Saute garlic and onion
2. Add chicken, simmer for a minute
3. Add the soy sauce simmer for another minute then add the water and bring to boil
4. Increase the heat then add all the vegetables and stir fry until tender
5. Add the pre-cooked noodles and continue stir frying until done.
5. Serve it hot.

Palabok ( Mama Sita's Recipe)


A friend of mine send me a Mama Sita's palabok mix that's why I cooked this recipe. Very simple and easy because I just follow the procedure from the packet :D. I used sotanghon ( transparent noodles) because bihon ( rice noodles) is not available in my place.

Ingredients:
200 grams sotanghon or bihon (boiled according to packaging procedure then drained)
200 grams shrimps ( deshelled and sauted in garlic)
2 hard boiled eggs
2 cans smoked tuna
1 onion
3 cloves garlic
1/2 cup mince spring onion
1 big packet Mama Sita's palabok mix ( dissolved in 3 cups water)
some of the ingredients

Procedure:
1. Saute the garlic and onion then add the smoked fish let simmer.
2. Add the dissolved Mama Sita's Palabok Mix then simmer until the sauce thickens, turn off the heat and set aside.
3. In a serving platter arrange all the ingredients, put the pre-cooked sotanghon first.
4. Top it with the sauce and and put the rest of the garnishing ingredients, arrange well for a better presentation. :)

Sotanghon Guisado



Sotanghon guisado is one of the easiest sotanghon recipe that you can try. You can use different ingredients for this and be creative as you can. I just make the simple and I used the ingredients available during the time when I am cooked this.Try this complete meal for the whole family.
Ingredients:
1/4 kilo cellophane noodles ( sotanghon)
1/4 kilo shrimps ( deshelled)
1/4 kilo cabbage ( sliced into strips)
1 carrot ( sliced into strips)
1 onion
3 cloves garlic
10 hard boiled quails egg
1/2 cup soy sauce
1 cup broccoli
salt and pepper to taste
2 cups water or as needed ( it depends upon the sotanghon)

Procedure:
1. Soak the sotanghon in a water until soft enough to cut.  Drain and set aside.
2. In a pan or wok saute the garlic and onion, add the shrimps and simmer for a minute,  add the soy sauce simmer for a minute.
3. Add the water and bring to a boil, then add  pepper and salt to taste.
4. Put the broccoli, carrot and sotanghon then  mix well , add the cabbage while stirring so that it wont stick at the bottom.
5. Simmer for a minute then continue stirring until it is cook,  add the quails egg.
6 Serve hot.

Chicken Spaghetti Soup


It was raining and I want to cook chicken macaroni soup but unfortunately elbow macaroni is not available, so I just used the spaghetti. It is still the same procedure with macaroni soup, no need to worry because it is not difficult to cook :).

Ingredients:
200 grams spaghetti
200 grams chicken breast
1 cup evaporated milk
1 carrot ( strips)
1 cup broccoli ( optional)
1 cup cabbage
3 cloves garlic
1 onion
spring onion
salt and pepper to taste

Proceudre:
1. Saute garlic and onion then add the chicken, salt and pepper then simmer for few minutes.
2. Add water that is enough to soup the spaghetti until the cooking is done. Stir occasionally  so that the spaghetti will not stick at the bottom of the pot.
3. When it is almost done, add the broccoli, carrot and cabbage then simmer for few minutes.
4. When the vegetables are done add the milk let it boil once and turn off the heat.
5. Serve it hot and sprinkled with minced spring onion

Pancit Canton


Yummy!

Ingredients:
1/4 kilo pancit canton noodles or egg noodles ( cooked and drained)
1/4 kilo chicken ( chopped)
200 grams sweet peas
1 carrot
1 onion
3 cloves garlic
1/2 cup soy sauce
salt and pepper to taste
1 cup water

Procedure:
1. Saute the garlic and onion then add the chicken and simmer for few minutes.
2. Add the soy sauce, salt and pepper cover for a minute, then mix well.
3. Add the water and bring to a boil then add the carrots ans sweet peas.
4.  When the vegetables are done pour in the pre-cooked pancit canton, then mix well and simmer for a minute.
5. Serve it hot.

Special Sotanghon Soup

A light creamy soup that is very tasty.

Ingredients:
200 grams sotanghon noodles
200 grams shrimps
1/2 cup corn
1/2 cup diced fish stick ( optional)
8 cups water
4 crab sticks
1 bell pepper
1 onion
4 cloves garlic
spring onion
salt and pepper to taste

Procedure:
1. Saute the garlic and onion, then add the shrimps and simmer.
2. Add the water and corn, then let it boil and simmer for few minutes.
3. Add the sotanghon noodles, salt and pepper then simmer for 3 minutes, add water if necessary.
4. Add the rest of the ingredients then simmer until cooked.
5. Serve it hot.

Simple Chicken Pad Thai



Sawasdee ka is "hello" in Thailand, this is always the greeting of the Thai vendor, every time I order Pad Thai at her booth. Pad Thai is at top number 5 spot in World's 50 most delicious foods readers' poll compiled by CNN Go in 2011. Make this Thai dish right at your home by following this recipe.I will make Pad Thai again but I will include the recipe for the sauce. Do not have much time when I cooked this so I just used the bottled sauce.


Ingredients for 3 servings:
1/4 kilo chicken breast
100 grams rice sticks noodles
100 grams bean sprouts (toge)
3 tablespoon fish sauce (patis)
1/4 cup crushed cashew nuts
1 egg ( fried and scrambled)
3 spring onion stalks ( cut into an inch long)
1 cup Pad Thai sauce





Pad Thai Sauce and Noodles




Procedure:
1. Cook the noodles for 13 minutes or until al dente, then drain and set aside.





2. Saute  the garlic and onion then add the chicken breast and simmer for few minutes.
3. Add the fish sauce and simmer until chicken is cooked, then add the sauce and noodles, mix well.

4. Add the bean sprouts and spring onion mix well for less than a minute then turn off the heat.

5. Chopped the scrambled egg and mix with the crushed cashew nuts, then pour  add in the noodles and mix well. Get some to sprinkle on top before serving. Enjoy!


For a homemade sauce you can combine:
1 tablespoon sugar
1 tablespoon lemon or lime  juice
1 tablespoon soy sauce
1 tablespoon water
1 tablespoons fish sauce

Spiral Macaroni Soup

I cooked this for my friends few weeks ago when the weather was cold.

Ingredients:
2 cups spiral macaroni
200 grams ground beef
2 hotdogs ( optional)
3 cloves garlic
1 small size onion
1 cup evaporated milk
1 small carrot
1 cup sliced spring onion
1 knorr beef cube (optional)
salt and pepper to taste



Procedure:
1. Saute garlic and onion then add the ground beef, beef cube, salt and pepper,  simmer for few minutes.
 2. Add the spiral macaroni and saute for a minute, then add water that is enough to soup the macaroni until the cooking is done.
3. Stir occasionally  so that the macaroni will not stick at the bottom of the pot.
4. When it is almost done, add the carrot and simmer until tender.
5. Add the milk and spring onion, let it boil once and turn off the heat.
6. Serve it hot :-).

Chicken Mami


It was cold few weeks ago that's why I made this for my friends.
a little laborious to prepare but it's worth it because it is delicious and I know that my friends will like it.

Ingredients:
1 kilo fresh noodles (wash properly and blanch it)
1/2 kilo chicken breast
peppercorn ( pamintang buo)
2 knorr chicken cubes
1 onion
salt to taste


For Garnishing:
1/4 kilo spring onion (minced)
1/4 cup ground pepper
1/2 cup toasted garlic
hard boiled egg


Procedure:
1. In a big pot, put the chicken, peppercorn, onion, chicken cubes and salt then bring to a boil. ( Put water that is enough to make soup for everybody) It depends how many servings you wanna make.
2. Wait until the meat is cook, then remove it and cut into small pieces to put in each bowl of mami.
3. In a serving bowl arrange the noodles and all the garnishing ingredients then pour with the soup.


4. Serve it hot.

Miki Gisado


Mmmmmmm just like pansit canton this is also delicious and one of my favorite pansit dishes. Easy to cook noodles and goes well with chicken, pork, beef and seafood. When I cooked this one I only have few ingredients because I do not have a plan to cook it, so its just random and I just used what is available in the refrigerator that I can put in miki. So here is my simple dish of gisadong pansit miki.

Ingredients:
200 grams miki noodles
200 grams pork
1/4 cup soy sauce
3 cloves garlic
1/2 cup sliced parsley
1/2 cup water
1 onion
1/4 teaspoon ground pepper
salt to taste

Procedure:
1. Saute the garlic and onion.
2. Add the pork and saute until brownish then add the soy sauce, salt and pepper.
3.  Add the water and let it boil then let it simmer for 2 minutes then add the miki noodle.
4. Stir very well to blend with the soy sauce and pork flavor.
5. Turn off the heat when it is cooked and serve it hot.

Wanton Noodles Soup


Wanton Noodles Soup or Wonton Noodles Soup is a Cantonese dish which is popular in Thailand, Hongkong, Singapore and Malaysia, we can prepare this in  many different ways and flavors. I made one with shrimps and it is very yummy. This is my own style :-).

Ingredients:
Shrimps Wonton
1/2 cup dice bell pepper
1/2 cup sliced spring onion
noodles ( better use egg noodles) pre-cooked and set aside
1 onion ( chopped)
Salt and Pepper to taste

Ingredients for Shrimps Wanton:
 500 Grams Regular Size Shrimps
Wanton Wrapper ( depends how many you want to make)

Procedure for shrimps Wanton:
1. Put the shrimps in the Wanton wrapper and sealed it tightly so that it will not be deformed when we cook it. Set aside.

Preparation For The Wanton Noodles Soup
1. In a pot,  put water, chopped onion, salt and pepper  then let it boil.
2. Add the Wanton then simmer until done.
3. In a serving bowl arrange the noodles and all the garnishes then pour in the wanton together with the soup, serve it hot.
