Simple Roasted Chicken

This is a very easy to follow recipe of roasting a whole chicken

Ingredients:
1 whole chicken
1/4 cup butter
2 tablespoons lemon or calamansi Juice
1/4 teaspoon ground pepper
salt to taste

Procedure:
1. Evenly massage the butter unto the chicken, then sprinkle the lemon juice, salt and ground pepper.
2. Preheat the oven at 180 degrees C. Then put the chicken and  roast for 45 minutes, after 45 minutes, flip the chicken  so that we can roast the other side for another 45 minutes or until done.
3. Serve and enjoy.

Chicken Buffalo Wings

This is one of the chicken dishes that I like a lot, it will really boost your appetite. Have a food adventure with this chicken dish. Enjoy!

Ingredients:
1 kilo chicken buffalo wings
2 tablespoon lemon or calamansi juice
1/4 teaspoon ground pepper
3 cloves garlic
3/4 cup tomato sauce
1/2  cup ketchup ( any flavor)
1/4 cup chili sauce
1 tablespoons honey or sugar
1/2 cup shredded cheddar cheese ( for the original recipe it used blue cheese)
1/4 cup butter
salt

Procedure:
1. Clean the chicken wings, cut and put the lemon juice, ground pepper and salt, then fry  and set aside.

2.  Heat the butter then saute the garlic, add the ketchup, tomato sauce and chili sauce then simmer for a minute.
3. Add the rest of the ingredients then simmer until done, add the fried chicken and mix well then turn off the heat.
4. Serve it with a smile :-).

Stir Fried Sweet and Sour Chicken



A recipe from a very good friend "Wildvine" . She is a very good cook and I want to share this chicken dish from her kitchen :-).

Ingredients:
2 chicken breasts boneless and skinless
1 medium size carrot
1 bell pepper
1 tbsp water
1 can pineapple tidbits
2 tbsp vinegar
2 tbsp soy sauce
1 Onion
2 tbsp corn starch (diluted)
1 tbsp cornstarch (dry)
2 tbsp catsup or 2tbsp sweet chili sauce
2 tbsp oil
Dash of salt
Dash of pepper
wildvine

Procedure:
1. Cut chicken breasts according to your desired size.Make sure you pat dry and then coat with 1 tbsp dry cornstarch, evenly with dash of salt and dash of black pepper.
2. Cut the onion, carrot and bell pepper- like the size of chicken.
3. Drain the pineapple and keep 1/4 C of juice.
4. Heat the pan, pour in 1 tbsp of oil and stir fry the veggies (carrots, bell pepper and onion accdng to tenderness), set aside after half way done.
5. Use the remaining 1 tbsp oil to saute the chicken , if the chicken is no longer pink , put in the pineapple tidbits. Lower the heat when the chicken is almost half way done.
 6. In a bowl mix together all the remaining ingredients and give it a pretty good stir.
7. Put in the veggies together with the chicken and pour in the sauce mixture, keep on stirring to avoid burning.
 8. Let it simmer covered for 6 minutes or depending on the thickness of the sauce.
 9. Serve hot, top it with green onions with steamed rice.
10. Enjoy!

Chicken Lumpia


Simple and economical dish that is good for all occasions.

 Ingredients:
1/2 kilo ground chicken
40 spring roll wrappers
1 onion/spring onion ( minced)
4 cloves garlic ( minced)
1 medium size carrot ( minced)
2 medium size potatoes ( minced)
1 beaten egg
1 cup flour
salt and pepper to tatse


Procedure:
1. Mix all the ingredients except for the wrapper.
2. In a wrapper put the meat mixture then wrap it properly
3. After wrapping, heat the oil and deep fry the lumpia until golden brown ( fry in a moderate heat so that the meat inside will be cooked gradually and to avoid burning the wrapper).
4. Serve it with your favorite sauce.

Chicken wings a la Stroganoff

The creamy sauce of this chicken dish, is really an appetite booster, so make sure the rice is enough for everybody.

Ingredients
1/2 kilo chicken wings
1/2 cup sliced  mushrooms
1 small onion
1 cup tomato sauce
1 cup Nestle Cream
3 cloves garlic
1 cup water
salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the chicken wings, simmer until it pinkish color is gone.
2. Add the tomato sauce then simmer for 5 minutes over low heat.
4. Add water then adjust to medium heat and simmer until the chicken wings are cooked.
5. Add the mushrooms, salt and pepper to taste then simmer for 3 minutes.
6. Add the Nestle cream and simmer for a minute then turn off the heat.
7. Serve it hot.

Chicken A La King (Filipino Style)



 Chicken a la king is a chicken dish consist of cubed chicken in a creamy sauce, this can be cooked with or without sherry or white one. I cooked this for my Filipino friends so I omitted the wine since wine is not common in Philippine cuisine. I added some pineapple for a tangy taste since I omitted the wine. An excellent dish according to my friends who ate this.

Ingredients for 5 servings:
1/2 kilo boneless chicken breast ( cubes)
1 cup sliced mushrooms
1 green bell pepper (diced)
1 red bell pepper ( diced)
1/4 cup flour
1 onion
1 cup water
1 cup fresh or evaporated milk
1 cup Nestle cream
1 cup pineapple (optional)
salt and pepper to taste

Procedure:
1. Saute the onion then add the chicken then pan fry it until brownish then remove the chicken and set aside.
2. Add the mushrooms and bell peppers then stir until soften, add the flour and stir for 2 minutes then add the water and milk then continue to simmer until almost boiling.
3. Add the chicken, salt and pepper to taste then simmer until everything is cooked.
4. Add the Nestle cream then simmer for a minute and turn off the heat.
5. Serve hot with rice or bread.

Baked Pinatisang Manok


Fish sauce (patis) is a common condiment in the National Capital region of the Philippines. At first I do not like fish sauce because of its strong smell, but when I tasted it, I loved it. I love to use it in my cooking because it adds flavor to my food. Yummy!

Ingredients:
1/2 kilo chicken thigh ( cut into serving pieces)
3 tablespoons fish sauce ( patis)
2 tablespoons lemon or calamansi juice
1/4 teaspoon ground pepper

Procedure:
1. In a mixing bowl combine all the ingredients and mix well, marinate for 2 hours.
2. Preheat the oven at 250 degrees celsius then bake the chicken for 20 minutes.
3. Remove from the oven then serve with your favorite dipping sauce.

Baked Chicken Cordon Bleu


Out of curiosity I baked this to see what is the result, it is still yummy but it's not as juicy as the fried one, but I know this is healthier because there is no oil. Good for those who are on a diet. Try it.

Ingredients:
2 chicken breast
2 slices sweet ham
some cheese
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 egg (beaten)
1 cup bread crumbs

Procedure:
1.Mix the salt and pepper and rub it on the chicken breast, enough to taste.

2. Put the ham and  the cheese.

3. Make it  into a roulade and secure it with toothpicks.

4. Dip it in beaten egg then roll over the bread crumbs. Preheat the oven at 160 degrees celsius, then bake for 45 minutes or until done.

5. Remove the toothpicks then slice and serve it.

Chicken Bicol Express


A creamy hot chicken recipe that I will recommend for everybody. A must try but you must be careful because its fiery hot.

Ingredients for 3 serving
1/4 kilo chicken breast ( slice into cubes)
1 onion
5 cloves  garlic
1 cup pure coconut milk ( can be replaced with Nestle Cream)
5 pieces jalapeno or siling haba ( chopped)
salt and pepper to taste

Procedure:
1. Saute the garlic and onion, then add the chopped chili then continue to saute for a minute.

2. Add the chicken and saute until the pinkish color is gone, then cover and let simmer for 10 minutes over low heat, stirring occasionally.

3.Add the coconut milk,salt and pepper then  simmer for a minute and turn off the heat.
4. Serve it hot with extra rice :-).

Garlic Drumsticks



A tasty chicken dish that is very easy to prepare even if you are a beginner in cooking, you will definitely perfect this. Try it.

Ingredients:
1 kilo chicken drumsticks
1 garlic head ( minced)
2 tablespoons lemon or calamansi juice
salt and pepper to taste

Procedure:
1. Fried the chicken until half cooked.

2. Saute the garlic then put the chicken and lemon juice then stir until mixed fully, then cover for 5 minutes over low heat.
3. Sprinkle with salt and pepper to taste and continue to simmer over low heat for 10 minutes or until fully cooked. ( If you are in a hurry you can add 1/2 cup water then simmer over medium heat then simmer until cooked.)
4. Serve hot with a smile :-).

Sauted Chicken

Simple chicken recipe designed to cater those who said they do not know how to cook, I think this recipe will encourage them that cooking is so simple and that they can do it. Try it.

Ingredients for 4 servings:
1/2 kilo chicken
2 tomatoes
1 onion
1 tablespoon ginger strips
3 cloves garlic
2 tablespoons fish sauce ( patis)
2 bay leaves or laurel
1/2 cup water
salt and pepper to taste

Procedure:
1. Saute the garlic and ginger then add the onion and continue sauteing then add the tomatoes saute until soften then add the chicken, cover and let simmer for 3 minutes then stir thoroughly.
2. Add the fish sauce and the bay leaves then simmer for 2 minutes,  then add the water and simmer for 15 minutes over low heat stirring occasionally.
3. Add salt and pepper to taste then simmer until done.
4. Serve it hot.

Pinatisang Lechong Manok

A tangy taste chicken that you will surely like, specially if you like fish sauce or patis :) Try this recipe and let me know. I used a big whole chicken almost 2 kilos. Just adjust the ingredients if your chicken is small.

Ingredients:

1 whole chicken
1/2 cup fish sauce ( patis) or according to your taste
1/4 cup calamansi or lemon juice
6 garlic ( minced)
pepper to taste

Procedure:

1. Prick the chicken with the tip of the knife so that,  it can absorb the flavors of our marinating ingredients.
2. Combine the fish sauce and calamansi or lemon juice, garlic, and pepper, then tap the mixture to the chicken . Repeat this process every now and then until it is ready to be cooked. You can keep the leftover marinade in the refrigerator for future use.
3. Preheat the oven at 160 degrees celcius then put the chicken and cook for 60 minutes then increase the temperature to 180 degrees celcius and roast the chicken for another 10-15 minutes or until done.
4. Serve hot with your favorite dipping sauce . :-)




Homemade Chicken Nuggets


I love chicken nuggets but I knew that the ready to eat from the market has lots of preservatives so I decided to make a healthier on and here is the recipe for it.

Ingredients:
1/2 kilo chicken breast
1/2 teaspoon ground pepper
1 cup flour
1 onion ( minced)
5 cloves garlic (minced)
salt to taste
Bread crumbs

Procedure:
1.Finely chop the chicken breast.Then add in all the ingredients and combine thoroughly until fully mixed.

2. From a cylindrical shape then slice it to your desired nuggets size.

 3. Roll over the bread crumbs.
 4. Deep fry until golden brown.


5. Serve hot.

Chicken Wings Caldereta


I have friends whose favorite parts of the chicken are the wings. I cooked this for them when they came over to my place for a dinner. We enjoyed this and I wanna share the recipe.

Ingredients for 4-5 servings:
1/2 kilo chicken wings
1 cup tomato sauce
1/2 cup Nestle cream
1 big potato ( sliced to your desired size)
1 big  carrot ( sliced to your desired size)
1/2  onion ( diced)
1 tablespoon liver spread
3 cloves garlic ( minced)
1 small bell pepper (cubed)
salt and pepper to taste

Procedure:
1. Saute garlic and onion then add the chicken wings, simmer for 3 minutes.
2. Add the tomato sauce and stir well then simmer for few minutes then add the water and bring to a boil.
3. Add the potatoes and the carrots simmer until tender (add water if necessary).
4. Add the bell pepper, liver spread and Nestle cream, then stir well, add salt and pepper to taste then simmer until done.
 5.Serve it with rice and enjoy your meal.

Sinigang na Manok na may mustasa


I always wanted to have a delicious soup while eating during rainy days, and one of the yummiest soup is the sinigang soup ( tamarind based soup). You can use any kind of meat for this soup, and I used chicken for this recipe together with the mustard leaves, so yummy!

 Ingredients for 5 servings:
1/2 kilo chicken
1 bunch of mustard leaves (mustasa)
thumb size ginger
1 onion
6 cups water
1 small pack sinigang mix ( Tamarind powder)

 Procedure:
1.Saute the ginger then onion.
2. Add the chicken and braise for a while then add the water.
3. Bring to a boil stirring occasionally until the chicken meat is cooked.
4. Add the mustard leaves (mustasa) then simmer for a minute
5. Add  the sinigang mix then simmer until done.
6. Serve hot with rice and do not forget to smile ;-).

Orange Chicken Wings


Saucy chicken wings recipe with a natural orange juice blended with other condiments, making this dish delicious. The aroma of the toasted sesame seeds made this dish more enticing. Try it.

Ingredients for 5 servings
1/2 kilo chicken wings
2 cloves garlic, minced
1 tablespoon vinegar
1 cup orange juice
1/2 cup water
1 tablespoon sugar
1 teaspoons soy sauce
3/4 tablespoon cornstarch, dissolved in 2 tablespoon water
Salt and pepper to taste
a pinch of chili flakes ( if you want)
toasted sesame seeds ( optional)

Procedure:
1. Fried the chicken until brownish then set aside.
2. In a pan saute the garlic then add the water and vinegar then simmer.
3. Add the orange juice, sugar, and soy sauce then simmer , stir in the dissolve corn starch to thicken the sauce.
4. Add the fried chicken wings and simmer for few minutes to coat it with the sauce, add salt and pepper to taste.
5. Turn off the heat, sprinkle with sesame seeds then serve.

Stir Fried Chicken


A very simple chicken dish that tastes good. I was so hungry yesterday and I need to cook my food quickly and here is the result, a simple but delicious stir fried chicken :-).

Ingredientd for 4-5 servings:
1/2 kilo chicken breast ( cut into bite size)
3 cloves garlic
3 tablespoons soy sauce
2 tablespoon lemon or calamansi juice
pepper to taste
Chili (optional)

Procedure:
1. Saute the garlic then add the chicken  and stir fry for 2 minutes.
2. Add the soy sauce, lemon juice and pepper then stir fry until done.
3. add some chili if you want then serve it hot.

Pinatisang Pritong Manok


This is  a very simple chicken recipe that everybody can do as long as you have fish sauce or patis, because the name itself speaks for it. We will use fish sauce or patis as its base marinating sauce. Here is how to do it.

Ingredients for 4 servings:
1 kilo chicken (slice into serving pieces)
1/4 cup patis or according to your taste
2 tablespoons lemon or calamansi juice
ground pepper according to your taste
oil for frying

Procedure:
1. Marinate the chicken with patis, ground pepper and lemon juice for an hour.
2. Heat the oil then deep fry the chicken until golden brown.
3. Serve it hot.

Homemade Chicken Tocino


 It is better to make your own tocino than buy it which is full of chemicals to preserve the meat. Here is my simple homemade tocino.

Ingredients for 4 servings:
1/2 kilo chicken
1 cup Sprite
1/2 cup pineapple juice
2 tbsp banana ketchup ( to add color)
salt and pepper to taste

Procedure:
1. In a mixing bowl, combine all the ingredients and marinate overnight.
2. When you cook it, put a little water allowing the chicken to be cooked properly. Then put a little oil to pan fry it until done.
3. Serve it hot.

Chicken Afritada a la Caldereta


Afritada and caldereta in one? Yes almost like that.It is the Nestle cream from caldereta that made this afritada creamy and so yummy. That is why I am inviting you to try this recipe, enjoy cooking.

Ingredients for 5 servings:
1/2 kilo chicken
2  potatoes
2  carrots
1 bell pepper
1 onion
3 cloves garlic
3 tablespoons soy sauce
1 cup tomato sauce
1 cup water
1/2 cup Nestle Cream
salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the chicken and simmer until the pinkish color is gone.
2. Add the soy sauce and tomato sauce then simmer for few minutes, stirring occasionally.
3. Add water and let it boil, then add the potatoes and simmer for 2 minutes.
 4. Add the carrots, bell pepper, salt and pepper then simmer until almost done then add the nestle cream and simmer for a minute then turn off the heat.
5. Serve it hot.
