1 onion chopped
3 cloves garlic
1 cup tomato sauce
3 tablespoons soy sauce
salt and pepper to taste

Procedure:
1.First we need to tenderize the beef by using a tenderizing hammer or if not available, just prick it with fork.
2. Saute the garlic and onion, add the beef then simmer for few minutes.
3. Add all the ingredients and let it simmer over medium heat until tender, stirring occasionally, add water if necessary.
4. Serve it hot with rice. :-).

Oriental Beef Stew

For me, nothing beats the taste of a good beef stew specially during winter or rainy seasons. Making the beef tender means more flavor in the soup, that is why I always see to it that when I make beef stew the meat is really tender so that you can enjoy it and not feeling like you are chewing a gum :D. This is my Oriental style of beef stew.

Ingredients:
1/2 kilo beef
1/2 kilo bok choy or petsay
3 big potatoes
2 yellow corn
1 onion
1 teaspoon black pepper corn ( pamintang buo)
4 tablespoons soy sauce
salt to taste

Procedure:
1. In a pot put the beef, black pepper, onion and soy sauce then bring to boil, make sure that the water is enough to cook the beef until tender.
2. When the beef is tender add the potatoes and corn, simmer until done.
3. Then add the petsay and simmer for 2 minutes, add salt to taste. Turn off the heat.
4. Serve it hot. You can put some spring onion to garnish it.

Ground Beef Fiesta

This is very economical and not too meaty because the amount of vegetables and ground beef are equal, and yet the savor of the dish is still excellent. 1/2 cup soy sauce
8 cloves garlic
5 bayleaf ( laurel)
4 hard boiled eggs( sliced into 5 parts each ) If egg slicer is available you can use it.
salt and pepper to taste

Procedure:
1. Saute the garlic and onion, then add the ground beef and simmer for few minutes.
2.  Add the soy sauce, bay leaf, salt and pepper simmer for 3 minutes.
3. Add the potatoes and carrots and simmer until it is done.
4. Serve it, topped with sliced eggs and if spring onion is available you can sprinkle some too.

Beef Adobo

Here in South America, beef is so abundant, and most of the time I prepare beef steak when it comes to beef dishes. For a change I thought of making beef adobo and the result is fantastic! Here is how to cook it.

Ingredients:
1 kilo beef
1/2 cup soy sauce
1/2 cup vinegar
6 cloves garlic
1 onion
2 tablespoon tomato sauce
1/2 teaspoon ground pepper
1/2 glass water

Procedure:
1. In a pressure cooker put all the ingredients
2. Cook over medium heat , once it's starting to boil time it for just 15 minutes then, check if its already tender. if yes, then transfer it to another pan.
3. Continue cooking and increase the heat so that some of the soup will evaporate making our adobo just saucy.
4. After this process turn off the heat and serve it with rice. :-)

A popular regional dish in Philippines which originated in Cebu city, but widely accepted and also popular in neighboring  places. 1 teaspoon whole black pepper or peppercorn (pamintang buo)

1 medium size onion
1/2 cup minced spring onion
some chili pepper
Salt

Procedure:
1. In a big pot, put the oxtail, ginger, onion and peppercorn, put water that is enough to make the meat tender. It will take few hours to make this tender, so be patient :-). Pressure cooker is badly needed.
2. When the oxtail is already tender put some salt to taste, simmer until it is so tender.
3. Serve it with spring onion and chopped chili peppers if you want it a little hot.

combination of skin and ribs
You can add a tablespoons of atsuete powder  while boiling the meat to tender for a yellowish color.

Cabbage Roll with Tomato Sauce

It’s been a long time that I wanted to cook this dish, but every time I put my cabbage leaves in the refrigerator, when my companions are cleaning the fridge, they always throw it because they’re thinking it’s a trash hahahahahahahahaha. This is called Sarma in Turkey, although they have different ways of cooking it, but the process of wrapping the meat with cabbage is the same. Most people think this is the same with another dish in Turkey which they called dolma,  because the process is almost the same but, we should not be confused because in dolmas, grapefruit leaves are used in wrappng the ground meat and sarma used cabbage.  I am glad that I was able to cooked this :D and I am excited to share it with all of you. This is a good treat for your loved ones. Since this is requested by my Filipino friends I made it Filipino style.

Ingredients:
some cabbage leaves
1/4 kilo ground beef or pork
2 tablespoons flour
1 beaten egg
1 med. size potato ( minced)
1 small carrot (minced)
1 onion ( half minced, half strips)
1/2 cup water
2 tablespoons tomato sauce
salt and pepper to taste
1 tablespoon calamansi or lemon juice

Procedure
1. First we need to blanch ( banlian in Tagalog) the cabbage leaves and set it aside.
2. In a bowl mix the meat,  minced onion, calamansi, carrot, potato, egg,  flour, salt and pepper. Mix it well.
3. Wrap it using the blanched cabbage leaf, as shown in the picture.

4. After wrapping all the meat, put the onion strips and black pepper in a pan where you are going to cook the cabbage rolls.

5. Arrange the rolled cabbage properly, put the tomato sauce, and the water.

6. Cover and let it boil , when it is  boiling lower the heat to cook it slowly without drying the soup.
7. Serve it hot and garnish with ring onions.

Nilagang Baka

Nilagang baka ( beef stew)= for me, this is the easiest way of cooking beef. Stewing in Asia is different from other continents. Stewing specially in Philippines uses only plain water or rice washing without putting any soup thickening ingredient like tomato sauce in some other countries. Simple and easy to prepare but the savor will surely satisfy your hunger.

Ingredients:
1/2 kilo beef
1/4 kilo Chinese cabbage or pak choi
1 small size onion
a pinch of whole black pepper
8 glasses rice washing ( add water if necessary)
thumb size ginger
salt and pepper to taste

Procedure:
1. In a pot put the rice washing, ginger, onion, and black pepper then bring it to a boil.
2. Put the beef and simmer until the meat is tender.
3.  Increase the heat to high then add the Chinese cabbage, salt and pepper to taste and  simmer for 2 minute.
4. Serve it hot.
