Guso Salad

Guso is an edible seaweed that is abundant in the Visayas and Mindanao regions of the Philippines,affordable and delicious, and this is very common in most of the eateries in my place. Personally, I love this seaweed salad together with lukot and lato, I will be posting these kinds of seaweeds soon.

Ingredients for 10 servings:
1/2 kilo guso ( seaweed)
2 cucumber ( sliced)
1 cup vinegar
1 onion ( sliced)
3 small carrots ( Sliced)
50 grams ginger
1 teaspoon sugar
1 cup pineapple tidbits ( optional)
salt to taste

Procedure:
1. Boil a water in a pot then blanch the seaweeds and drain, let cool and cut into your desired length.




 2. Combine all the ingredients and mix well.




 3. Serve with  grilled or fried fish or meat.

Ensaladang Pipino at Camatis



Simple salad to go with your main dish, I made this to partner with my fried fish and fried rice, satisfying and a very good appetizer.

Ingredients:
1 cucumber (cubed)
2 tomatoes (cubed)
1/2 onion ( sliced thinly)
1 tablespoon olive oil ( optional)
2 tablespoons calamansi or lemon juice
salt and pepper to taste

Procedure:
1. Combine all the ingredients and mix well.
2. Serve and enjoy.

Note: You can add a little sugar and vinegar to neutralize the taste.

Tapioca Corn Salad




I was invited for a restaurant opening, so I prepared this for a dessert, feedbacks from the people were overwhelming, thanks be to God. This salad is creamy and just right to satisfy your sweets craving after a good meal. Try this recipe and you will not regret :-).

Ingredients for 12 servings:
1/2 kilo tapioca pearl
2 cups corn kernel
2 cups Nestle cream or all purpose cream
1 1/2 cup condensed milk



Procedure:
1. Cook the tapioca pearl then drain and wash it with running water then set aside for few minutes allowing the water to be drained fully.

2. Combine all the ingredients then refrigerate.

3. Serve with a smile :-).

Fresh Fruits with Yoghurt

This one is perfect to welcome your day at breakfast table. Low in calories but high with nutrients to sustain your activities. Go for it.

Ingredients for 4 serfvings:
1 cup green grapes
1 cup purple grapes
2 bananas ( slice according to your desired size)
1 cup yoghurt ( any flavor of your choice)
1 apple or plum ( sliced as shown in the picture)


Procedure:
1. Wash all the fruits properly.
2. Arrange the fruits in the serving platter then pour in the yogurt and serve.

Sotanghon Salad

Have you tried this salad? If not, you should, this is really good. I love this a lot.


Ingredients for 4 servings:
2 rolls of sotanghon
2 tomatoes
1 oniom
3 tablespoons lemon or calamansi juice (vinegar can be used too)
spring onion
chili flakes (optional)
salt to taste

Procedure:
1. Boil the sotanghon until cooked then drained and cut to desired length. ( do not overcooked)
2. Combine all the ingredients and serve.

Sweet Potato Tops Salad


Most people, when they make talbos ng kamote salad they boil or blanch the leaves, have you eaten this raw? Raw vegetbles and fruits are alkaline food which is good for our body. Just like sweet potato leaves good to be eaten raw.

Ingredients:
3 cups sweet potato tops ( talbos ng Kamote)
1/2 lemon or 2 calamansi
2 tomatoes
1 onion
2 tablespoons olive oil
salt
        
Sweet potato tops
                                                                
Procedure:
1. Wash the sweet potato leaves properly, cut into strips.
2. In a big bowl mix all the ingredients.
3. Serve it with love and a smile :-).

Bicol Express Without Coconut Milk

We always want convenience in cooking, so here is a shortcut way of cooking Bicol Express.

Ingredients for 6 servings:
1/2 kilo any meat you want to use ( chicken, beef, pork, etc)
1 onion
5 cloves  garlic
1 cup Nestle Cream or all purpose cream
12 pieces jalapeno or siling haba
salt and pepper to taste

Procedure:
1. Saute the garlic and onion, then add the  chili then continue to saute for a minute.

2. Add the meat then cover and let simmer until fully cooked over low heat, stirring occasionally.
3.Add the Nestle cream, salt and pepper then  simmer for a minute and turn off the heat.

4. Serve it hot with extra rice

Fresh Vegetables Salad

A nutritious salad for the whole family.

Ingredients:
1 bunch lettuce ( Washed and sliced)
1 cup cherry tomatoes
1 cup sliced cabbage
2 tomatoes ( sliced)
1 tablespoon lemon juice
2 tablespoons olive oil
salt to taste

Procedure:
1. Combine all the ingredients and mix well.
2. Serve with a smile :-).



Salad Overload

I combined all my favorite base salad ingredients, tapioca pearls, buko (young coconut) and macaroni added with  fruit cocktail and other salad ingredients. Overloaded with yumminess!

Ingredients for 20 servings:
1/2 kilo Tapioca pearls ( cooked and drained)
1/2 kilo macaroni ( cooked according to its packaging procedure)
3 pieces young coconut (only scraped meat)
1 can Fruit cocktail (380 grams)
500 ml Nestle All purpose cream (2 tetra packs)
1 1/2 cans big condensed milk (585 grams)
1 can evaporated milk (370 ml)
2 cups  any color nata de coco

Procedure:
1. Combine all the ingredients then refrigerate for few hours.
2. Serve with a smile :-).

Macaroni and Crystallized Fruit salad


I made this for the kids at the church and they loved it so much.

Ingredients for 5 servings:
2 cups macaroni ( cooked according to its packaging procedure)
1 cup raisins
2 cups Nestle cream
1 1/2 cup crystallized fruit
1 cup condensed milk



Procedure:
1. Combine all the ingredients then mix thoroughly.
2. Refrigerate before serving.

Hot and Spicy Tofu



This tofu was made by my friend, she taught me how to make it I want a healthy tofu ( not full of chemicals). I will be posting how to make tofu soon, so that we can eat tofu that does not contain harmful chemicals. After she made the tofu I cooked this. Here is the recipe, I hope you will like it.

Ingredients:
1/2 kilo tofu ( slice to your desired size)
3 cloves garlic
1/2 onion ( finely chopped)
1 tomato ( finely chopped)
1 tablespoon chili sauce
1 teaspoon ginger extract
1/4 teaspoon ground pepper
1 teaspoon lemon or calamansi juice
2 tablespoon tomato sauce
1 tablespoon soy sauce
1/4 cup water ( add if necessary) 
salt to taste

Procedure:

1. Saute the garlic and onion then the tomato saute until saucy then add the tofu and simmer for a minute.
2. Add the rest of the ingredients then simmer until done.
3. Serve it hot.

Simple Chicken Vegetable Salad


I prepared this for somebody who needs to eat healthy and he is very special to us. I've  got the idea of this from his dietician. Healthy and yummy.

Ingredients 
100 grams chicken breast
6 leaves of lettuce
1 cup cherry tomatoes
1 cup water cress ( if not available can be replaced with spinach)
1 1/2 tablespoons unflavored yogurt ( if not available just replace with 1 tablespoon lemon juice)
salt and pepper to taste
1 teaspoon olive oil

Procedure:
1. Put salt and pepper to the chicken breast then grill it, slice into bite size and set aside.
2. In a serving platter arrange the lettuce, watercress and tomatoes then add the chicken.
3. Sprinkle with olive oil, yugort, salt and pepper then serve.

Cheese stick with bell pepper



 I was cooking cheese sticks when a friend told me that it is yummier if we put bell pepper, and I did, so here it is, a delicious cheese sticks with an arome of bell pepper, yummier indeed!

Ingredients:
1 pack cheddar cheese ( 250 grams)
2 bell peppers
30 lumpia wrappers ( spring roll wrappers)
oil for frying

Procedure:
1. Slice the cheese nad bell peppers into batonettes as shown in the picture below.

 2. In a spring roll wrapper wrap tightly the cheese and bell pepper together.





3. Deep fry until golden brown then serve with your favorite dipping sauce.

Gelatine Corn Salad


We need to think of something delicious that we can serve and at the same time budget friendly, right? That is why I came up with this idea, delicious and inexpensive. I have few more gelatine desserts that I've already posted here, feel free to check it, I will provide the link at the bottom of this post. Enjoy cooking!

Ingredients for 10 servings
20 grams green unflavored gelatine
12 grams red unflavored gelatine
12 grams yellow unflavored gelatine
1 1/2 cups condensed milk
2 1/2 cups nestle cream
2 cups corn kernel
Gelatine powder

Procedure:
1. Cooked the gelatine according to its packaging procedure, refrigerate then slice it into cubes.

2. Combine all the ingredients and mix well.

3. Refrigerate then serve. :-).

Gelatine Pandan Salad


An aromatic gelatine salad that is so yummy and creamy. It is inevitable that your mouth will water, when you smell the aroma of pandan leaves blended with milk and cream. Tempting!

Ingredients for 7-8 servings
24 grams green unflavored gelatine
12 grams red unflavored gelatine
12 grams yellow unflavored gelatine
1 cup condensed milk
2 cups nestle cream
12 Pandan leaves ( cut)
1 cup pandan water.
Powdered unflavored gelatine

Pandan leaves

 Procedure:
1.Boil the pandan with 4 litres of water for 20-30 minutes or until you can smell the pandan scent from the boiling water then set aside.

2. By using the pandan water cook the gelatin according to its packaging procedure and let cool then slice into dice or cube.
 3. Mix All the ingredients, refrigerate then serve.

Vegetable Salad with Walnut and Avocado


I made this tossed salad for a friend who is on a diet :) Low in calories and delicious. Have some now and be energized. :-)

Ingredients for 2-3 servings
100 grams iceberg lettuce
1/2 of an avocado (cubed)
1 tomato ( diced)
1 small cucumber
3/4 cup walnuts
1 tablespoon olive oil
1 tablespoon lemon or calamansi juice
salt to taste

Procedure:
1. Combine everything and toss well.
2. Serve immediately with a smile.

Salad na Talbos ng Kamote


One of the best dishes that you can do with sweet potato tops or talbos ng camote. This dish is good for blood flow and digestive system, so try it.

Ingredients:
1 bunch talbos ng kamote
2 tomatoes
1/2 piece onion
2 tablespoons calamansi or lemon juice
Salt and pepper to taste

Procedure:
1. Blanch theSweet potato tops or talbos ng camote then drain and set aside.
2. Slice the onion thinly and dice the tomatoes.
3. In a mixing bowl, combine all the ingredients then serve with love and a smile :-).

Fish Lumpia


Crispy, yummy and low in calories, that is what I liked in this recipe, low in calories because I used fish instead of ground meat, any fish of your choice can be used for this recipe, I used salmon for this because I have leftover from yesterday :-).

Ingredients:
20 lumpia wrappers (spring roll wrappers)
2 cups shredded fish
8 cloves garlic ( minced)
2 onion (minced)
2 carrots ( minced or shredded)
1 small red bell pepper (minced)
1 beaten egg
1/2 cup flour
salt and pepper to taste
cooking oil for frying

Procedure:
1. Fried the fish then shred it and set aside.
2.  Mix all the ingredients, except the wrapper and oil for frying.

3. After mixing evenly spoon a portion and wrap with spring roll wrappers.

4. Deep fry until golden brown. Remove and put in a paper towel to remove excess oil.

5. Serve hot with your favorite dipping sauce.
