Beef Broccoli



An easy to prepare dish that is great to serve with rice. The oyster sauce made the taste tangy and delicious.

Ingredients for 4 servings:
1/2 kilo broccoli
1/4 kilo beef
1/4 cup oyster sauce
3 cloves garlic
1 onion
1/2 cup water ( add if needed)
salt and pepper  if needed

Procedure:
1. Saute the garlic and onion then add the beef and stir until the pinkish color is gone.
2. Add the water and simmer the beef until tender.
3. Increase the heat, then add the broccoli, give it a good stir and simmer until almost done.
4 Add the oyster sauce and stir it, add salt and pepper if needed then turn off the heat.

5. Serve it hot.

Ox Feet Adobo

If you love adobo you have to try this recipe, it is really delicious, the melting sensation of the skin when you bite it, is so satisfying and will make you crave for more, so eat in moderation :-).

Ingredients for 5 servings:
1 kilo ox feet ( paa ng baka) - boiled and already tender ( 20-30 minutes in a pressure cooker)
1/2 cup soy sauce
1/2 cup vinegar
1/4 teaspoon ground pepper
4 cloves garlic
1 cup broth from the ox feet

Procedure:
1.Saute the garlic then add the cooked ox feet
2. Add the soy sauce and ground pepper then then simmer until the ox feet absorbed the soy sauce color, add the vinegar, cover and let simmer. Do not mix until the vinegar boils so that the texture of the meat will be nice and smooth.
3. Once boiling mix well, then add the broth and continue to simmer for 3 minutes then increase the heat to high, allowing the soup to simmer intensely until the consistency of the soup is thick like a sauce then turn off the heat.
4.Serve it hot.

Beef Salpicao

A succulent beef dish with a perfect blending of all the spices being used, making the flavor so tangy so make sure that the rice is enough. :-).


Ingredients for 2 servings:

1/4 kilo beef tenderloin (Sliced into cubes)
2 tablespoons soy sauce
4 cloves garlic ( Sliced and toasted)
1 tablespoons lemon juice or calamansi
1/8 teaspoon ground pepper
1/4 teaspoon sugar
oil


Toasted garlic
Procedure:
1. Marinate the beef with soy sauce, lemon juice, ground pepper and sugar for at least 30 minutes, remove from the marinade but set aside the marinade, then fry the beef until golden brown.
2.In a pan heat an oil then put the fried beef and the toasted garlic ( leave some garlic for toppings) then add the ,marinade and allow to simmer for few 3 minutes stirring occasionally.  If marinade is not enough to give a sauce just add some soy sauce and lemon jauce according to your taste.
3. Top with toasted garlic before serving.

Bistek without Soy Sauce


I have lots of friends who do not use soy sauce for health reasons, and cooking a dish that calls for soy sauce to intensify the color of the meat so that it will not pale looking is a problem. I hope this problem will be ended today by following the technique that I used here by browning the onion which I learned from my friend Miss Sheru.

Ingredients:
1/2 kilo beef tenderloin ( sliced thinly)
3 tablespoons of calamansi or lemon juice
2 medium size onion ( 1 sliced into rings, 1 minced)
1/4 cup water
salt and pepper to taste

Procedure:
1. Marinate the beef with the juice, salt and pepper for few hours, then remove, and reserve the marinade.
2. Fry the beef and set aside.
3. Saute the  minced onion until brownish then add the marinade to intensify its color and will make the sauce darker. Then add the water and simmer for 2 minutes.


4. Add the ring onion and fried beef then simmer until done. Serve hot with rice.

Homemade Beef Tocino


Tocino is a typical breakfast viand of Filipinos and it is popular with fried rice and fried egg combo called tocilog. But I do not like the tocino at the market because it is packed with preservatives specially the red ones, that is why I decided to try to make it and here is the result. I like it but you can improve it according to your taste.

Ingredients for 4-5 servings:
1/2 kilo beef tenderloin ( sliced thinly)
1 cup Sprite
1/2 cup pineapple juice
1 tablespoon sugar
4 cloves minced garlic
salt and pepper to taste

Procedure:
1. Combine all the ingredients and mix thoroughly then refrigerate for few hours or better over night before cooking.
2. Cook the beef together with the marinating sauce until dry then put a little oil to fry it . Remove and serve.

Simple Beef Caldereta

Try this simple beef caldereta recipe yet yummy. The sauce is so appetizing so be sure that you have a lot of rice when you call your loved ones to eat.

Ingredients:
1/2 kilo beef tenderloin ( you can use any part that you like)
2 potatoes
1 carrot
1/2 cup Pineapple juice
1 cup pineapple chunks
1 onion
3 cloves garlic
bell pepper
1 cup tomato sauce
1 cup water
1/2 cup Nestle cream
Salt and pepper to taste

Procedure:

1. Saute the garlic and onion then add the beef, allow to simmer until the pinkish color of the meat is gone.
2. Add the tomato sauce then simmer for few minutes then add the water and simmer until the meat is tender.
3. Add the carrots and potatoes, simmer until cooked.
4. Add the pineapple juice, pineapple chunk, bell pepper, Nestle cream, salt and pepper then simmer until done.
5. Serve it hot with rice.

Bulcaching


During my college days ( Davao City)I remembered one eatery near my school where my friends and I used to eat because of their dish which they called "BULCACHING" the soup is really addicting, it is a combination of  beef shank and ox feet cooked until it i very tender, one of the food server said it's a combination of bulalo and balbacua, I am craving for that soup that's why I tried cooking it and wow gotcha! Yummy! You can try it too and see it for yourself.

Ingredients:
1/2 kilo beef shank
1/2 kilo ox feet ( paa ng baka)
1 onion
thumb size ginger ( crushed)
1 teaspoon whole black pepper
1/2 kilo Chinese cabbage or petsay
1/4 cup fish sauce ( patis)
water ( enough to make the meat tender and soupy)
chili ( siling haba)
Spring onion as needed
salt and pepper to taste

Procedure:
1. In a pressure cooker put the onion, black pepper, ginger, fish sauce, chili, ox feet and beef shanks, then turn on the stove to medium heat and wait until it starts to simmer. Let simmer until the pinkish color of the meat is gone then mix well and simmer again for another 5 minutes.
2. after this process increase the heat then add the water and simmer  for 30 minutes (pressure cooker) or if pressure cooker is not available simmer it for 90 minutes or until tender.
3. When the meat is tender add the Chinese cabbage, spring onion, salt and pepper then simmer for a minute and turn off the heat.
4. Serve it hot.

Giniling A La Caldereta

You can make a lot of dishes using ground meat, so deviate from the usual meatballs and try this recipe with a twist. This is really yummy and the cream helped in neutralizing the flavor, making you to crave for more.

Ingredients:
1/2 kilo ground pork or beef
2 potatoes (diced)
1 carrot ( diced)
1/2 cup pineapple (diced)
1 onion
3 cloves garlic
3 hotdog ( diced)
bell pepper ( diced)
1 cup tomato sauce
1/2 cup Nestle cream
Salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the ground meat, allow to simmer until the pinkish color is gone.
2. Add the tomato sauce then allow to simmer for 2 minutes.
3. Add the carrots and potatoes then stir and simmer until half cooked.
4. Add the bell pepper,pineapple, hotdog and Nestle cream then simmer until done, add salt and pepper to taste then turn off the heat.
5. Garnish then serve.

Mely's Kitchen Beef Stew

The planned dish was caldereta during a special occasion in the church but unexpected number of guests arrived, so I quickly thought of a technique to make the dish plenty for everybody, I said forget caldereta and I opened the fridge and saw hotdogs and quail's eggs, and I came up with this. Yummy and rich sauce stew only from Mely's kitchen, try it.

 Ingredients for 6-7 servings:

1/2 kilo beef 
4 cloves garlic
1 onion
3  tomatoes
2 potatoes
1 carrot
12 pieces hard boiled quail's egg
6 pieces hotdog ( sliced into halves)
3/4 cup tomato sauce
3 cups water
3/4 cup Nestle Cream/all purpose cream
salt and pepper to taste
spring onion for garnishing


 Procedure:
1. Saute the garlic, tomatoes and onion then add the beef and continue to saute until the pinkish color is gone.
2.Add the tomato sauce and simmer for 5 minutes over low heat, then add the water, increase the heat to high and bring to a boil, once boiling reduce the heat to medium and simmer until the beef is tender stirring occasionally.
3. Add the potatoes and carrots then simmer until cooked, then add the hotdog and simmer for 2 minutes.
4. Add the Nestle cream, salt and pepper to taste then simmer for a minute and turn off the heat.
5. Put the eggs and spring onion then serve it hot.

Hot and Spicy Ground Beef


I need to prepare something economical and yummy that's why I came up with this. 

Ingredients for 8 servings:
1/2 kilo ground beef ( or any meat that you like)
1 big carrot ( diced)
3 potatoes ( diced)
3/4 cup green peas
4 pieces cayenne pepper (siling haba) chopped
3 cloves garlic
1 onion
bell pepper ( diced)
salt and pepper to taste

Procedure:
1. Saute the garlic and onion then add the cayenne pepper and bell pepper continue to saute until the aroma comes out then add the ground beef and saute until half cooked.
2. Add the carrots and potatoes then simmer until tender.
3. Add the green peas, bell pepper, salt and pepper to taste then simmer until cooked.
4. Serve hot with rice.

Stuffed Rolled Beef


 Tangy tomato sauce based dish that will surely boost your appetite, so make sure that you have plenty of rice.

Ingredients for 3-4 servings:
1/2 kilo   Beef Sirloin   ( Sliced thinly and pounded )
2 tablespoons lemon or calamansi juice   
hotdog
green beans
bell pepper
carrot
1 cup tomato Sauce
3/4 cup water
1/2 cup diced carrot
1/2 cup green peas
Salt and pepper to taste
Stuffing ingredients


Procedure:
1. Sliced the beef thinly and pound it. Marinate with lemon or calamansi juice, salt and pepper for 30 minutes.
 2. After 30 minutes stuff it with carrot, hotdog, bell pepper and green beans.
 3. Roll it tightly, slice and secure each slice with a toothpick then lightly fry it and set aside.


 4. Saute the garlic and onion then add the fried rolled beef then simmer for a minute.

5. Add the tomato sauce then simmer for 2 minutes, then add the water and simmer until thick.
6. Add dice carrots, green peas, salt and pepper to taste then simmer until done.
7. Serve it hot with rice.

Beef Shank with Mushrooms


A rich tomato sauce based sauce loaded with mushrooms and a tender beef shank is a really feast on the table.

Ingredients for 3-4 servings
2 slices of beef shanks
1 cup mushrooms
2 cups tomato sauce
1 carrot
3 cloves garlic
2 cups water
1 onion
1/4 teaspoon crushed black pepper
salt 

Procedure:
1. Saute the garlic and onion then add the beef shank and simmer until the pinkish color is gone.
2. Add the black pepper and tomato sauce, then simmer for 10 minutes over medium heat stirring occasionally.
3.  Add the water and salt then bring to a boil, once boiling simmer the meat until tender.
4. Add the carrot and mushrooms then simmer until done.
5. Serve it hot with rice.

Beef Bola-bola



Something special and yummy that is budget friendly. Meatball for the whole family.

Ingredients:
1/2  kilo ground beef
1 carrot ( minced)
1 onion ( minced)
4 cloves garlic (minced)
salt and pepper to taste

Procedure:
1. Mix all the ingredients then spoon a portion and form into balls.
2 Deep fry over medium heat to cook evenly until golden brown.
3. Remove from the oil then serve it hot.

I did not put flour and egg so that it will not be dry.

Ingredients for 4 servings:
1/4 kilo ground beef ( or any meat that you like)
1 big carrot ( diced)
2 potatoes ( diced)
1/2 cup green peas
3 cloves garlic
1 onion
bell pepper ( diced)
salt and pepper to taste

Procedure:

1. Saute the garlic and onion then add the ground beef and saute until half cooked.
2. Add the carrots and potatoes then simmer until tender.
3. Add the green peas, bell pepper, salt and pepper to taste then simmer until cooked.


4. Serve hot with rice and a smile :-).

Beef Bola-bola on the Stick


This meatballs are designed for any special gatherings that's why I served it this way. Handy and attractive to your guests.

Ingredients:
1/2 kilo ground beef
3/4 cup flour
1 egg beaten
1 small bell pepper ( minced)
1  onion ( minced)
1/4 teaspoon ground pepper
salt to taste

Procedure:
1. Mix all the ingredients thoroughly then form into balls.
2. Deep fry until cooked.
3. Serve it hot on a platter or if you have bamboo skewers you can serve them with it.

Beef Tapa



If you know tapsilog I am sure that you know what is tapa. Tapa is a cured meat and one of the most popular breakfast item among Filipinos. Here is my simple version of tapa.

Ingredients:
1/2 kilo beef sirloin or tenderloin ( sliced thinly)
4 cloves garlic (minced)
1/4 teaspoon ground pepper
1/2 cup pineapple juice
1/4 cup Sprite
1 teaspoon calamansi or lemon juice
salt and pepper to taste

Procedure:
1.Combine all the ingredients until mixed thoroughly.
2. Hang for few hours to dry it or simply refrigerate it for a day to undergo a curing process.
3. Fry it and serve with rice or make a tapsilog :-).

Ground Beef Roulade

I re-cooked today  Nov.17,2013

A delicious treat for the whole family. I enjoyed making this yesterday. The taste is awesome and I will do it again for special event :-). Try it.

Ingredients for 5-6 servings:
200 grams ground beef
6 slices sweet ham
6 slices of cheddar cheese ( or any kind of cooking cheese that you like)
1/2 cup flour
1/4 cup bread crumbs
1 egg beaten
1/4 cup minced or finely chopped bell pepper
1 small onion ( minced)
1/4 teaspoon ground pepper
salt to taste
oil for frying
another 1/2 cup bread crumbs for breading.

Procedure:
1. In a mixing bowl combine the ground beef, flour, bread crumbs, bell pepper, onion, egg,salt and ground pepper, mix very well until fully combined. then divide into 6 equal parts.
2. Flatten each part then put the ham and cheese then roll.
 3. After rolling sealedproperly by closing both side by pressing it with your hands. ( Make sure it is sealed properly.)

 4. Roll over the bread crumbs then fry until cooked over medium heat.



4. Serve it hot with or without sauce.

Beef Arroz A La Cubana


I love this combo meal so much, very satisfying and so flavorful.

Ingredients for 4 servings:
1/4 kilo ground beef
4 cloves garlic ( minced)
1 medium potato ( small diced)
2 tablespoons tomato sauce
1/2 onion ( minced)
1 carrot ( small diced)
1/2 bell pepper ( small diced)
1/4 cup green peas
4 cups cooked rice
4 sunny side up eggs
fried bananas for 4 servings

Procedure:
1. Saute the garlic and onion then add the ground beef,  saute until pinkish color is gone.
2. Add the tomato sauce, potato, carrots, and bell pepper then simmer
3. Add the green peas, cover and continue cooking for a minute or until the peas are done, then turn off the heat.
4.In a serving platter arrange the combo meal by putting the rice, fried egg, fried banana and the ground beef,then serve with a smile :-).

You can add raisins according to your taste.

Beef Stroganoff (Filipino Style)


The original recipe for this calls for sour cream but I made a twist to make this into Filipino style. It still taste the same, so here is my version of beef stroganoff.

Ingredients
1/2 kilo beef tender loin
1/2 cup sliced button mushrooms
1 small onion
3/4 cup tomato sauce
1 cup Nestle Cream
3 cloves garlic
1 cup water
salt and pepper to taste

Procedure:
1. cut the beef into strips.
2. Saute the garlic and onion then add the beef then saute until pinkish color is gone.
3. Add the tomato sauce then simmer for 5 minutes over low heat.
4. Add water then adjust to medium heat and simmer until the beef is tender.
5. Add the mushrooms, salt and pepper to taste then simmer for 3 minutes.
6. Add the Nestle cream and simmer for a minute then turn off the heat.
7. Serve it hot.

Beef Empanada



When I was a kid I loved empanada so much, every time my mom go to town I always tell her to bring empanada when she comes back. Now, I am craving for it so I made some and here is the recipe.

Ingredients:
10 empanada wrapper( I bought the ready to use at the market)
1/4 kilo beef
3 cloves garlic (minced)
1 small onion (minced)
2 hard boiled eggs

Procedure:
1. Saute garlic and onion, add the ground beef and simmer until cooked then set aside.
2.Chopped the eggs and mix with the beef mixture. Mix well.
3. In the empanada wrapper put the filling ( beef mixture) then sealed properly so that it will not pop when we fry it.
4. In a pan heat the oil, and deep fry the empanada until it’s done.
5. Serve it with your favorite drinks.


Recipe for the wrapper
3 cups all-purpose flour
2 tablespoons oil or olive oil
1 cup of warm water (about 250 ml)
1 level teaspoon of salt


Place the flour in a bowl add the warm water and the oil slowly then stir the salt and mix well.
Knead the dough until it is very firm then leave it rest for 45 minutes.
Flatten the dough with a rolling pin until you reach the desired thickness of the wrapper.
Fill the dough with the filling then fry.
