Chocolate Crinkles



A young and enthusiastic lady who loves baking and graphic designing shared her delicious crinkles for all of us, by the way she is my niece :-).

Ingredients
2 cups all-purpose flour (sifted)
1/2 cup unsalted butter (softened)
1 1/4 cup granulated sugar
4 pieces raw eggs
1 tbsp vanilla essence
4 ounces semi-sweet chocolate chips (melted)
2/3 cups unsweetened cocoa powder
1/2 teaspoon salt
1 teaspoon baking powder
1 cup confectioners sugar

 Procedure:
1.Cream the butter in a mixing bowl, then whisk the sugar and continue mixing for 2 minute, then add the cocoa powder and melted chocolate and continue mixing for a minute.

2.Add the eggs and vanilla essence then continue to mix until the texture becomes fluffy then add the flour, salt, and baking powder and continue to mix until all the ingredients are evenly distributed. After this process cover the mixing bowl with cling wrap and refrigerate for at least 3 hours.
 3. After 3 hours remove the cover and spoon a portion of the mixture then roll it with your hands until spherical in shape and roll over confectioners sugar until fully covered.
4. Arrange on a baking tray make sure it's 2-3 inches apart.

5.Preheat oven to 350 degrees Fahrenheit and bake for 10 to 12 minutes
6.Remove from the oven and allow to cool down then serve.

Eggless Cashew Brownies


This is very easy to make, I am just experimenting with the ingredients and I am happy with the result, you can try it.

Ingredients for 12 servings:
2 1/4 cups flour
3 teaspoon baking powder
2 cups water
3/4 cup vegetable oil
1/2 cup sugar
1/2 teaspoon salt
1 cup Ovaltine or Milo
1/4 cup cashew nuts

Procedure:
1. Sift the flour, sugar, salt, baking powder then put in a blender together with the Milo then blend to mix well.

2. Add the water and oil then blend well until smooth.
3. Preheat the oven at 180 C and grease a baking pan and pour in the batter then top the cashew nuts and bake for 40 minutes or until done.

4. Allow to cool before slicing and serve with a smile :-).

Eggless Brownies



 This is a must try recipe! My type of brownies, chewy and not dry, really yummy and you can not believe that it's eggless because it taste the same with the usual brownies (with egg). Superb!

Ingredients:
2 cups self raising flour
1 1/2 cups sugar
1 cup unsweetened choco powder
3/4 cup vegetable oil
2 cups water
pinch of salt

Procedure:
1.Preheat the oven at 180 degrees C.
2. In a blender put the choco powder, flour,sugar and salt then blend well until fully mixed


3. Add the water and vegetable oil then blend well until smooth, grease a baking pan then pour the mixture


4. Bake for 30 minutes or until done. Let cool before cutting for best result. Enjoy baking :-).



Note:
If blender is not available just mix it manually until smooth
Best use a 20x30cm baking pan.

 This is the simple way of making a self raising flour
3 teaspoons baking powder
1/2 teaspoon salt
2 cups all purpose flour

The Perfect Pan De Sal




I already made pan de sal before but I told myself I wanna do it again, and I want a perfect one, now I can say that this try is a success! Yes! I am proud to say, thanks be to God. Here is my recipe for this. Let me know if you will try this recipe either successful or not, so that I can share my experience and maybe I can help you in one way or the other. Thanks.


Ingredients:
4 cups all purpose flour
2 egg yolks ( beaten)
1/4 teaspoon salt
1/2 cup melted butter
4 tablespoons sugar
3 teaspoon yeast ( about 10 grams) Take note YEAST not baking powder.
1 cup warm water with 1 tablespoon sugar

Procedure:
1. Combine the flour, sugar and salt, set aside.
2. Combine the warm water with sugar  and yeast ( let it stand for 8 minutes allowing the yeast to be dissolved and grow) This is very important: use only WARM water, because if you will use HOT it will kill the yeast and your bread will not rise, it will be as hard as a rock (failed).  If the yeast does not grow, discard it and repeat the process until you get the correct one. It should at least grow from the normal mixture.

3. Combine procedure 1 & 2 then add the egg and butter  then  mix well and knead it  until you form a firm dough. A good kneading is very important for best result.

 4. Let the dough rise for 40 minutes by putting it in a big deep bowl and cover it with a damp cloth.


After 40 minutes , it doubles in size from the original dough
5. After procedure #4 knead the dough thoroughly over a floured surface to avoid it from sticking in your hands, after kneading, divide into 2 or 3  parts for easier rolling, because we need to make it into cylindrical roll like in the picture below. Then slice it diagonally about an inch size each slice.

6. Sprinkle each slice with bread crumbs then let it stand for 40 minutes allowing it to rise again, then bake at 150C for 15 minutes or until done. ( Preheat the oven for 10 minutes before baking)


7. Serve it hot and with a smile :-)




Note: Raising the dough in a cold place won't work so make sure you leave the dough in a room temperature area.

Baked Mashed Potato


A very delicious potato dish that you will surely love. Cheesy and creamy specially if you serve it hot. This is good for breakfast. Try it!

Ingredients
3 big potatoes
2 tablespoon butter
1/2 cup grated cheese
salt and pepper to taste

Procedure:
1. Boiled the potato until tender.
2. Slice into halves, then remove the flesh and mash it properly with pepper, salt  and butter.

3. Put the mashed potato back into the skin then sprinkle with grated cheese and bake in the pre-heated oven for 15 minutes or until done at 180 degrees celcius.
4. Serve it hot.

Raisins Cookies

A delicious cookies with raisins to munch on, if you love raisins you must try this simple to bake cookies.

Ingredients:
2 cups flour
3/4 cup white sugar
1 cup butter ( melted)
1 teaspoon baking powder
1 cup raisins

Procedure:
1. Sift all the dry ingredients except for the chopped raisins
2. Combine the sifted dry ingredients, raisins and butter, then mix well using your hands.
3. Continue mixing until you form a ball of dough, then spoon a portion  and arrange in a greased baking tray.
4. Preheat the oven to 170 degree Celcius then bake the cookies for 15 minutes or until done.
5. Let cool and keep in an air tight container and serve anytime you want it. :-)

Ham and Cheese Pull Apart Bread



An easy to make recipe that you can do with your kids. You can make different stuffs for this, I used ham and cheese and it is very delicious. Try it.

Ingredients for 4 servings:
1 big unsliced bread
150 grams muzarella cheese
4 slices sweet ham

Procedure:
1. Preheat the oven at 300 degrees celcius
2.Cut the bread lengthwise and widthwise without cutting through the bottom crust.

3. Put the cheese and ham between cuts, push with your fingers to make sure that the bottom is stuffed.

4. Baked for 15 minutes at 200 degrees celcius.
5. Serve hot. ( You can sprinkle it with oregano flakes)

Banana Cake


Super delicious banana cake.

 Ingredients: 
3 bananas ( cut lengthwise and thinly)
2 cups  all purpose flour
1 cup  cornstarch
1 cup milk
2 cups sugar
1 tbsp baking powder
4 large eggs, divided
4 tbsp  unsalted butter


Procedure:
1. Preheat the oven at 180 degrees celcius
2. Sift the flour, baking powder and corn starch then set aside.
3.Separate the egg yolks from the egg whites, and combine the egg yolks with the butter and sugar then add the sifted dry ingredients and milk and combine well to make a firm batter.
5. Beat the egg whites until soft peaks form and gently fold the egg whites into the batter with a spatula.
6. Pour half of the batter mixture into the baking pan then put the sliced banana and pour the rest of the batter mixture then bake for 45 minutes or until done.
7. Allow to cool before serving.

Egg Bread


Delicious for snack!

Ingredients:
5 cups flour
3/4 cup sugar
3/4 cup melted butter
3/4 cup fresh milk or whole milk (warm)
3 teaspoons yeast
3 eggs

For the filling:
beat 6 eggs then add  salt and cook it as scrambled.





Procedure:
1. Dissolve the yeast in the warm milk for 10 minutes ( put the yeast and leave it for 10 minutes then mix)
2. Mix all the dry ingredients, make a well in the middle, then crack the eggs and beat it there.

3. Add the butter and the milk with dissolved yeast.
 4. Mix well, then knead until  the dough is formed, put it in the container or big bowl and let it rise for 2 hours by covering it with a damp cloth.

 5. After 2 hours we are now ready to use the dough but we need to knead it again before using, then slice into 1 serving portions.

6. Flatten each  portion then  put some scrambled egg  and  sealed well then allow to rise for 45 minutes.

 7. After 45 minutes brush with beaten egg then bake it in a preheated oven for 15 or until done at 180 degrees celcius.

8. Serve hot or let it cool before serving.

Chocolate Muffins

I am not an expert at baking but I am craving for some muffins last week that's why I tried this one. I baked the simple recipe and just put some frosting to make it attractive :D I am not being biased but it tasted good. Enjoy baking my friends.

Ingredients:
1/2 cup of sugar
1/2 cup of cocoa powder
   1 cup all-purpose flour
   2 eggs
   4 tablespoons butter
  150 ml milk
 1 tablespoon of baking powder


Proceure:
1. Sift the chocolate powder, baking powder and flour then set aside.
2. Mix the eggs, sugar, milk and butter then mix very well for 2-3 minutes.
3. Then slowly add the sifted ingredients. ( flour, baking powder and chocolate powder) after mixing it very well, pour n a muffin cups.
4. Preheat the oven at 180 degrees celcius then bake for 20 minutes or until done.
5. Let it cool then decorate and serve.

Monggo Bread


This is one of the breads that I like a lot, that is why I tried baking it and it is good, so I thought of sharing it with you, have fun baking.

Ingredients for the dough:
5 cups flour
3/4 cup sugar
3/4 cup fresh milk or whole milk (warm)
3 teaspoons yeast
3 eggs 
3/4 cup melted butter


Ingredients for the filling:
2 cups monggo boiled and mashed
2 cups evaporated milk
1 cup sugar
1/4 cup butter


In a pan combine all the ingredients then cook over medium heat until it become like a jam ( make sure its not soupy. Set aside for filling later.
Meanwhile here is how to prepare the dough .


 Procedure:
1. Dissolve the yeast in the warm milk for 10 minutes ( put the yeast and leave it for 10 minutes then mix)
2. Mix all the dry ingredients, make a well in the middle, then crack the eggs and beat it there.

3. Add the butter and the milk with dissolved yeast.

 4. Mix well, then knead until  the dough is formed put it in the container or big bowl and let rise for 2 hours by covering it with a damp cloth.




 5. After 2 hours knead the dough for a while then slice it, make sure each slice should be around 80 grams to make one serving of bread.

 6. Flatten each portion and put the monggo filling and roll it, make sure each end is well sealed by pressing it.

 7. Then twist it and form it like a knot ( like the picture below) and let it rise for 45 minutes. Brush with beaten egg for a good texture.

8. Preheat the oven for 20 minutes then  bake the bread for 15 minutes or until done at 180C.
9. Serve it with a smile :-)
